We got in late Sunday night from a whirlwind road trip to North Carolina and back. Fortunately my daughter has her driving permit now, so she did most of the driving (total of around 14 hours round trip). I just kicked back and did some reading and snacking. 🙂
We had an awesome time, and met up with my son – who is living in NC now – for some great eats.
There’s nothing like restaurants and room service all weekend! Especially for a woman who doesn’t care to be stuck in the kitchen anyway 😉 LOL. Speaking of, I managed to go the entire day yesterday (my first day back home) without cooking a single thing. Yay me! haha
That’s one of the things I love most about my diet. Eating low carb on the go is easy, whether you’re traveling or just busy between home and work. And I’m usually one or the other.
Yesterday I grabbed a Low Carb Breakfast Bowl from Hardee’s while I was running errands, and just ate that in the car. For lunch I just snacked on some nuts & cheese here at the computer because I was busy catching up on some work. And, um, my refrigerator looks like a bachelor lives here instead of a 38 year old woman – LOL. Seriously, there’s nothing in there but water and diet coke and some condiments. And cheese of course.
We had an early dinner when my daughter came in from school – sometime between 3 and 4 o’clock.
We did Carside To-Go from Applebee’s (which is one of only a very few restaurants here in this small middle of nowhere town!) and I had the classic bone-in wings which are about 6 net carbs. Delicious!!
After dinner, and a little break to let our food settle, we did the “20 Minute Express Workout” on the Zumba DVD. Then we did Yoga after that to cool off and stretch a little.
Zumba was really fun, by the way. And funny, because neither of us can move that way (yet? LOL) but we’re committed to “shaking it” anyway. 😛
We did manage to hit the gym at our hotel over the weekend too – once. But otherwise I just kept eating low carb through the entire trip, and loved that I came home weighing less! Especially nice after being on a bit of a plateau lately.
Eating low carb on the go is actually a lot easier than eating low carb at home – in my opinion, anyway. Everything tastes better when someone else is cooking it, right? I happen to think so. 😉 Not to mention that you get exactly what you order, which can be a lot safer than reaching into the cabinets or refrigerator and accidentally (heh!) munching on this or that all day long…
We had some GREAT eats on the trip, by the way. It’s actually amazing that I ate as much food as I did, and still came home weighing less. Seriously.

My second favorite meal: Steak & Salmon with veggies at Shogun Hibachi Grill (hold the fried rice!)
In addition to all the great meals out, I had packed low carb snacks for the trip – nuts, Quest Bars, sugar free chocolates, etc. And Splenda packets, which I was glad I took along because there were several times there was nothing else to put in my coffee except sugar.
We had an awesome trip, and a super fun time together. It was great to catch up with my son, who just turned 20 last week. It’s crazy how time flies! Anyway, now that I’m back home it’s time to stock up that pathetic empty refrigerator and get back to at least a little low carb cooking. Maybe. 😉

…sometimes. Maybe even most of the time. But my wife and I went on an excursion to a mountaintop hotel in Norway about 10 years ago (just after we started our low-carb journey) where the ONLY ‘food’ items available were made of various combinations of wheat flour and sugar. Fortunately, Georgene planned ahead and had a low-car bar packed in her purse. We split that and had some tea, coffee, and water while watching everyone else guzzle down the carbs. I mentioned that in my Low-Carb Journey Part III, but did not go into any detail, since I was making the point that low-carb junk food is JUNK, but might be worth having in rare circumstances like this.
Nowadays, in that same situation, I would simply skip that meal. In fact, I’m currently working on breaking my current stall, and one of the things I’m trying is a partial fast (only one small meal) one day per week.

I can relate to that, and discussed it in this recent post. It’s definitely easier when you get to make your own restaurant choices vs being in a “food controlled environment” like a conference or catered dinner. But when I’m on the go on my own, eating low carb is super easy.
