I hope you’ve had a great week!
I haven’t felt that great this week. The heat index is sky high here in Tennessee making it miserable to be outside, and my allergies are on full tilt to boot.
I’ve been taking it easy and eating super simple meals the last few days.
You can see what I ate on Saturday and then what I ate on Sunday & Monday in my last two food diaries, and below is what I’ve been eating the last few days.

I made breakfast out of some of the low carb foods in the box this morning. Specifically the FatSnax Cookies – with cream cheese between them.:) And the Keto Brownie too:
The Chocolate Almond Crunch Keto Brownie was better than I expected! It has NO sugar alcohol, which I love. Very nice rich cocoa flavor. 🙂
Here’s what I ate on Tuesday…
Breakfast was my favorite “low carb cereal” of pecans, Daisy cottage cheese & strawberries. This is my easy go-to because it doesn’t require any cooking, and it has GREAT macros. 🙂
For lunch I had my other “usual” of cheesy eggs.
I’m such a creature of habit, lol…
For dinner I decided to get out and grab a low carb style Frisco Burger from Hardee’s in a lettuce wrap.
For some crazy reason I started having cravings sitting there in the drive-thru. It didn’t help that it was a long wait 😛 lol. I resisted the urge to order fries… and had some pecans dipped in cream cheese with my burger instead:
That was a close call! haha
I also had a serving of Halo Top low carb ice cream that night. 🙂 Yum!
I closed out Tuesday with 22 net carbs.
Here’s what I ate on Wednesday…
I had cheesy eggs for breakfast again, but it was very late morning – closer to lunch. So I had a VERY late lunch / early dinner that afternoon.
I ended up getting a Farmhouse Turkey Salad from Arby’s, plus a Double Roast Beef sandwich – and ditched the bun:
I only put half the roast beef on the salad, and I still had to make two meals out of it. I just didn’t have much of an appetite on Tuesday. It was good though!
I also had a serving of Halo Top low carb ice cream again that night, and I still closed out Wednesday with exactly 20 net carbs.
Here’s what I ate on Thursday…
I had my usual “cereal” for breakfast at my desk.
It’s 1/2 cup pecans, 1/4 cup Daisy brand cottage cheese and 4 small diced strawberries – which comes to 5 net carbs and 85% healthy fat.
Later that morning I had a delicious LCHF snack of raw pecans and Lily’s Sugar Free Chocolate dipped in peanut butter. 🙂
For dinner I finished the other half of the Arby’s roast beef, topped with two fried eggs. That was actually delicious. 🙂
I also snacked on a serving of Pili Nuts later that night. 🙂
I closed out Thursday with 22 net carbs.
All three days carb counts include my coffee creamer too. I use Coffee-Mate Sugar Free Powdered Hazelnut Creamer, which is 1 carb per TBSP.
Speaking of, I noticed today that I just passed a cool MyFitnessPal Milestone – a 600 day streak of logging my meals! 🙂
I didn’t include screenshots of my MFP diaries this time because I was in a hurry, so my apologies. But at least you can see what I’ve been eating the last few days. Mostly easy low carb foods, and just keeping it simple – given I’m feeling kinda blah and worn down.
And on that note, I cooked some broccoli & chicken for dinner tonight.
I figured I could use something GREEN. 😉
Although it was a royal pain to cook and do dishes (lol). Fortunately you can get by without much of that if you have to, as you can see from my easy meals above!

So, do you carry your pecans and creme cheese with you went out and about? I was just wondering how you happened to have that with you while going through the drive thru
Or did you wait and eat that at home
I could see carrying the pecans with you but surely the cream cheese would melt under these intensely hot days unless you carry a thermal bag with ice
I do that sometimes.
I do miss fries sometimes too. 🙂 you have great will power. 🙂

I was actually out running errands and picked up the burger to bring home and eat – so I just had the pecans & cream cheese with it at home. 🙂
Willpower, yes… although I do still have temptations sometimes. Mostly mental, as I don’t really crave junk food anymore. So when I catch myself thinking about what I cannot have – I remind myself that I also do NOT want to be overweight, miserable and unhappy again.
The mental part is definitely the toughest. But I constantly retrain my old “thought habits” when I catch them pop up again, and think with “the new me” instead. Sometimes I repeat: “happier, healthier, stronger” under my breath, lol. Whatever it takes to power through a brief moment! 😉

