I woke up at 2am this morning. I’m having a hard time getting back in the swing of things this week. Just a bit jet-lagged, no doubt.
I always find it interesting that I have no issues flying West. It’s when I fly East, or “into time” (back in time, against time, losing time – however you want to say it) that I end up with jet lag. It makes sense though, I suppose…
And of course my weird sleep patterns and lack of appetite means the scales aren’t moving so far this week. 😛 I find I lose weight best when I’m eating enough and getting plenty of sleep. I’m just ignoring the scales for now, and continuing to eat healthy and catch up on my rest – and focusing on getting back into my routine.
Yesterday’s Low Carb Food Diary
I had errands to run in the morning, so I grabbed take-out for breakfast while I was out. It’s a great little local place that cooks “real food” AND has a drive-through. Perfect. 🙂 I got two fried eggs, two pieces of sausage and two slices of bacon.
Low Carb Take-Out: Fried Eggs, Sausage & Bacon
I had the eggs and one piece of the sausage, and half a slice of bacon. I just wasn’t in the mood for bacon. Go figure! (lol) I gave the bacon to my great dane, Slim. I saved the other sausage, and ended up eating it later in the afternoon for a quick snack.
I also got two hamburger patties for later.
I call that “drive thru grocery shopping”. 🙂
I don’t really have many groceries on hand at the house, so I figured it would come in handy to have something to warm up & eat real quick later.
Zero Carb: Plain Hamburger Patties
Those are still sitting in the refrigerator, so I’ll probably have them for breakfast today. I ended up napping through lunch yesterday, then snacking on the leftover sausage patty before I headed out for a nice dinner.
I actually had a local low carb dinner meetup planned, but no one showed up. Which is okay – I still enjoyed a great meal! I went to a newer local place called The Chef & His Crew which is always great. And they know me by name. 🙂 Well, by “low carb traveler” at least, lol.
It’s a shame this place isn’t more busy, because they REALLY take pride in their food. They’re really great about accommodating any weird special requests I have too.
I ordered the steak salad, and added boiled egg & fresh strawberries. The greens on this salad are lightly tossed in a bit of ranch. I don’t add anything else to it. The combination of foods is too good to drown out!

I meant to get the strawberries on the side, but I just picked them off and then enjoyed them for dessert – dipped in salted butter that I plucked out of the bread basket. 🙂 Yum!

I don’t think I ate quite as much as I logged – for the dinner, I mean. I mostly picked all the good stuff off the top, and brought most of the “salad” home with me. I’ll probably mix the leftover salad with 1/3 cup of pecans and enjoy that for lunch today.
I love pecans in my salad. 🙂
I have to hamburger patties in the fridge, the leftover salad, and plenty of pecans on hand – plus I have appointments today, so I may grab something low carb while I’m out & about. I guess I’ll just go with the flow, and whatever sounds good at the moment – which is what I usually do. I’m not much for food prep. 😛
I need to get back to my workouts too, as soon as I get my energy back…

Unfortunately I don’t know my exact “highest weight”. Around 180 (maybe closer to 190 at one point) and at 5’4.5 and short-waisted… that’s hard to carry on me. π I’ve lost around 30 pounds, give or take.
Since then I got sick, went on hormone therapy, had an emergency hysterectomy (with a lot of complications) and now struggle just to maintain my weight – so this last 10-20 pounds has been a REAL challenge!
One I intend to beat. π

How do you like your pecans- raw or roasted and salted? I was eating them raw until I tasted the roasted and salted. No going back, they are to good! I love pecans! They are the only nut that doesn’t bother my stomach.

I usually eat my pecans raw, but I do like the seasoned/salted roasted pecans too. I sometimes roast my raw pecans with butter & cinnamon. Those are good! But more often than not, I just eat them raw.
