Today is 9 out of 15 days on the “KISS” (keeping it super simple) 3IMAX Low Carb Challenge, and I’m pleased to say I’m still holding strong and eating super simple healthy low carb meals! 🙂
I’m still in pain, even after several trips to the chiropractor. I just ordered a new reclining massage chair for my office to ease the tension in my back, and also to avoid RSS (repetitive stress syndrome).
Because I know me – once my tolerance for this kind of pain wears thin, I throw everything out the window and EAT. It’s been weeks on end now, five or six weeks I think, and I’m totally over it. I’m sick of ice packs, Bengay (dang, that stuff stinks!), Advil/Tylenol (enough to rot my insides out), etc. I’m ready for SERIOUS relief.
I’m back to my T25 Fast Track Workout too. As miserable I feel, I KNOW that the more I move and stretch my muscles, the more relief I’ll get. And I’m sporting my latest Fabletics outfit! 🙂 I find their sizing to be very consistent, which is important when you’re ordering online…
This is my new FAVORITE sports bra. Super supportive. Even with a high intensity workout, “everything” stayed in place. 🙂 And it’s comfortable enough to sleep in even. WIN! See my other Fabletics favorites here. Highly recommended.
Most of the Fabletics I order also double as lounge wear, casual wear, or the open back tank like you see in the pic above is great over a swimsuit too. I buy “outfits” but the sports bra above only cost $20 when itemized out, which is a GREAT deal!
Day 8 Low Carb Food Journal & Macros
My day kicked off with low carb take-out (go figure, lol). I was out for yet another appointment and a few errands, so I picked up fried eggs & bacon from a local place that’s been here for like 100 years. I love it because they cook REAL FOOD. 🙂
For lunch, I ended up having 1/3 cup of pecan halves… AGAIN. lol.
I know, I know, me and my nuts! 😛
Someone asked me recently if I eat any other nuts besides pecans (lol!). I do…
I like almonds, sunflower seeds, pistachios and walnuts too. Pecans and walnuts are the lowest in carbs of them all, and also highest in fat.
I can eat 10 net carbs worth of pistachios easily in one sitting, so I eat those rarely – and like them in salads, or in some way that I’m not eating them alone because they add up too fast. Sunflower seeds are great in salads too! Almonds are nice and I like those, but I have a temporary crown after a recent root canal, so pecans are much easier on my teeth than almonds – and lower carb, higher fat too. 🙂
That may seem like a light lunch, but pecans are VERY filling given they are so “high fat” – plus I had a huge breakfast (by my standards). I was famished by dinner though, so I cooked a big meal. I say “big” – it was still within the 3IMAX rules of three ingredients. The real shocker being… that I COOKED. lol.
This is the Low Carb Spinach Burger Recipe I published earlier, with seared squash on the side. As a southern woman, grew up making breaded fried squash – so I had to learn how to cook it a new way. A low carb way. 🙂
It’s easy: slice, salt, brown in olive oil!
This time of year you can get lots of beautiful “fresh out of the garden” squash, but I’ve already used up what I had on hand.
I keep this frozen yellow squash in the freezer, because it’s easy to “dish out” only what you want for your meal – without worrying the rest will go to waste. This one, along with the frozen chopped spinach, are low carb staples in my freezer. 🙂
It’s exceptionally good for frozen squash. I believe it’s flash frozen, which would explain why. I’m not really a food snob, I just know it’s GOOD. lol…
The spinach burgers were amazing, and HUGE, and only 1 net carb each.
The day ended nicely at 1264 calories, 14 net carbs, 20 total carbs, 77% fat and 18% protein. Here’s my entire MyFitnessPal Diary for the day:
Not bad. 🙂 And I managed to keep each meal at 3 ingredients or less!
