Itโs been a few days since my last update, so I wanted to share what Iโve been eating for the last two days โ plus my MyFitnessPal logs so you can see ideas & examples.
I also want to say THANK YOU for the awesome discussion on Mindset, Motivation & Goals last weekendโฆ Iโm back in a groove, on a roll, and feeling fabulous!!:)
That said, this week has been SUPER busy because Iโve been crazy focused on my goals and blasting through projects โ so Iโve been eating super simple & easy low carb meals, that are also delicious.:)
Speaking of delicious, the buttery soft Peanut Butter Keto Kookies are back in stock today! ๐
Our coupon code is: LOWCARBTRAVELER โฅ
I hope they havenโt sold out again by the time you read this! ๐
In my last low carb food diary I shared Saturdayโs meals & macros, so I have some catching up to do. For now, hereโs what Iโve had hte last two days โ on Wednesday and Thursday:
Thursdayโs Low Carb Meals
Work started early and my schedule was full, so I made an easy low carb breakfast with simple whole foods:
1/4 cup Daisy brand cottage cheese, 18 grams of blueberries and 30 grams of pecan halves. I mixed it all together like cereal.:)
I had a โworking lunchโ so I grabbed a quick high fat calorie-dense snack: a serving of Pili Nuts and colby jack cheese off the block.
By the time I sat down for dinner it was late, and I was famished! ๐
I ordered deliver from a local bistro: a half pound hamburger steak with sauteed vegetables โ plus a side caesar salad without the croutons (with ranch dressing instead).
This normally ends up being to meals for me, but I finished it ALL โ except for maybe half the romaine lettuce. Because as I was eating the first half of it, all I could think about was the ecoli romaine recall, lol.

Wednesdayโs Low Carb Meals
I had an amazingly delicious breakfast on Wednesday morning. I basically just threw together several of my favorite low carb foods on one plate so I could get straight to workโฆ
Itโs cream cheese, pecan halves, peanut butter, strawberries & blueberries.
Then I topped it all with a ChocZero white chocolate dipping cup. ๐
YUM! ๐ โฅ
I ate that breakfast throughout the morning and into lunch at my desk while I was working, then had a late lunch / early dinner as my second and only other meal on Wednesday.
I made sausage & cheesy scrambled eggs:
This is the Smithfield brand sausage I told you about in my last food diary thatโs zero carbs and the fewest ingredients Iโve EVER seen in any sausage. Itโs also frozen, so super convenient for quick low carb meals. ๐

It looks like the rain is finally going to let up here in Tennessee and give us a few pretty days to enjoy! Iโm anxious to get out for a few good walks with Slim this weekend (my great dane), and if all goes well with work projectsโฆ get in a good hike too. ๐
How are things going with you this week?
Leave a comment and letโs chat!:)

I love all your ideas, but I cant pay $30 for 10 cookies! Really thats crazy. Cant they lower there prices?? Most people cant afford those prices. Low carb and gluten free foods are outrageous in price. Just not fairโค
Hi Deb! Actually itโs 20 cookies โ itโs 10 packs of two. Thatโs still not โcheapโ but better than you thought at least. ๐ I donโt eat these as cookies or snacks, by the way โ but usually make a meal out of them. And of course donโt eat them daily โ so that makes it worth having them as a treat.
For example Iโll top them with kosher cream cheese (lower in carbs) and sliced strawberries & blueberries โ and have them for breakfast. Which is absolutely delicious! Or put peanut butter (or cream cheese) between them for a quick โcookie sandwichโ that will hold you over for a nice while. ๐
Where did you find the Smithfield Sausage? Iโm in Murfreesboro and havenโt been able ti find it around here.
Hi Susan ๐
Iโm only an hour away from you and am in your area now and then. Iโll be hosting another meetup near you soon so it would be great to meet!
I found this at a little locally owned grocery store, but Iโm betting Smithfield has a store locator on their site. Nope โ I just checked! Hmm. It looks like Wal-Mart also carries it: https://www.walmart.com/ip/Smithfield-Fully-Cooked-Pork-Sausage-Patties-Hometown-Original-24-0-OZ/172445609
I checked my zip code (37128) on the Walmart site and it says itโs not available within 50 miles. Bummer! Would love to join the next meet-up! Will you post on your blog when it is scheduled?
Yes, absolutely. ๐
Check shoprite and publix โ a few people on Instagram said they found them at those stores: https://www.instagram.com/p/Bh4TZxHhr7F/?taken-by=lowcarbtraveler
thanks so much for all your information and help โ I appreciate it Iโve started again and hope to make it a way a life from now on โ
Do you ever come to NJ
Hi Barbara,
Iโm so glad to hear youโre back on board!
I travel all over, so I never know where Iโll end up. I do host low carb meetups on most of my trips, so Iโll make it a point to do that if Iโm ever going to be in NJ!
I always post the details & invites here on my blog, so make sure youโre signed up to get notified by email of new updates. ๐
Hi Terry. Iโm Sharon and I live in La Jolla, California. I am going to be in the Nashville area May 17 through May 20 and thought perhaps we could meet for a keto meal. I would love to meet you and we can share our low carb journeys. Everyoneโs story is so fascinating. Hope to hear from you.
I agree, Sharon โ I have so enjoyed everyone Iโve met so far! There are a few of us talking about putting together a Nashville keto meetup in May so that would be perfect timing! Iโll see what dates they have in mind and post an update here on the blog if we can get something scheduled. ๐ Looking forward to it!
If youโre on Facebook, you can also message me directly through my Page there at http://www.facebook.com/lowcarbtraveler so we can make plans. *cheers*
