I should NOT attempt to cook 😛 lol. Yesterday I decided to “make food” which is usually more like a science experiment in MY kitchen. I’ll show you what I made. At least it was edible and not a total waste of food. 🙂
That’s why I cooked – to use up food I had here in the house. 🙂
I had a really great day. I stayed inside, out of the heat – after getting too much sun on the river the day before, lol – and took it easy.
That kayaking trip did me in! lol…
I won’t get to weigh myself again until Tuesday, as I’ll be traveling. That means I may not get to write much either, so definitely follow along on Facebook or Instagram for fun trip updates! Anyway, I’m up a pound which is typical after such a big workout. That’s from muscle recovery – in case you’ve experienced the same.
Here is my Low Carb Food Diary for Day 59 of the “Get Lean For Summer!” 90 Day Low Carb Challenge. It’s NEVER too late to join if you haven’t already!
Day 59: Wednesday’s Low Carb Meals
I had my usual low carb breakfast of 1/2 cup pecans, 1/4 cup Daisy brand cottage cheese and 4 small diced strawberries. It’s 5 net carbs and 85% healthy fats.
I didn’t finish my chili from Wendy’s from the night before, so I had the other half for lunch – with sour cream on top! (Wendy’s small chili is 15 net carbs.)
Then I decided to “cook” for dinner. I don’t know what I was thinking. 🙄
I remembered how good the sausage & cream cheese was when I made Justine’s Stuffed Mushrooms, and how great that went with veggies. So I decided to make a casserole sorta like that – or something. 🙂
I fried up half a pound (8 ounces) of Tennessee Pride mild sausage, stirred 4 ounces of cream cheese into it, steamed a bag of Pictsweet Broccoli Florets, stirred up three eggs… then mixed it all together:
That looks gross, I know. 😛 I thought so too, lol.
It came out okay though, and didn’t even stick to the baking dish!
It was edible. Not great, but more like: it’ll do. 🙂
