Happy Peanut Butter Day!
While it’s celebrated on January 24th, every day is a great day for a low carb peanut butter snack. 😉 To celebrate I created a Pinterest Board of Low Carb Peanut Butter Recipes for you to enjoy.
Peanut butter is a good source of protein, and also a great source for healthy fats in your diet. It’s important to read your labels and choose a low carb peanut butter with the lowest net carb count, and the fewest ingredients.

This was my favorite recipe, and one I plan to try today. I particularly liked it for it’s simplicity – using only four ingredients! And it’s super easy to make. 😉

I doubt you would need much sweetener. Be sure to follow her instructions about “sweetening to taste”. I plan to use the Torani Sugar Free Vanilla Syrup to sweeten mine just slightly. I prefer my treats less sweet than most.
It’s ideal to use a candy mold, or you can use a small muffin pan.
I just ordered a bottle of Torani Sugar Free Peppermint Syrup, so I’m going to try this candy with just the chocolate and coconut later this week – with the peppermint flavor. YUM!
Minty chocolate coconut bites sound great, don’t they??
Here’s my own low carb peanut butter cookie recipe, which I LOVE. It’s very versatile, as you’ll see from the three different types of cookies I made. 😉 Enjoy!

try putting the powdered peanut butter in your recipes as well–it tastes amazing and gives you a lot more for your calories:)
