See the Fall 2016 Low Carb Challenge Details
Happy Monday! 🙂 We’re kicking off the 12th week of the challenge, and it’s time for the 11 Week Weigh-In.
If you’re participating in the Challenge Facebook Group, use that link to post your weigh-in. Otherwise you can leave a comment here on this post.
There are only 13 days left in the low carb challenge, and we’re finishing STRONG with an Exercise Mini-Challenge these last two weeks! 🙂
If you’re just joining in, or if you didn’t stay on track, that’s okay… just jump right in and join us for the next two weeks!
The biggest question at this point in the challenge is always: When does the next challenge begin? I don’t have a date set yet for the next Low Carb Challenge, but stay tuned. We’ll probably do a mini-challenge in between. And of course I’ll continue eating low carb and sharing healthy lifestyle ideas & tips with you right here.;)
As usual I’ll share my own low carb food diaries with you.

Here’s what I had over the weekend…
Saturday’s Low Carb Meals
I was almost out of pecans so I had my usual low carb breakfast with only 1/4 cup pecan pieces, 1/4 cup Daisy Brand cottage cheese and 4 small diced strawberries. I stir it all together and call it cereal.
For lunch I made my Low Carb Sausage Biscuits. 🙂
They came out fabulous! That recipe is hard to screw up, lol. I made 8 large biscuits so I would have something to grab & eat all weekend.
I had to run out to the grocery store (to get more pecans! and bacon, lol) so I got another Grand Turkey Club from Arby’s. I just said, “no bun please” and this time they put it in a bowl – which was much better than the paper box.
^ I bought two of those actually, and I’m eating the other one today. 🙂
Late Saturday night I made a big batch of Low Carb Peanut Butter Pecan Brownies, and had two of those before I went to bed.
These aren’t as pretty as my first batch, because I cut them before they cooled off all the way. I was impatient 🙂 lol…

Sunday’s Low Carb Meals
Yesterday I just ate the sausage biscuits & brownies I made the day before.
For breakfast I had two biscuits with cream cheese & sugar free preserves:
I went out walking and rock climbing after that, then came in and had another biscuit real quick – then took Slim for a brisk afternoon walk in the warm sunshine. 🙂

I was exhausted so I went to bed early – with two big fudgy brownies!

I mentioned I went rock climbing. THIS is what I decided to tackle (photo below).
It’s a big rock wall/bluff I discovered in piece of woods near my house awhile back, and yesterday I went back to it – determined to climb it!
Why?! I don’t know, lol. Because I was hunting a fun workout for the day. Because I needed to master something. Because I wanted to prove that I could. Because I felt like testing fate. Because I needed to get out of the house…
The photo below was taken right before a rock gave out and I fell. 😛
I’m fine. A few scrapes & bruises but nothing major. I brushed myself off and made it to the top. (There’s nothing up there.)
It was an easy food weekend of brownies & biscuits, lol.
As for the rock climbing, I don’t recommend you go out doing things like that alone. I did (and took the photos too, using voice commands on my smart phone) but the fall put a scare in me.
Fortunately it wasn’t a bad fall, but I got to the top (filthy, sweaty & scraped up) and just stood there and cried thinking “what the hell am I doing out here all alone?!”
It was a hard day, but the exercise and sunshine helped. I worked out a lot of feelings and thoughts in the woods, on that rock, while walking & jogging with my Dane.
Smart or not (doing it alone), I’m glad I’ve found new things to turn to besides food when I’m having a bad day. I’m not sure putting myself in physical danger is any better than overeating or eating unhealthy crap foods (lol)… but at least rock climbing doesn’t make me fat. 😛
It’s October in Tennessee and we have amazing weather lined up for the week before Fall really sets in, so I’m planning to enjoy it. I have a few hikes planned and waterfalls to visit while it’s still hot enough to get wet.:)

Good grief girl, what were u thinking? Lol Laying in the woods alone dying of injuries is no way to go out of this world! Are there any local rock climbing clubs you could join? Or maybe investing in a safety harness. You are going to get the wrath from us low carbers today for doing that! We need you Lynn!

lol Barb, I agree. π I wasn’t in the middle of nowhere or anything – I was within 30 feet of a busy walking trail so I could have easily called for help. π I was cautious too. I do love the idea of joining a rock climbing club though! I’ll have to look into that.:)

Oh Lynn, I agree with barb! Get some harnesses, join a club. It’s too dangerous out there alone!
I have just returned from a week long vacation with my daughter and 4 kids to Panama City Beach! I ate low carb all week and my weight stayed the same! I went over my 20 net carbs but I still did not gain and I did not feel deprived. I did not have the cravings so I did not care if everyone was eating blizzards or loaded potatoes. It was a great vacation and a great accomplishmen for me!

That’s awesome, Julie π Way to go!! I bet you FELT great too. That’s always when I want to feel my best, on vacation or while traveling. NOT when I want to feel bloated or lethargic lol. Nice job. π
Where are you based in TN? I’m SE of Nashville, between Nashville and Chattanooga… I’m looking at putting together another local lunch or dinner meetup soon. π

You are so good at making smart food substitutions, maybe you need to do the same with exercise? At least let your kids know where you are going, so they know where to start looking for you. So happy for your accomplishment but please be safe!
My boys grew up playing lacrosse but once they had jobs and families they realized that an injury could interfere with keeping the job and supporting their family. Rather than give up the sport they started coaching and became referees. I share this story just because we all have to make life changes, not just because we are women on our own.
Has anyone tried making Scotch Eggs with your sausage biscuit recipe? I was thinking that the eggs would be a filling on-the-go breakfast.

