Below are all of my low carb meals for the last two days, plus my MyFitnessPal food diaries so you can see how I logged them. These meals are proof at how EASY (and simple) eating low carb can be… especially on busy days. 😉
Sunday’s Low Carb Meals:
I didn’t feel like making breakfast, or eating even, but I finally had a Peanut Butter Granola Atkins bar and 1/4 cup (30 grams) of pecans.
For lunch: 3 eggs scrambled with colby jack cheese in real butter.
For dinner I made my favorite “low carb cereal” with 1/2 cup pecans, 1/4 cup Daisy Brand cottage cheese, 4 small diced strawberries and 17.5 grams of blueberries.
Since I had low carb bread from my recent Netrition order, I decided to make a Grilled Chicken & Cheese sandwich later that night. 🙂 I used Oscar Mayer Deli Fresh Rotisserie Chicken and Borden Natural colby jack cheese slices.
I used the Low Carb Everything Bread which is 1 net carb per slice, and a full tbsp of butter on each side. 🙂 YUM!

Monday’s Low Carb Meals:
I made Low Carb Blueberry Pancakes for breakfast. I used lots of butter so they were crisp, fluffy, buttery, delicious and… PERFECT. 🙂
I used New Hope Mills Low Carb Pancake/Waffle Mix and the Nature’s Hollow Sugar Free Maple Syrup.
The pancakes are 4.5 net carbs per serving, fried in and topped with real butter. I added the blueberries (35 grams) and it still only came out to 9 net carbs for 6 big, thick & fluffy pancakes (2 servings).
For lunch I had the second serving. I just popped them into the toaster and they came out crisp and just as great as the first plate!

I was tired last night, so I made a quick ham & cheese sandwich with the Low Carb Everything Bread. I toasted the bread first. A sandwich is a nice treat! 🙂

I just realized I had an extra TBSP of butter on that second plate of pancakes, which would add 100 calories and slightly higher fat… but it’s close at least.:)
My weight is creeping back down after fluctuating a bit. I weighed in at 137.8 pounds this morning. But more interesting is that my body shape must be changing, because I FEEL leaner – and my clothes aren’t fitting the same at all. 😛
I took measurements and did a full body composition, so I’ll compare all that this week when I have a little more time. But I feel GREAT, which is all that matters. 😉

Good morning, I did not lose this week, not really sure why. However I did have what was listed as a 3 carb slice of cheese 2 nights and then upon entering recipe in FP, discovered it was 9 net carbs per slice:( so I went over my carbs several days, in addition I can’t seem to eat enough protein. I am eating eggs, meats, cottage cheese. Maybe more vegetables than meat? Well have a happy holiday to everyone.

Hi Sherry,
It’s common to see a “hold” or even slight fluctuations during weeks 2 and/or 3. That’s totally normal. It’s just your body adjusting to the initial weight loss.
The cheese – was it 3 carbs according to your package? If so, make sure you find an entry in MyFitnessPal that matches your own label. There are a lot of things in MFP that have been entered wrong, so you just have to find an accurate listing.
The same goes for the rest of your foods. If a food doesn’t have a label, I use this site to look it up (like fresh produce for example): https://ndb.nal.usda.gov/ndb/search
You want your protein to be 25% of your total daily calories at the most. How much protein are you eating? You have to go by ratios or percentages instead of grams, because some proteins are also fats – like eggs which are 50/50 protein and fat, or meats like salmon and ribeye.

Only -.2 this week but that’s ok…I know why and I have to keep working on my issues. Getting another bout of depresso Amy coming on but I’ll fight it and try to remember all that is good and all that I can control. Thanksgiving is always a happy but tough time for me. 10 years this year since my dad was killed in a car accident the day after Thanksgiving. The first Thanksgiving that I missed that side of my families celebration was that year and I’ll never forget that. We must be thankful for what is good and for the good times and memories. I get to see a good friend of mine who will be home from Missouri on Friday. I get to see my brother and my nephews. I get to eat healthy and still have a great meal…I’m planning on having: turkey, ham, deviled eggs, green beans, and 7 layer salad. That sounds pretty good to me! Who needs the other junk that makes everyone so tired and lazy?? π Thanks for keeping us all going Lynn. We are so thankful for YOU! I hope you’re doing well. -4.8 since Nov 1st so I can’t complain too much. Can’t wait to get to 153 and under and stick to that…then I can finally say I’m 20 lbs down for the year π

OH, and I finally got some Halo Top Ice Cream. Mocha and Birthday Cake. The Mocha was good but omg…the Birthday Cake. I am glad I stopped myself before even having 1/4 of the container. Sooooo good!

yes, Julie. I freeze mine all the time and the slices just pop off as you need it. I also love the halo ice cream. Birthday Cake is a favorite of mine too.

Hi Lynn, I am sad to say I have not lost anything this challenge. I have not been logging , so I started today and finally set my fitness pal up for net carbs. I don’t know why I had trouble doing that in the past, lol. It was easy today.
I am just eating to much .I cancelled my keto krate because I was enjoying too many of the goodies that I normally do not eat. I may sign up again once I lose more weight. now, I am back to the simple foods.

Tracking will be the key. You’ll easily figure out the culprit, and you can make sure your macros are on target now. π I look forward to hearing how big a difference that makes!
Just do 20 net carbs max, 70% fat minimum, and ignore everything else in MFP for now. Keep me posted! π

Lynn, i wanted you to know that you have been a tremendous help to me! I started trying to watch my diet in August when i had a week of nose bleeds and went to my PCP and discovered that it was due to the ibuprofen I was taking for joint pain, i had several abnormal labs and was at an all time high weight of 219lbs! I didnt start tracking with my fitness pal until october. I had no clue how many carbs I was eating until then! I have lost over 30lbs since august. It took a couple of months to get into a rheumatologist, and im happy to say that my abnormal labs had become normal. I feel strongly that it is due to cutting out bread, pasta and sugar. I ordered the low carb bread from netrition last week…Im in heaven!

I tried the New Hope Mills Low Carb Pancake/Waffle Mix and the Natureβs Hollow Sugar Free Maple Syrup, while delicious, My Fitness Pal keeps showing 10 carbs for the syrup. How did you get yours to 1 carb?

Hi Irene π I found an entry that already had the sugar alcohol subtracted. You can use the one in my MFP diary. Just search “nature’s hollow maple net” in MFP to find it. π
