I promised to share pictures of some of the low carb foods I’ve been eating since getting back on track last week. I’ve been keeping it super simple, to make it easy to STAY on track.
The first step was cleaning out the refrigerator and cabinets, to get rid of any carb temptations.
It’s far too easy to grab “junk” when you’re in a hurry or on the go – or when it’s just entirely too hot out (like, um, 105 degrees!) to want to heat up the kitchen with cooking. So I have been keeping easy low carb foods on hand, plus enjoying my usual favorite low carb take-out treats. 😉
Here are some photos & descriptions, in no particular order, of some of the easy low carb foods I’ve been eating lately. I’ve also been snacking on things like ham & string cheese, strawberries and blackberries (in moderation), pecans & string cheese, and tuna salad – which I like as a topper on cold crisp slices of cucumber.
Bacon & eggs has been one of my staples. It’s an easy one skillet meal, zero carb, and I can use the leftover bacon to snack on later – or in a quick omelet for another meal.
If I happen to be out & about, I grab tenderloin & eggs from a locally owned place here in town. Their tenderloin is SO good that I generally order more than I need and then have the leftovers for my next meal.
Another of my favorite easy take-out’s is Classic Bone-in Wings from Applebees. I always blot off as much sauce as I can, but they are only 6 net carbs per order. I also get blue cheese dip instead of ranch.
I actually got these wings to save for later when I ordered their Caesar Salad with Grilled Chicken (no croutons). I often do that just to make it easy, as I work from home and don’t care to have to go out so much. Things like grilled chicken & steamed veggies from my other favorite restaurant heat up well as leftovers, so I’ll get more than one meal sometimes. That’s my version of “grocery shopping”, LOL. 😛
Last week I did cook some smoked sausage in sauerkraut with steamed broccoli, which lasted a couple of meals. Another super easy meal on the stove top.
While at the coffee shop both times, I ordered Ham & Eggs with Chicken Salad on the side. Delicious! Much better than the muffins & pastries I would normally get there, of course. And then there was my low carb Olive Garden meal too, which was GREAT.
Like I said, just keeping it super simple lately. Yesterday I had a piece of leftover grilled chicken with a string cheese for breakfast. Today it was pecans & string cheese with a couple of strawberries. Sometimes I prefer snacking, especially when it’s ridiculously hot out, and other times I like a big filling low carb meal…
