Before I started eating low carb, I never really liked spinach. I never ate things like avocado or brussel sprouts either!
My taste buds TOTALLY changed once I was in ketosis, and I actually started CRAVING those crazy (healthy) foods. 🙂
I’ve heard this is normal, for your tastes and cravings to change completely on a ketogenic low carb diet. That’s a really cool perk, don’t you think? To crave HEALTHY food? lol…
These days I find myself sneaking things like spinach into everything I can. In fact, I make a bit of a “game” out of it – which I like to call Hide The Spinach. Basically I find all sorts of fun, creative ways to “hide” spinach in odd places…
Fact: Spinach is a great low carb source for both magnesium and potassium.
One example is my low carb biscuits.
This recipe happened quite by accident. I went to make my usual low carb garlic cheese bread sticks, and while I was getting out the ingredients I noticed I had some leftovers from dinner the night before – including steamed spinach:
Who would have thought spinach would be so great in a BISCUIT? 🙂
In this quick low carb meal for one (an easy one skillet meal), I made what I call “Dirty Spinach”:
Dirty Spinach is DELICIOUS. I call it that because I cook it right in the greasy skillet where I cooked the meat I’m having with it. 🙂 It started out as a way to have less dirty dishes, but turned into a delicious dish of dirty spinach. LOL.
Hamburger steaks are so quick & easy that I make them a lot. Well, I don’t cook a lot – so that’s relative. Anyway, there’s a hole-in-the-middle trick to keep them from puffing up on you so you don’t have to squeeze all the juices out to flatten them back down. I like to add an egg and a handful of chopped or steamed spinach to my hamburger meat and mix it up with my hands (like you would a meatloaf). It’s a great way to “hide the spinach” and make a great low carb high fat balanced meal (veggie included!) in one skillet – and in one “food”.
Sometimes I’ll cook spinach in the skillet WITH the meat, and fry it right ON the hamburger steak:
YUM!
There’s also scrambled eggs (with cheddar & spinach), fritatas, crustless quiche – and all sorts of ways to “fancy up” your eggs with this beautiful green veggie. 🙂

By the way, if you haven’t tried it yet… Birds Eye Steamfresh Lightly Sauced Creamed Spinach is fabulous. You’ll find it in the freezer section at your grocery store.
