I’m pleased I’ve hung in there. There were some real challenges the last couple of weeks, lol.
My weight dropped a quarter of a pound (finally!) so I am weighing in at an even 141 pounds today. I’m getting SO close to a goal weight! I don’t even know what that number is – I’ll just know it when I FEEL it. But I do think I could easily get below 140 and into the 130’s in time for the final weigh-in on Monday… 🙂

Day 14: Monday’s Low Carb Meals
I love Laughing Cow creamy swiss wedges! 🙂 They are only 1 carb.
It was a busy Monday morning so I grabbed this quick low carb snack-breakfast to eat while I was working. It’s an ounce of almonds (28 grams) and 30 grams of pecans (1/4 cup) dipped in the swiss wedge. Easy!
I did weigh my almonds & pecans. Because it matters! I’ve found just counting out nuts is not really accurate, and neither is a measuring cup. Weighing out portions is a great way to eat ONLY one serving, and get it right. 🙂
That’s my Ozeri Kitchen Scale. I love it! Small, inexpensive & convenient!
For lunch I had one of the charbroiled chicken breasts I got as take-out from Gondola Pizza & Steak House the night before. It’s the Gondola Chicken, smothered in two cheeses & bacon. That made for a quick & easy lunch! I dipped it in their homemade ranch too… Yum!
Dinner was another super easy meal: The 12oz Delmonico Ribeye, also take-out from Gondola. 🙂
I ate the vegetables the night before. 🙂
Eating so much meat yesterday screwed up my macros of course, but it’s rare I have a day below 70% fat – no matter how much protein I eat…

Remember last week when I ordered new clothes in smaller sizes? My packages arrived yesterday! The size 8 shorts DO fit 🙂 🙂 and very comfortably even!! I haven’t tried everything on yet, but wow… WOW! I haven’t been a size 8 since my 20’s, lol.
My commitment and consistency is REALLY paying off.
That feels GOOD. The package came at a good time too, because it gave me a fresh dose of inspiration & motivation. I needed that. I’ve been feeling flaky lately 🙂 lol.
I shopped the American Eagle Clearance Sale by the way.
They have some GREAT deals online right now!
I’m excited about my Keto Krate box too. That should be here later this week, and gives me something else fun to look forward to. Those are the kinds of things that keep me on track, when my mind keeps wanting to wander. 😛

I’m down another 3 pounds making it 7 total!!
Trying to stay on track……………had a few slips last week but did good all weekend and yesterday was okay……….today is a new day!!

Congrats again on the size 8 and trying them on and knowing that they fit is so much fun!
So far I’m still at 6lbs lost since the beginning, the scale hasn’t moved for a few days but I’m hoping it will soon :). Anxious to see what your “few new random things” are, I’m like you and don’t mind eating the same things but something new once in awhile is good. I actually started trying to lose weight the first of June, my sister is doing Slim-Fast and having great success so I tried it. I lost 5lbs the first 2 weeks but then kind of had a hard time drinking my meals! I want to eat something! LOL. Plus being diabetic I don’t know if Slim-Fast is a good thing. Anyway, that’s when I started getting serious again about LCHF and joined the challenge, like I said I’ve lost 6lbs, so all in all since June I’m down 11 lbs. WooHoo!
Question: Is diet iced Green Tea better than diet coke? Wondering since they are both artificially sweetened why is diet coke so bad? I’m also concerned about the caffeine in the tea, especially at night, do you think it’s enough to keep you from sleeping? I can’t drink coffee at night because it does keep me awake, so that’s why I’m wondering.

Yeah my scales are just barely fluctuating, but that’s a common phase for me – especially being this close to goal weight, and also not making huge changes in my diet (I’ve been eating super low carb very consistently for well over 100 days now!)…
Eating a healthy ketogenic low carb diet is definitely better with diabetes. Good switch! I like to EAT too, lol.
Eh, people are against Diet Coke like they’re against McDonald’s – I say choose what you prefer. I enjoy a Diet Coke now and then. Usually just a few sips though, I can’t drink a whole one anymore.
Caffeine doesn’t keep me awake, but I say just test it and see. If it does for you, don’t drink any caffeine after lunch. They make decaffeinated sodas and teas and coffees of course, so that’s an option.
I am really enjoying your ‘cereal’ but I am afraid I may be using too many strawberries. Do you know the weight I should use instead of the qty?

My weight has been fluctuating all week. I was down a pound yesterday morning. Now i am up a pound. Argh! So i ended up at the same weight today as last week.
I will try harder this week. I have been snacking lately…..late at night. I keep it low carb but i know my carbs are higher than 20 a day
hopefully next week will show a loss.
Oh i forgot about the laughing cow soft cheese. I love these cheeses. I am going to have to get some again. Yummy. They are percect for dipping or with veggies.
They are good. π I like them on turkey rollups too with dill pickle. Yum!
My weight is fluctuating too, but I’ve discovered that’s part of my normal weight loss cycle so I’m not sweating it at all – just staying consistent. Sounds like you’ve identified a potential culprit though, so that’s an easy fix! Or something to test at least. π

I do yes, and my berries, it’s just so easy with the scale right on the counter where I make my plates. π

I weighed in this morning 2 pounds lighter for a total of 5 pounds since the challenge started. Not horrible I guess. I know exercising more frequently will help speed up my progress.
My meals yesterday were:
b: bpc, 2 fried eggs w/bacon
L: 2 Oscar Meyer smokedsausages w/ 2 pieces LC Parmesan Bread
D: grilled pork loin, cucumber salad (cucumber, feta, cesar), 1oz colby jack cheese
S: sf iced coffee
My net carbs were 13. Fat was 83%, protein 14%, carbs 3% and I drank about 60oz of water. I did not exercise yesterday.
5 pounds in two weeks is GREAT! Way to go. π π I actually don’t find that exercising helps. It’s like drinking alcohol – it stalls my scales for a few days. With big workouts I mean, and I’ve read that’s from muscle recovery.
Anyway, years ago I tested between working out for an hour at the gym 3-5 times a week eating low carb, not eating low carb, and eating low carb without going to the gym. The only time I lost ANY weight was eating low carb. π
That’s why I’m focusing more on strength training and muscle building (toning) now than cardio. Not for weight loss, but to make my body LOOK better.

That’s good to know because I will sometimes obsess over the exercising part if my scales don’t move because it’s always been put in our heads that in order to lose weight you have to eat right and exercise. I’m really focused on keeping my eating and macros in check more than anything and I know if I stick to it I’ll be great.
And speaking of scales olive think one of mine is broke. My digital scale says one thing yet my dial scale says another and I’m talking a 5 pound difference between the two. So instead of 5 pounds loss it could be 10!
Oh, that would drive me bonkers! π My two are slightly different, by maybe a pound, so I go with the higher one lol. Which one do you THINK is accurate??
