I’ve been spending a lot of time on Instagram, and this week the #backontrack hashtag is pretty active. 😛
Looking over those updates, my own “food indiscretions” a few times over the holidays were really not that bad.
It stinks that I have to be SO strict with foods just to maintain my weight, and that I gain SO fast if I’m not. And I *am* disappointed that I am ending the year almost 4 pounds heavier than I really wanted to be… but I keep reminding myself that 4 is better than 40. “Keep on keeping on” is what’s running through my head.
Today is the final day of the year-end low carb challenge, by the way. I weighed 153.8 pounds for the 3rd day in a row this morning. I stuck my tongue out 😛 at the scale. lol. Perhaps tomorrow morning’s final weigh-in before the New Year Challenge will be better. We’ll see. Anyway, here’s what I ate yesterday…
Wednesday’s Low Carb Food Journal
One of my low carb friends stayed over, so we got up and made sausage & eggs for breakfast. You’ve probably noticed I like my eggs over medium, but we went with her preference: scrambled with heavy cream & goat cheese. Delicious! 🙂
I had to take her back to the airport, so I came home and just put together a fast easy late lunch – my favorite healthy low carb foods all in one bowl! 🙂 It’s 1/2 cup of Daisy Brand cottage cheese, 3/4 cup crushed pecans, 3 blackberries & 3 diced strawberries.
^ That was A LOT of food in one bowl 😛 so I ended up finishing it with my dinner, which was the leftover sausage (from our breakfast) and 2 eggs scrambled with Colby Jack cheese.
Not a pretty picture, but I ate the leftovers and it did the trick -lol.
Here’s how my macros worked out for the day in MyFitnessPal:
Late last night I enjoyed a couple of sugar free York Peppermint Patties. 🙂 Mmm. And in my favorite “sweater leggings” lol. I got those from American Eagle, and I really wish I’d bought 3 pair, because as soon as I put them on and realized I could LIVE in them… they were out of stock. 😛 Figures!
Tonight is New Year’s Eve. If you plan to enjoy drinks, please remember that alcohol hits you harder (and faster!) when you are eating low carb than it would otherwise. 😉 And don’t weigh yourself for at least 3 days after drinking as alcohol takes much longer to metabolize, resulting in the “alcohol stall”. 😛

I love your “keep it simple method”. My husband and I are starting next week. Going to have to clear the cabinets and stock up. I keep looking at your pecan entries (I love pecans too), only 3 carbs for 3/4 cups? That’s amazing, I know you subtract the fiber from the carbs to get the net carbs!
Thank you Suzanne! π Be sure to check your own labels. My pecans are “Best Choice” brand (cheap store brand, lol) and 4 carbs, 3 fiber per 1/4 cup serving (so 1 net carb).

I’m glad I found you on IG. It’s great, though mostly silent, support. It’s great that you eat the same, easy foods often and if you screw up (drink six beers – my personal fav!) you just keep on going. That’s what we all do. It’s called Life. : }

I, like you am one of those people that when I stick to the diet I maintain or sloooly lose maybe 1/4 pound a week, maybe. One potato and weight jumps on me like mosquitoes in the summer. I often tell people I will live longer on a desert island than anyone else. It also doesn’t help that I am 73 and am 4’11” inches. So 5 pounds is two dress sizes for me. So frustrating. One would think at this point in my life I could enjoy foods. Well, I just have to resign myself to enjoy the foods I can have. It doesn’t help that I live in New Mexico where there is the finest Mexican food in the world. Oh how I wanted tamales and posole for Christmas! But didn’t. But today I feel virtuous at 133 lbs.
I totally get the frustration, JoAnn. At least we don’t have to starve ourselves – eating low carb is one of the best ways to eat for weight loss AND health, with TONS of food options & variety. π That’s a plus!

Here is the hack I use: http://www.travelinglowcarb.com/4448/myfitnesspal-hack/ It’s free, and I use the free version of MyFitnessPal. That post shows you how I have mine set up, with the instructions. It only works online though, not on the mobile app. π *cheers*

I am not a fan of eggs, so breakfast was always a challenge for me on low carb, this recipe has really made a huge difference to me being able to stick with this lifestyle.
