Below are my easy low carb meals for two full days, along with my MyFitnessPal nutrition diaries so you can see how I logged them.
I woke up this morning to a big surprise: more weight loss! 🙂
I am now only 136.6 pounds. That was totally unexpected, as I’ve been focused more on building muscle than on losing more weight at this point… but it definitely made me smile. 🙂
I’ll share my food diary with you, and I would love to hear an update from you as well. It’s the weekend and we have our next weigh-in on Monday, so I would love to hear how things are going for you this weekend…
Thursday’s Low Carb Meals:
I had my favorite healthy low carb breakfast: 1/2 cup pecans, 1/4 cup Daisy brand cottage cheese, 4 small diced strawberries and 17.5 grams of blueberries.
For lunch I had spinach & sausage with fried eggs on top.
It’s just regular pork sausage (Tennessee Pride brand) with frozen spinach cooked together. It makes a great combination!
It was a lot of food actually, so I made two meals out of that and finished the second half for dinner.
Later in the evening I had a filling snack of pecan halves: 1/2 cup, 60 grams. I always weigh out my nuts because measuring them is never accurate.
I use an Ozeri Kitchen Scale – it’s inexpensive, small & convenient. My favorite & most-used kitchen gadget! (It comes in lots of cool colors too)
I had 6 waters (48 ounces) and 5 coffees…

Friday’s Low Carb Meals:
I had my favorite “low carb cereal” for breakfast again:
For lunch I decided to make bacon. 🙂
I cooked it in the oven by lining a baking sheet with foil, laying out the strips and baking it at 400 degrees until crisp. It comes out perfect that way!
I made beautiful Blueberry Crepes to go with the bacon. I usually add pecan pieces to my crepes, but this time I left out the pecans and doubled the blueberries.
The recipe I use makes 6 small crepes, so I had 3 for lunch with 2 slices of bacon. Then I had the other 3 for dinner with 3 slices of bacon.
I wrapped the bacon in the crepes and ate them like sandwiches. YUM!
I was up really late, so I ate again around midnight: 2 Oscar Mayer Smokies links (zero carbs) dipped in mustard. Just something quick & easy.;)

I was really surprised to drop another pound this week! I’m currently wearing a size 8 and content with my size, although I do still have some body fat around the middle (hips & waist) to lose.
I’m not sure yet what my “ideal weight” will be, but I’ll let my body figure that out as I continue to eat healthy and work toward getting in the best shape of my life.
I got in some great hikes & walks this week, so yesterday I did a home workout focusing on my core and arms. I’m really pleased that I can pull 100 reps on my Ab Carver Pro now! I love that thing. 🙂
I’ve had a crazy week with a lot of ups & downs, but I stuck to healthy meals and exercise. That alone is a bigger achievement even than the weight loss for me.
I haven’t decided yet what I’ll do, cook or eat for the weekend. The weather has cooled off dramatically here in Tennessee though, so I know my weekend will include some fun walks with my Great Dane!

You continue to inspire me. Things sre going well for me. No loss for 3 days but I’m 80 lbs down since April so I’m not too concerned. I’ve been cycling my calories, some low days some high days. Yesterday was super busy and I didn’t make time to eat enough. I had a hot italian sausage with cheese for lunch. Date night for dinner. We went to a place locally my husband heard about. Omg they were not my kind of people or my kind of place. It was a total hole in the wall. I had a bacon cheeseburger no bun of course with mayo. It was fake frozen grey meat yuck. I had a garden salad too. Took 2 bites. Tasted funny. Thats all I had yesterday other than a coke zero and water. Today will be better. I’m about to get up and start a Mississippi roast. What’s your thoughts on it? I try to keep things pretty simple. I will probably have green beans with it with a little ranch on top.

Friday I had 2 eggs friend in butter with 4 oz’s of new your strip left over from the night before. I wasn’t hungry at lunch so I had 1 oz of salted almonds.
Dinner was a juicy chicken breast with romaine lettuce and full fat ranch and some cheddar. I had 4 oz’s of cheesecake fluff with redi whip to bring my fats up.
I’ve already had breakfast this morning which consisted of 2 eggs scrambled in butter with cheddar cheese and 3 pieces of bacon.
I’m still sore so no exercise this morning.
I’ve had my ups and down as well.

You talked the other day about why you ate more sausage than bacon. If you are baking your bacon, you are half way to having it on hand when you need it. I bake my bacon, which makes it nice flat and perfectly done. Then I spread it out on a plate covered with paper towel to drain, and pop the plate in the freezer. After I eat my meal, I pull off the paper towel and bag the frozen bacon. Put it back in the freezer and I can always pull as much out when I want it.It defrosts quickly and a quick turn in the cooking pan warms it.

That’s my favorite way to make it – in the oven. It’s so EASY, and no grease popping skillet flipping lol. I liked the Hormel thick cut bacon – that brand was really good. I’m off to heat some up with eggs. Ray’s comment above got me craving that. π

I love sausage and spinach together…never thought I would but it’s really delicious. Lynn I’m so jealous that you are able to get out and hike like you do in such beautiful places. I walk and bike at the park…. BORING….but you’ve inspired me to find places to hike, even if it means driving to get there. I have to get outside for exercise everyday…love the alone/thinking time.
Yesterday I had two Nathan hot dogs for lunch and an Atkins pecan delight candy then last night we went to Longhorns steakhouse which is our favorite. They have amazing lc choices. I had the parmesan crusted chicken, steamed broccoli, and house salad minus the croutons. It’s so much food that I can barely eat half but that just means I’ll have the rest today for lunch.
Tonight I have a birthday party I’m cooking for including the cake and tomorrow another get together at church. I’m cooking for that also, including another birthday cake! I’ve already planned what I will eat before both parties so I won’t be tempted.
Yesterday I started my own challenge….I’m slowly giving up artificial sweetners and drinking only lemon water throughout the day. This will be very difficult as I have held on to that little bit of sweet taste and I want to get over that completely.
Btw, you look amazing….not just thin but FIT.

