In my last journal entry I noted that my goal for today was to “eat clean and work out”. Mission accomplished! 🙂 Er, “today” being yesterday – or Day 7 of the 2 Week 3IMAX Low Carb Challenge. Just to clarify, lol.
I did kinda blow the “3 Ingredients Max”. But not by much! And I do feel better today after my appointment with the Chiropractor. I was in a serious mood there for a couple of days. Keto flu + pain combined is a vicious combo on my personality, lol.
Low Carb Meals & Macros for Day 7
I skipped breakfast. Unless coffee counts. 🙂 It wasn’t intentional, I just slept in a bit and had an appointment to get to. It was eat or shower. After serious (3 second) deliberation, I opted for the much-needed shower. I figured my chiropractor would appreciate that, haha!
On my home from the appointment I decided to swing through Hardee’s and grab a Low Carb Grilled Chicken Club. That wasn’t my plan, but I was totally famished and it just sorta happened.
This is more like 5 ingredients, not 3 – if you count the lettuce (Elaine!! lol). I wasn’t counting the lettuce in my “3 ingredients max” since it hardly has any nutritional value, and I miscounted otherwise. That’s my story. 🙂
I ended up taking a long nap in the afternoon, catching up on that lost sleep, so I didn’t eat again until later in the evening. Wait – I did snack on 1/3 cup of pecan halves when I woke up…
I had pulled out hamburger meat to thaw, and planned to mix in chopped spinach and make “green hamburger steaks” with steamed broccoli. I even washed all the dishes so I would have a clean skillet to cook it in, and a clean plate to eat it on. 🙂 Then I discovered my son was at the Mexican Restaurant, and all of that went right out the window! Or back in the refrigerator, actually.
I wondered just how that take-out order would turn out. They tend to always serve my meal different every time I eat there, even when I dine in and order the exact same thing, lol. I figured it was worth a shot, but it was anyone’s guess what would actually be in the box when it got here…
I was pleasantly surprised! 🙂
Several people commented that it looked skimpy. The plate is bigger than it looks, and I was STUFFED. I ate it all. 🙂 It was delicious!!
True, this was not three ingredients either. I did do my best to KISS (keep it super simple) with real whole food ingredients – which is why I didn’t get guacamole or shredded/seasoned chicken, but fresh avocado slices and grilled chicken strips instead. (They add some kind of spices/seasoning to the shredded chicken.) So it was 5 ingredients, again, instead of 3 – well, 6 if you include the lettuce. 🙂
I decided not to stress over it. The whole point of the 3IMAX Challenge is “KISS” – keeping it super simple. Over-complicating the concept of keeping it simple seemed silly to me, so I just ate my two meals as they were – all good food choices, real food, low carb, very simple combinations.

Lynn…a fabulous breading substitute is crushed pork rinds. When I make chicken tenders I coat them in mustard and then roll in crushed pork rinds. I pan fry them in a little coconut oil and they are delicious.. I use the crushed pork rinds for all my breading needs!

Thank you, Lisa! I’ve heard this is great mixed half & half with grated parmesan – and rolled in egg first as well. I don’t really care for fried foods anymore, as far as breaded deep fried goes I mean. I used to make fried squash for example, but now I just like it seared. π That’s IF I cook, lol.

Hi Lynn, this is day 3 for me and I am finding it hard to get all of my vegetables in do you have any suggestions? As I have read that at least 15 grams of net carbs should come from veggies.
