I should NOT attempt to cook ๐ lol. Yesterday I decided to โmake foodโ which is usually more like a science experiment in MY kitchen. Iโll show you what I made. At least it was edible and not a total waste of food. ๐
Thatโs why I cooked โ to use up food I had here in the house. ๐
I had a really great day. I stayed inside, out of the heat โ after getting too much sun on the river the day before, lol โ and took it easy.
That kayaking trip did me in! lolโฆ
I wonโt get to weigh myself again until Tuesday, as Iโll be traveling. That means I may not get to write much either, so definitely follow along on Facebook or Instagram for fun trip updates! Anyway, Iโm up a pound which is typical after such a big workout. Thatโs from muscle recovery โ in case youโve experienced the same.

Day 59: Wednesdayโs Low Carb Meals
I had my usual low carb breakfast of 1/2 cup pecans, 1/4 cup Daisy brand cottage cheese and 4 small diced strawberries. Itโs 5 net carbs and 85% healthy fats.
I didnโt finish my chili from Wendyโs from the night before, so I had the other half for lunch โ with sour cream on top! (Wendyโs small chili is 15 net carbs.)
Then I decided to โcookโ for dinner. I donโt know what I was thinking. ๐
I remembered how good the sausage & cream cheese was when I made Justineโs Stuffed Mushrooms, and how great that went with veggies. So I decided to make a casserole sorta like that โ or something. ๐
I fried up half a pound (8 ounces) of Tennessee Pride mild sausage, stirred 4 ounces of cream cheese into it, steamed a bag of Pictsweet Broccoli Florets, stirred up three eggsโฆ then mixed it all together:
That looks gross, I know. ๐ I thought so too, lol.
It came out okay though, and didnโt even stick to the baking dish!
It was edible. Not great, but more like: itโll do. ๐
I had another serving later last nightโฆ

I am so proud if myself and my new sense of being in control of my food choices
i am at a really nice extended stay hotel now for the next 61 days. It is owned by Marriott hotels. The offer a free breakfast buffet( hot food too)
i chose some fluffy scrambled eggs i put chopped green onions, shredded cheddar cheese abd salsa on my eggs. I had one sausage patty and a half of a peach yogurt
i resisted the cereals, various delectable pastries, bagels, hash browns, fruits and more
i am so proud of myself!
I didnโt even consider eating anything not on plan. This is a HUGE change in my behavior. The pastries would have been my usual choices in days gone past
this challengeโand sticking with it for. 53 weeks now, is it? Has reprogramed my mind. Any thing you do, for more than 30 days or more, becomes a habitโfor the good or the bad. ๐ In this case, it is definitely for the good ๐ This Way of eating is my way of life now. I am so happy about this! Cheers!
Today is day 60, I think weโre in the 9th week โ and I feel the same way! This is the first time in my life I have ever felt so โin control.โ And that is extending way past my food choices and mindful eating into other areas of my lifeโฆ which feels great! ๐
Iโm so glad you got moved. It sounds like a much better situation, and with a pool! Youโre doing amazingly well, especially under crazy circumstances. Iโm impressed!!

This hotel has an excercise room too but i am like you, i find exercise *boring. (As in gyms) i love to do fun excercising kike swimming, dancing or even just walking outdoors. ๐
That is my one grounding point that keeps me going when everything else feels nuts โ having a focus, and feeling good about myself and my own choices at least. When often Iโm stuck dealing with random life stuff or other peopleโs decisions that affect me. But having something within my control, and feeling GOOD about that makes all the difference!!
Oopsโฆโฆ59 days now not weeks LOL. ๐

I am really inspired by you. I follow you on facebook, I get your emails, I have โyourโ breakfast everyday as well! A good quick yummy casserole with broccoli is just like your โloadedโ but baked in a ramekin. I usually mix in a little mayo, butter, bacon, cheese and sour cream (or cream cheese) into the steamed broccoli and bake it. Itโs so good. Broccoli mixed with butter, black pepper, parm, garlic, and a little HWC baked is pretty friggin awesome as well. ๐

Lynn, what kind of shipping options do you choose when you order your low carb bread from Netrition? Itโs so expensive and the shipping is expensive! Iโm also afraid it will thaw out by the time itโs delivered to my house.
Is there any other low carb bread that you use? Iโve been using Mission Carb Balance flour tortillas. But sometimes I just want bread. Lol

I order mine without expedited shipping or thermal packaging โ just the regular flat rate shipping. The one time I ordered it during hot weather, as soon as it arrived I unpackaged it and let it cool off, dried off the packaging (had a little sweating), then froze it. I take out what I want and toast it. ๐ Enjoy!!
