The 15 day 2-week 3IMAX Challenge officially ended yesterday. This marks my 15th post in a row where Iโve shared every single meal and ALL 15 of my daily food diaries with you โ complete with macros. That was fun! ๐
The final results are in:
I lost 5 full pounds in 15 days!
Current weight: 152.2
That may not seem like a huge loss to you, but Iโm pretty close to my goal weight โ so the weight comes off slower for me than someone who has more to lose. I also eat low carb consistently, so it wasnโt a major lifestyle change for me.
I typically lose 1/2 to one pound per week, so 5 pounds in a whole month is a BIG success for me. Losing 5 pounds in two weeks was GREAT!! ๐
I even cooked TWICE during this challenge, lol. Thatโs also a lot for me. ๐ It was inspiring actually. I hopped on to my kitchen wishlist yesterday and did some shopping. I ordered some cool new kitchen gadgets. Iโm aiming to get a little more familiar with my kitchen! You know, that room in the house where my coffee maker lives. ๐ I got some cool stuff, so Iโll show it off to you when it arrives. And hopefully Iโll still have enough fingers to operate a camera so I can do that. lol.
So here you go, my final 15th day Food Diary for the 3IMAX challenge (which stands for: 3 Ingredients Max โ and is a great kick-start or stall breaker!).
Day 15 Low Carb Food Diary
I had FIVE meals yesterday.
I got up hungry at 4am and had some leftover broccoli, warmed up with colby jack cheese with was ooey gooey deliciously melted over my broccoli. ๐ Then I went back to bed, lol. I got back up and had my usual coffee(s), then had โbrunchโ (whatever you want to call it โ I ate sometime around mid morning, ha!).
I ate the rest of the broccoli, added cheese again, and this time added 1/4 cup Daisy brand cottage cheese too:
I heated that all up together and it made what I calledโฆ โbroccoli lasagnaโ lol. ๐
Later that afternoon I got hungry again and finished off some steamed squash I found in the refrigerator. Leftover from a take-out meal earlier in the week.
For dinner I had a BEAUTIFUL Low Carb Grilled Chicken Club from Hardeeโs (which is called Carlโs Jr. in some areas). These are SOOOOO good!
For โ2nd Dinnerโ or โ5th Mealโ (whatever, lol, I just eat when Iโm hungry!) I had the rest of my Naked Wings from Pizza Hut, with half a ranch cup to dip them in.

My macros tallied up as:
1334 calories, 21 net carbs, 65% fat / 29% protein
I got plenty of veggies in yesterday too: broccoli (twice!), squash, lettuce & tomato. And coffee. Thatโs a vegetable, right? ๐ lolโฆ

Thatโs awesome Lynn! I canโt believe you lost that much in 15 days! I watched all the meals you were eating but didnโt realize you were doing a 15 day challenge. So excited to see all the great food we get to have on this โWay of Lifeโ! Thank you!
Thank you, Lorraine! It surprised me too, actually. ๐ Thatโs a nice loss for me in that short a time! The next time I do โ3IMAXโ Iโm going to get even more strict โ include my coffee (my creamer has way too many ingredients), count Daisy Brand cottage cheese as the 3 ingredients it is (instead of one), etc.
Iโm a big fan of โfood scienceโ and I like some of the things Iโve read about โmono mealsโ (one ingredient foods per peal) too. Experimenting is fun! As long as itโs healthy experimenting, of course. ๐