Thank you, Sue π My children are hours away in opposite directions, but I do usually let someone know where I’m going in and what time to expect to hear back from me – before calling it in, lol. Only if I’m going “off the grid” by myself.
I’ve been cautious and safe all my life. I was the wallflower as a child, and spent all of my adult life raising my children. I’m just exploring my limits at the moment, and started a series of “facing my fears” last year after an incident that landed me in fear counseling (and has scarred my dog as well – he now trusts no one, grr). The counseling was lame, so I set out on my own – starting with a trip to the city alone and staying in a Hostel. That was a fun experience!! I’m more of a Hilton kinda gal, lol.
Anyway, I’m definitely learning those limits. Poor Joe was always in a panic with my “living on the edge” ventures, haha.

Please be careful, we need you! For my weigh in I lost 1.2 lbs. Didn’t do so great on the exercise challenge…only 2 days. It was a busy week and I let my life run me instead of me running my life. Been doing good on food…no cheats even though I’ve had to cook two large meals for party’s including yummy buttered sour dough bread, lemon and chocolate cake to name a few…:(. Gearing my mind up for Thanksgiving…we host the family every year. So I’m planning on preparing my low carb meal the day before, so I’ll just need to reheat and add turkey. I don’t want to blow it over the holidays like so many years before.

Slow loss. I dont remember when rhe challenge started but I started 7/27 @ 185. Weight this morning 171.4. My goal was 15 pounds by 10/27. I’ll have to hurry to reach it as slowly as its coming off.

You’re actually doing GREAT, Carol! Slow loss is good really. If you lose weight too fast it can come with all sorts of drawbacks – saggy skin, hair falling out / breaking off, hormone issues etc. It also helps to let your mind catch up with your body, because big change too fast can be a lot to process (I had freak-out moments when I dropped two sizes since Spring and felt totally uncomfortable in my own body, lol).
Slow is good. π And you aren’t really losing weight that slow – you’ve dropped almost 14 pounds already!!

lol, there was NO way to go back down the way I went up – not safely at least. I got to the top and was a little lost. I had to cut through a few yards and ultimately came out in the middle of town… and walked home. π

I do have a question: When I get a sandwich, I always order it without the bun. However, many times, I ‘ve found in my fitness pal, there is no entry (under the specific restuarant), for no bun. If that happens, how do i enter it? or do I just NOT go to the specific resturant, and just enter it myself? (am I making sense?)

I found the Arby’s sandwich already entered accurately without the bun in MFP, and double checked it by the website: http://arbys.com/build-a-meal but often I just have to enter the individual ingredients – which works too.

I just started Saturday 10/15 and am down 2.5 lbs. I did this years ago but was not mentally in it to stay as a way of life. I had thought that because I was down in weight it was “ok” to now eat something not good. Well, I know how that worked out. I want this to work out forever. I just turned 60 and want to be healthy for my family and my ever rambunctious twin 18 mo old grandsons. I need all the help I can get!

Thank you, Jennifer π I got out yesterday and enjoyed the woods and the sunshine and nature… which helped a lot. I pushed myself hard on that hike so I’m sore today, but it’s a good kinda sore. π Taking it one day at a time and focusing on well-being, taking care of me. *hugs*:)

My weight stayed the same again…but I have been slowly increasing my carbs with different foods just to see how far I can go I guess without gaining. Being this close to goal sometimes I think, okay now what? Sugar doesn’t even tempt me anymore thankfully but I haven’t resisted a handful of corn chips with my taco salad. I’m really thinking of this as a lifetime woe and learning to make wise choices paying attention to anything that causes cravings or upsets my tummy. I have suffered with IBS for years but with woe I have ZERO flare-ups! Anyway, I want to knock out these last few pounds so I have been tracking everything closely again. It makes such a difference. Lynn, I wish I were close by cause girl we would have a blast. We’d hike and climb everything around….I love it. Have a good day everyone!

Tracking is definitely the key, and I have no doubt you’ll reach your goal! I intend to stay at 20-30 net carbs for maintenance when I get to that point, as much to maintain my weight as to avoid inflammation flare-ups (I used to be in chronic pain).

I just started on 10/10/16, I have a question are we suppose to be eating all the carbs we are allowed? I want to make sure I am doing this right? Thanks for all the help it has helped me out alot.

Hi Deana,
Kudos on getting started! π You don’t have to eat 20 net carbs, but it’s good to get in good carbs like vegetables & berries (no fruit, just berries). The rule is: 20 net carbs MAX, 70% fat minimum. So you can eat less than 20 net carbs, and anything over 70% in healthy fats is fine.

I’m late.. I’m late.. I was up a bit this week. But, I knew I would be and it’s honestly my first time going off keto and I know what the results are. It was festival week and I allowed myself to indulge. The results were beyond the small weight gain, I felt horrible! I got stomach aches and just didn’t feel good at all! Back at it now and trying not to stress eat.

Getting right back on track is the key. π That’s one reason I stay on plan on vacation or while traveling – because I don’t want to feel miserable when I most want to feel GREAT.;)
When you feel stressed, do Tricep Dips or go for a walk, or maybe read for 10 minutes. I find it really helps to find something to replace the usual routine.
