The month of June is Great Outdoors Month, and it also happens to be my birth month. I celebrated my 44th birthday on Wednesday… outdoors. 🙂
I got notification that my Keto Krate shipped today too, so I have a fun “birthday box” to look forward to!

I woke up on my birthday to a drop on the scales, which is always a nice gift!
My weight dropped another pound the next morning. It’s nice to be losing again after going through weird holds & fluctuations with my weight so much lately.
I also noticed I was at a 557 day streak of logging my meals & macros in MyFitnessPal that morning. That made me smile too! 🙂
I’m also on my best “streak” ever of healthy low carb living. 😉 Getting consistent and getting committed to living a healthy, active low carb lifestyle is the best thing I’ve ever done for myself! And that’s exactly what I celebrated on my birthday. 🙂
I spent the day exploring a new waterfall and playing in the woods – getting some great exercise, taking some time off work, and in my happy place: outdoors!
How I Spent My Low Carb Birthday…
I was in an exceptionally good mood from the moment I woke up, and spent some time brainstorming ambitious goals and positive changes for the new year ahead of me.
I had a simple LCHF breakfast of cheesy eggs: just 3 large eggs scrambled in real butter with colby jack cheese.
I threw on some shorts and packed up some low carb snacks, and headed out with Aaron for our hiking adventure. But first he took me to a cool little store on the mountain that he KNEW I’d love: Mooney’s Market and Emporium. 🙂
He was spot on. 😉 It was the coolest little market, quirky and fun with all kinds of healthy foods and fun things to browse!
I stocked up on some healthy low carb goodies, and a few new things to try…
After that we stopped for lunch at a cool little place in Sewanee, TN called Shenanigans. I got a delicious bunless burger (ie: “no bun, please”) smothered in sauteed mushrooms, swiss & cheddar cheeses, and drizzled with mustard & mayo.
🙂 Yum!
Afer lunch we headed up to Morgans Steep to hike down to Bridal Veil Falls – a waterfall about an hour from my house that I’d never seen.
I had a lot of fun with my usual off-trail adventures, exploring and climbing and making good use of “nature’s gym” to turn the hike into a good workout. 🙂
The actual waterfall itself was breathtakingly beautiful!

Very carefully… LOL.
It was such a beautiful work of nature, coming out of the ground and disappearing back into the ground, with no stream before or after. That’s an obvious sign there’s a decent cave system underneath, which I’m aiming to go back and explore!
The area was full of large rock formations too, which provided a great view. 🙂
After hiking to the waterfall and back, we enjoyed a simple low carb picnic back at Morgans Steep with the sun setting over the mountain.
I brought the cheese and pecans from home, and tried the other foods I had picked up at the store earlier:
I saved the Almond Butter packets, and only tried a bite of the dried seaweed, but had plenty to eat with the high fat nuts plus the beef & cheese.

You can see I burned a fair amount of calories on that short little hike. 🙂

It was a full and fun day, and such a beautiful place to hike & explore! 🙂
It was late in the afternoon when we arrived which meant we only had a few hours in the woods, so I’m already anxious to go back and check it out even more.;)
I wish I could share with you just how beautiful it was. Photos truly don’t do it justice. But I did make you a quick video of the Bridal Veil Falls so you could enjoy a little piece of it at least. 🙂
I’m sure you noticed I got Lily’s Sugar Free Chocolate Bars at the store. 🙂
I got the Dark Chocolate Coconut and the Salted Almond Milk Chocolate.
I’d never tried Lily’s Chocolates before, but I hear GREAT things about them all the time – so what better day to try them than my birthday?! 🙂
They were both amazingly delicious!! 🙂
The other thing I picked up that I really LOVED was the NOW Foods Dry Roasted Macadamia Nuts with Sea Salt. Those were (are!) crazy addictive. They’re SO good!!
I’ve never bought Macadamia Nuts before – is this a good price on those??
I’m stepping into a new year… happier, healthier & stronger than I’ve ever been in my life! 🙂 I’m excited about the year ahead too, challenges and all. I have some very ambitious goals to achieve!:)
That’s not to say that my life is perfect, or all happy happy joy joy all the time or anything. I have my share of tears, losses, wishes and wants, and tough moments… and those proverbial smacks in the face that sting like hell. 😛 Overall though my life is good, great even, and I’m excited about making it even better…

The scale is finally moving for me. Yay 136 weigh in and only 10lbs to go. I decided to take it pound by pound and be happy for 1 pound weight lose at a time. That seems to be helping.

Those waterfalls are more treacherous than they look and there are deadly falls every year. I know…I sound like such a mom! But it’s true. You are looking so toned and fit and happy!
