I’m not a big fan of the kitchen as you know, but when I do cook it’s “quick low carb meals for one” as I’m often eating alone.
I prefer to make the least mess possible in the kitchen, and spend as little time in there as I can get away with (lol), so I tend to make “one skillet” meals more often than not.
As an example, the meal in the photo was all made in one skillet and took very little time. But it was healthy, delicious and filling! And of course, low carb. 😉
I started with two very easy low carb sides: pre-sliced mushrooms and Birdseye Steamfresh Creamed Spinach.
I like to keep plenty of low carb frozen vegetables and other easy low carb foods on hand. Planning is key, especially when you don’t feel like cooking or just want something quick and easy.
I’ll often cook the whole bag of creamed spinach, or any frozen chopped spinach, and store what I don’t use in the refrigerator.
It makes for easy meals over the next couple of days as I like to add spinach to my scrambled eggs or omelets, and even in my low carb bread recipe.
I try to sneak greens in anywhere I can. 😉
For this quick low carb meal I started with Ground Chuck. I pattied out maybe 1/3 to 1/2 pound and put it in the skillet. I popped the Birdseye Creamed Spinach in the microwave (it cooks right in the bag). I used a little garlic salt and Montreal Steak Seasoning to season the meat. I also like Mrs. Dash but I was out.
Oh, and a tip for making great Hamburger Steaks! Use your finger to make a whole in the middle of the patty. That prevents it from shrinking or puffing up:
I cook it on medium heat, maybe just a tad higher, and cover it. I like to make the outside “crisp” without getting it too done in the middle. After I flipped it the first time, I season the other side and add in the sliced mushrooms:
When it’s done, I put the meat & mushrooms on a plate covered with a paper towel (to soak up the excess grease) and then toss the creamed spinach into the greasy skillet:
That makes the spinach really tasty. 😀

Thank you for this super simple recipe. The kitchen is my least favorite room in the house. I am a busy teacher with a long commute and the last thing I want to do when I get home is cook! In addition, cooking for one is always a challenge, as converting recipes is not easy most of the time; consequently, grabbing a sandwich at the deli is so tempting. Does any one know if “low-carb for one” cookbooks exist?
