I was able to hug two of my kids on mothers day, my son stayed for bar-b-que on our deck and felt like a normal mothers day, however usually all the adult grandchildren are here and so are spouses and boyfriends, far cry from normal. we live on a small lake the weather was perfect, but COVID 19 lurked in the background and we were all reminded that we as Americans have allowed this to continue…..Fear has taken over our life and families……so I say it is time to step out and live our lives…..

The numbers are rising exponentially in my area, a very small rural farmtown. I have been home since March 12th, and very cautious prior. I feel very fortunate that I already worked from home, and am able to continue staying home – to see how things play out here.
I think it’s tough to make generalizations. There have been many people who have been affected quite dramatically (job loss, family deaths, lifestyle changes, etc) and others who haven’t (like myself, except for not traveling or dining out). There are a lot of people who continued shopping and hanging out with friends & family, and a lot who chose to self isolate or quarantine.
It will be interesting to see how things play out from here with the virus still rampant and moving through the world, especially as highly contagious as it is, and such a silent spreader. It’s certainly not the first plague or pandemic this world has suffered… but definitely a first for me.
Anyway, I’m so glad to hear you had such beautiful weather and such a nice Mother’s Day. π xo Here’s to better times ahead!

Thank you so much! Iβm with you… Iβd much rather get more chocolate than pay shipping! I never pay shipping if I donβt have to! Iβve followed you for a few years and actually ate low carb for quite some time but slowly gave it up. I tried another weight loss program and it did work (for me) for the most part but I just canβt seem to lose the last 15 lbs, Iβve become bored with the foods, and Iβm still always a little bloated. Iβve never felt βthinβ like when eating low carb. So I started again yesterday. Iβm going back through all your post writing down ideas, discount codes, and meals. I love that you eat so simple!

I have a Braums close to me that has low carb bread although I havenβt paid too much attention to it so not sure the carb count but plan to check it out today and Iβm putting in a Walmart pick up grocery order (we donβt have delivery here) for today to get a few things for meals I can repeat. I like something sweet now and then too, and having things on hand that are GREAT is exactly what keeps me on track.
I know exactly what you mean about the bloat. I call it “keto lean” – that feeling you get from eating super low carb and being in ketosis. It’s because it’s a natural diuretic so you don’t have that squishy puffiness all over anymore. π
I am LOVING the grocery pickup option! I may never go back in a store again, lol – between that and online ordering, I am saving tons of time and money.
On that low carb bread, if you check it out… see if it has a very high fiber count – and if one of the main ingredients is chicory root or chicory root fiber. That’s an ingredient that makes me VERY bloated and feel really lethargic… so I avoid it in high amounts, like in some of the low carb breads popping up in stores now.
There are a lot of easy ways to make low carb bread at home with super simple ingredients. So that’s an option too. I made a loaf bread out of macadamia butter, and have a drop biscuit recipe I love too!

I had no idea about the bread! I will definitely check that before buying! I seen your drop biscuit recipe and will definitely be making those. I love that you add low carb veggies in whenever you can. Iβm making me a list right now of every fast food place/restaurant we order from and what to order so Iβm not completely thrown off when we randomly stop somewhere. Luckily we have a Carlβs Jr. here and love they wrap everything in lettuce when asked (and donβt act all weird about it!) lol.

Spinach is my favorite vegetable to work into almost any recipe: eggs, quiche cups, sausage balls, hamburger steaks, bread, you name it!
It’s also one of the top foods for boosting your immune system, which is pretty important right now. π

I wish I could post a picture of this bread but it has 16 carbs for 2 slices and 9 grams of fiber. No chicory root in the ingredient list so hopefully it taste good and doesnβt have any of those hidden ingredients to watch out for. Itβs only $1.79 a loaf so I HAD to buy it lol