Omg. Halo top ice cream is soooo delicious, especially if you leave it at room temperature a while to melt so it’s semi soft. I love love the chocolate almond

My problem with Halo top ice cream is sticking to the 1/2 cup serving. I could eat the entire pint and shamefully, i have done that before…..but not in one sitting but in one day. 🙂 of course, that puts me way over my carb count for the day if i do that but in my mind, i rationalize to myself, that it’s still better than eating a pint of regular ice cream. 🙂 oh how crazy our minds work sometimes. It’s my inner fat person talking to me. How can we stop those insane conversations with ourselves to rationalize our bad eating behaviors. Shhhhheeeersh!!!!
:D. The mind battles are the toughest part of this whole weight loss process imho. 🙂

They truly are. 😛 Like I said above, that’s a constant process for me – but one that is definitely becoming easier and easier the more I practice it!
I agree too about Halo Top. It’s SO good, and really easy to overeat that. I’ve been having 1-2 servings most nights this week, just because I’ve had it in the house, and not only is my weight jumping around again… but I feel kinda icky too. That may not even be the culprit (lack of sleep, new vitamin, all kinds of other things at play) but I decided last night: no more for awhile. 😛
It’s great that we are both so aware of what we’re eating, what we’re doing, why we’re doing it, what we’d rather do instead, how/who we want to be or become. I think that’s the BEST first step toward making such a dramatic lifestyle change. Don’t you agree? 🙂

I totally agree. I see myself in the mirror and i know that i have had a huge transformation but i still have more to lose of course but in my mind…..well that’s a work in progress. I am working on getting my mind to stop thinking like the old me who ate anything and everything it wanted and my body showed it. You are definitely a huge inspiration for me!!!

Do you know of any stores that carry the Lily’s chocolate bars, individually. I love Lily’s brand SF chocolate and it does not bother my tummy like the ones with sugar alcohols.
Walmart sells it bulk online but you have to pay shipping and i do not want to buy a box of it

The only other place I know of, and it’s a great deal, is this variety pack of Lily’s sugar free chocolate bars on Amazon: http://amzn.to/2eEEEJp That way you don’t have to order a whole case of just one flavor. 😉 Otherwise I think some stores do carry them, but I’m not sure which. Whole Foods maybe?

Lily’s chocolate on Amazon is more expensive….about 5.00 per bar. I better stick with Netrition I’d get more for my money. I do not mind buying all one flavor to save money. Lol.

Welcome back! 🙂 You’ll feel SO much better now that you’re back to eating low carb. It will even help with the stress at your new job I imagine. I always find it makes a big difference to have ONE point of total control in my life – and success. Something I *can* be good at / achieve / get positive results & rewards from. 😉 *cheers*

Ok Lynn, I’m starting Day 1 again. Sadly I delayed starting this day 1 because I knew we were going to be out of town this past weekend and didn’t want to deal with it. But the whole time we were gone, for every meal, I thought, if I were LC right now would I be able to stick to the plan with the choices available? And every single time the answer was yes. Even when we stopped at the gas station for snacks, there were still LC options. So there are no excuses. My mentality is the biggest obstacle. Thanks for all your emails, they are very helpful!

I think that’s GREAT, Barb. It sounds like your mind has already been retrained to SEE and seek out low carb options everywhere you go! 🙂 It really is just a mental thing. I mean, you have to eat anyway – so it’s just about WHAT you eat. It’s that simple!
If I go to O’Charley’s for dinner for example, I can order cedar plank salmon with loaded broccoli (loaded like a potato) and a side caesar salad with croutons. Dinner! It’s not different than ordering anything else, it’s delicious, it fills me up, AND it’s healthy and low carb. 🙂

I am so interested in a low carb diet but i am a carb o holic!! Please give me some pointers on beginning a LC way of life. I lost 62 lbs 5 years ago just counting calories but have gained 10 back since i retired. I would love to lose 15 lbs and i want to do it the LC way. Any tips would be greatly appreciated.
