Today is the final day of the 2-Week KISS Challenge (kiss = keeping it super simple!).
I’ve shared my low carb food diaries every single day of this mini-challenge, and you can review them all here if you need some EASY low carb meal ideas.
Below you’ll find yesterday’s meals & macros, then tomorrow I’ll share the final day (today, July 15th).
Our next Low Carb Challenge starts on July 20th if you’d like to join in. 🙂 Just click that link and make sure you’re signed up by email, and you’re good to go! Or sign up here real quick:
I’m really pleased with my willpower for 15 straight days (including today!) as well as my results. This has been a GREAT challenge! If you’re looking for a kick-start or a stall-breaker, this is a GREAT method. We’re following the 3 Ingredients Rule. Easy!
My foods today are pretty ugly, by the way…
Well, except for dinner – it was beautiful. 🙂
Day 14 Low Carb Food Diary
I had a couple of low carb cheesecake muffins to finish off, so I included those in my breakfast and lunch yesterday. I’m in “clean out the fridge” and “eat whatever is left in the house” mode right now, lol – so I also finished off the bag of pecans I had.
For breakfast I had one of the muffins, crumbled up, topped with 1/4 cup of pecan halves and 1 medium strawberry (5 net carbs):
For lunch I finished off the last low carb cheesecake muffin but this time I added 1/4 cup of pecans and a tablespoon of peanut butter – and mashed it all up together:
Er, not pretty – but dang that was good!
It was kind of like cookie dough or something. 🙂
Those muffins are higher in carbs than I like though, and I drank a lot of (too much!) coffee yesterday, so between the muffins & creamer… I decided I better have a zero carb dinner. I also didn’t feel like cooking, or cleaning – since I’d already done the dishes that afternoon 😛 OR getting out. At all. So I called Pizza Hut and ordered “Nekkid Wings”. 🙂 No carbs, and beautifully delicious!
The Naked Wings (not the breaded wings) are crisp, juicy and meaty – and such a nice treat! I did get a ranch cup to dip in, and used half of it – for 1 carb.
Here’s my entire MyFitnessPal Diary for the day:
My macros tallied up as:
1375 calories, 20 net carbs, 78% fat / 16% protein
I didn’t sleep well again last night. Stress & pain combined, no doubt. I slept maybe 4 hours – and that was after 6am this morning. And I was hungry ALL night for some reason, which was weird. Maybe because I just ate super small meals / snacks. Even in the night. Finally around 4am I got up and made a bowl of leftover broccoli with melted cheese on top. 🙂
I’ll give you my final weigh-in for this two week challenge tomorrow, along with today’s low carb meals & macros… Stay tuned!
Oh – and I drank 64 ounces of water yesterday. 🙂
I have a hard time with the “water habit” but I do usually make it a point to eat foods high in water content. You can learn more about both – how much water to drink AND a list of high-water foods – here: How Much Water To Drink. I found it easiest to start drinking water with meals, which is great because it eliminated my Diet Coke there, and I also keep a bottled water at my desk while I work.
What about you – how are things going with your low carb journey??
Best,
Lynn Terry,
aka @LowCarbTraveler

Hope you slept better last night.
Do you still use HWC/coconut Oil in your coffee? I’m like you w/my coffee, I drink more than one cup a day and I LOVE Iced Coffee. I still can’t do the true “bulletproof” way though, but coconut oil in my coffee is good.
Hope all is well!
Thank you! I did – I had a GREAT sleep. And woke up another pound lighter! π That sleep really makes a difference, lol.
I tried the BPC (bulletproof coffee) for about a week this past Spring. It tastes alright. I like it okay. It’s more work to make a coffee than I prefer, and I didn’t notice ANY results from it – no increased energy or change in weight loss progress – so I stopped worrying with the extra steps lol.
If you enjoy it, and it’s not affecting your progress in a negative way, go for it! Coconut oil is a beautiful food. π
