Wednesday’s Low Carb Meals:
My low carb breakfast was more like a dessert. 🙂
It’s 2 ounces of cream cheese, 1.5 ounces of almonds and 35 grams of raspberries. It came to 9 net carbs and 80% healthy fats – and it was delicious!
For lunch I had leftovers: cheesy broccoli & cauliflower.
It’s just broccoli and cauliflower, 4 tablespoons of butter and a bit of salt, and lots of cheese – baked. See: Easy Veggie Bake
I made a quick & easy dinner: one fried Oscar Mayer Smokies link and 2 eggs scrambled with colby jack cheese in real butter:
I also finished my last low carb brownie last night. 🙂

I didn’t exercise yesterday. I took a much-needed recovery day after my big hiking adventure on Tuesday.
I’ve so enjoyed this challenge! We’re almost to the end of it, with the final weigh-in being this weekend. What’s next? We’ll continue on! I haven’t picked the dates for the next Official Challenge, but stay tuned for that – and of course I’ll continue eating low carb right here with you in the meantime. 🙂

I was off track last week. I told you that in another post…but this week I’m back at it!! Feeling good, getting about 80% fat, losing the bloat and enjoying being back in control! I was inspired by your dessert breakfast yesterday and ended up having cream cheese, strawberries and pecans for dinner last night! π It was SO good and so filling! I honestly didn’t think it would be so it’s nice to have a ‘sweet’ like meal that’s macro friendly! Just so thankful for you, your honesty, inspiration, encouragement and this little community!! π

I’m so glad, Casey – I know how GREAT it feels to be on track and feeling lean. Way to go! And I’m glad you enjoyed the simple “dessert meal” too. It’s so easy, no complicated recipes or cooking, and just… real food. π

Thanks for your suggestion to use crumbled parmissian cheese crisps as a topping. I add the Costco version to my salad and loved the added cheesy crunch. It was better than the bread croutons I gave up years ago!
Must remember to put smokies on my shopping list. The pictures look so good and they will be a nice change from sausage and bacon.

I need to order more Parmesan Crisps because that was SO good! I could live off casseroles all winter like that. π lol
And yes, great for salads too!
The Smokies are great because I can just take one out and slice it up for a quick meal. It’s much better than having to eat an entire pound of sausage or bacon until it’s gone, lol. I’ve sliced those smokies up with slices of yellow squash too – great quick meal!

Hi Lynn, I love how you just keep it real….cream cheese, berries and nuts. Love that combo, will have to try it this weekend. My husband and boys are going to a hockey game, I think I just found my dinner for that night! Yum… Thanks for posting real food, nothing fancy, just simple low carb. When I first started this way of eating on March 1st of this year, I was spending way too much money and making every meal too complicated. Now I follow your 3 ingredient or less approach and I am loving it! Having a stall in my weight loss the last two weeks, but I am keeping on track with my macros and should see a move soon, either that or I am going to throw my scale out the window!

lol Bren, I get that. It’s totally normal though. You’ll find that as time goes on and you stay consistent… it’s a normal part of your overall weight loss trend. π As long as you haven’t changed anything or added anything new that might be a culprit, the key is to just stick it out!
I love easy. π Simple is GOOD! Plus it really does help with weight loss. Not to mention time & mess in the kitchen. π

Good morning! So glad to hear you sounding happier, Lynn! Reading your blog every day gives me renewed excitement about this WOL. I’ve been LC’ing almost 3 years (started 11/11/13), lost 74 lbs., and have been at goal since 5/29/15. You’ve been a huge help and encouragement to me, and I appreciate all you do to keep it real. Although I exercised very little the first two months, I then added walking and began feeling SO much better. It’s become a habit and almost every day I walk an average of 5 miles. I’m sure that helped my weight loss and helps my maintenance because I’m 69 years old. Sure, I have flab, but I’d much rather have flab than those extra 74 lbs. weighing me down physically, mentally, and emotionally! In the last year I’ve noticed I’ve firmed up considerably and think I owe that to my Exerstrider trekking poles. They give me a full body workout (yea for helping shrink my bat wings!) and burn about 30% more calories than regular walking. Anyway, Lynn, this is a long post to thank you for your encouragement in this journey. Would have been much harder and a lot less fun without you along for the ride. Hugs!

Thank you so much, Cindi – and kudos! You’ve done GREAT. π π That’s awesome! I still have flab too, but am firming up as well. I find muscle building to be both the quickest & easiest, and also the most effective. Little things like 10 Tricep Dips a day make a HUGE difference. π
