My Low Carb Meal at Chili’s Restaurant


Last week I met my friend Sue for lunch at Chili’s Grill & Bar. I love getting out with FUN friends! Especially SMART friends with GREAT conversation. πŸ™‚

I’ve been a little quiet online lately. Apologies for that, and for not sharing my daily low carb food journals with you like usual. I’ll get back to that. I got super busy with work and other things.

Anyway, back to my lunch…

The last time I ate at Chili’s with my friend Sherry, I had a modified (low carb) version of the Quesadilla Explosion Salad – which was delicious!! I should have had that again. πŸ™‚ Not that my meal this time was bad… that salad was just THAT good! Here’s a picture of it:

I was really torn on what to order for some reason. I scoured the menu, and the Chili’s Nutrition Facts of course, and finally just settled on something simple.

My usual at restaurants is a basic “Meat & Greens + Healthy Fat”.

I decided to go with “my usual” – a simple salmon & sides. I chose plain grilled salmon, steamed broccoli, and the “Spinach & Garlic Roasted Tomatoes”. I also added cheese & sour cream to my broccoli, and a side of avocado.

The Spinach & Garlic Roasted Tomatoes was a good side. I took the garlic off, because I had another meeting to go to after lunch (lol). And I only ate one of the tomatoes. The nutrition facts on those (as a separate side item) were higher carb than I prefer. The tomatoes were good though, and one of them was plenty.

I’m meeting Sherry for lunch again this week, but we’re going to a different place this time – another old favorite of mine. πŸ™‚ I’m really looking forward to a fun afternoon of laughs and brainstorming! Have you been out with your girl friends lately?? If not, make it a point! It’s good for the soul…

I’m *almost* finished with the big project that has had me busy offline, so I’ll share more again soon. It’s a writing project, so it kinda sucked my brain dry -lol.
