I usually eat VERY simple and rarely EVER cook, but I’ve been trying out some new low carb dishes and foods this week. 🙂
I have lots more to try in the kitchen this week too, like Kickin’ Chicken and also spicy fried mozzarella sticks dipped in organic marinara… so stay tuned for some FOOD FUN.;)
Here’s a photo tour of all my low carb meals & snacks for the last two days, plus my MyFitnessPal diaries too so you can see how I logged those meals…
Monday’s Low Carb Meals
For breakfast I had half cup of pecan halves with 5 (half a serving) Russell Stover Sugar Free Blueberry Bites. WARNING: even half a serving of these “blue bombs” will mess.you.up… lol. It took my tummy 24 HOURS to recover. 😛 They delicious, but seriously dangerous haha.
I eat raw pecans a lot because they are super convenient & portable 🙂 and because they are VERY low carb / high fat – so they’re filling!
For lunch I had the leftover Low Carb Spaghetti I made the night before. I forgot how GREAT pasta is the next day, left over. 🙂 YUM.
The meatballs are the BEST… I have to make more of those! You can find the meatball recipe here.
I used Low Carb Rotini and Organic Low Carb Tomato Basil Sauce.
My low carb dinner last night was even more delicious!! 🙂
I had more of the Parmesan Spinach Meatballs, this time over sautéed broccoli slaw, with a little leftover low carb pasta mixed in. I warmed up the slaw & noodles with a tbsp of real butter. YUM!
You can find Broccoli Slaw in the produce section near the bagged salads. I usually find it at Kroger or Wal-Mart.
Later that night I decided to dig around and find some chocolate… and discovered this ZERO CARB bar by Innocent Chocolate that I got in a recent Keto Krate box.
ZERO carbs. Is that some kind of magic?! 🙂 lol… It’s hard, but really good. A nice rich dark chocolate… Have you tried it?? We’re discussing it here…

Tuesday’s Low Carb Meals
I decided to make Low Carb Blueberry Pancakes for breakfast. 🙂
The best mix for low carb pancakes or waffles is New Hope Mills Low Carb Pancake Mix. It has GREAT ingredients, a good source of protein, and the consistency is PERFECT. It makes nice fluffy pancakes that crisp up perfectly on the outside. 🙂
The syrup I use is Nature’s Hollow Sugar Free Maple Syrup. Delicious!
For lunch I finished off the meatballs, dipped in a spicy Chipotle Lime Mayo. 🙂
Later in the afternoon I decided to finish off the Innocent Chocolate bar with some raw pecan halves.
I had a late nap, and a long day, so my late dinner (literally around 10pm) was a quick grab from Arby’s – the Grand Turkey Club (in a bowl instead of on a bun) plus the roast beef off a regular sandwich. I just tossed the bun from that one.

I’m anxious to try the spicy chicken!
I may also make some spicy cheese sticks to dip in the Organic Marinara. I got that idea here. You just cut mozzarella string cheese sticks in half, dip in egg or mayo, roll in finely shredded parmesan, dip & roll again, then fry for a minute or two. Fun!
I have more low carb pasta dishes to try too, since Netrition was cool enough to send me some to review for you. I discovered I really like it buttered & salted. 🙂 So next I’m going to try buttered penne pasta topped with crisp roasted vegetables. And also a FUN Thai Shrimp pasta dish!
But I won’t be cooking tomorrow… because I’m off to go HIKING. 🙂 🙂

It’s the free version of MyFitnessPal with a free plugin. This is how I have it set up: http://www.travelinglowcarb.com/4448/myfitnesspal-hack/ It only works online in Firefox or Chrome browsers, not on the mobile or tablet app. I still use the app though, to put in foods on the go.