Hi Marti! I have to drive quite a bit to get to these places I hike. Both of my hikes this week were almost an hour drive, so close to 2 hours round trip. But SO worth it! And I do core workouts in the car while I’m driving. π
I love my walks downtown and around my local area with Slim too, but I also get bored with the same paths. Sometimes Slim and I mix up our path a bit, but it’s definitely nice to get out and see more. I really enjoyed taking him to Lost Creek Falls recently!
Way to go on your personal challenge! I hardly eat sweets or snacks anymore, not like I used to for sure. My next big challenge will be to give up my beloved sugar free coffee creamer. Maybe, lol. I failed miserably at it the last time I tried that. π haha *cheers*

Things are going great! No loss this week but that’s OK. My weight has remained the same! I’ve lost 23 lbs since Sept 17th. I’m still remaining positive and practicing yoga 3-4 times a week.

I know earlier in the week I posted that I was wondering why I was even doing this, and had lost sight of my goal of just being consistent. I decided to lay off myself, allow myself to eat what I want (even if it was bad), and try to reset my brain. I didn’t weigh myself, and I also found that more often than not, I chose LCHF food choices. OK…except for the peanut M&M binge. Yesterday I put on some jeans that are usually so tight, and they were a little bit loose! That was exciting! So maybe overtime I read that people are losing inches and not pounds, I should believe it?! Duh! What a mental journey this is…At least I’m back to trying…thats all I can hope for! Have an awesome weekend…

It’s worth it. π On Monday I got up at 2am to get my work done so I could go play outside (hike) the rest of the day, lol. I work from home, so that helps me be able to rearrange my schedule – and get out on weekdays when the trails are less crowded. I like the other hikers though, so I may try a weekend soon!
I’m glad you worked out your stress. Sometimes it takes a step back to get the motivation back. I get that. The biggest part of this journey for me has been mental, and overcoming those things has also felt like my biggest achievement. π *cheers*

For the last week I’ve been off track for reasons that I really couldn’t control. Unfortunately I’ve just had to eat what was available and that wasn’t low carb options. π So today I’m down on myself and afraid I’ve regained all I’ve lost which I know is silly. Tomorrow I’m getting back to it since I’m able to now. I was gonna plan to eat a lot of eggs and meat because they’re filling and low carb. Is that a good idea or not??
Also I can’t seem to get you off my mind. I find myself praying for you and your situation. This while Joe thing has my heart broken for you…I want you to be happy. Hope that doesn’t sound silly since I don’t technically know you personally. But I do have much compassion for you. What’s meant to be will be, as cliche as that may sound. I pray for your day and your coming days. I pray for your heartache. I pray for your happiness. I hope maybe this helps in some way and you feel some peace and comfort today. π

I would give yourself plenty of variety and enjoyment, keeping it at 20 net carbs max and 70% minimum. Don’t try to be too strict, or limit your food choices – that messes with your head.;)
Thank you so much for your kind words and prayers too. It does help – I appreciate it more than I can express. I’m still really concerned about being alone while I see how this new medication is going to affect me, and feel very alone here now. I have taken it for 11 days now, I think it could take up to 2 weeks to have an effect? Ugh. So far I still just feel… lost. My scales keep dropping too, which is freaking me out. Like I’m losing even more of myself. I just want to curl up and hang on – and not lose anything else, in my life or of myself.
I’m fine. Going through the motions, forcing myself to eat, forcing myself to walk (or just move, period). This too shall pass… I’m planning two big adventures this week. I’m going to keep moving and keep pushing myself forward, until it becomes natural again.

I think your site is going to be very helpful for me! I’ve spent the last 5 days reading so many different sites and it seems right now that the more I read the more confused I get, but I am determined NOT to give up! I noticed you like hazelnut coffee creamer. I’m use to drinking flavored coffee only and hazelnut is one of my favorites. Is the creamer you use the lowest in carbs available? I noticed that the creamer alone used up 6 of your carbs. Also I just have to find things besides eggs to eat for breakfast because although I like eggs some, I can’t say that I love them and I’m already growing tired of eating them every day for breakfast. I’m an going to try your pecan cereal and also your blueberry pancakes/crepes but since I’ve only just begun (only 5 days of this WOE) can I go ahead and allow myself to eat the cereal and the crepes? I though a good custard should be almost legal to eat but I can’t find a simple recipe for custard? Is is something that you have made and if so would you share your recipe. Thank you for any help you can offer me; as at this stage of the game I need all that I can get!

I keep it super simple: 20 net carbs max, 70% fat minimum. That’s it!
I use the powdered creamer. It’s Coffee-Mate hazelnut sugar free powdered creamer, and it’s 1 carb per TBSP. I drink way too much coffee lol. I use 1 tbsp in a mug, which is a large mug and probably 16-18 ounces of coffee.
The hazelnut is lowest in carbs yes, lower than the liquid too – and I can carry it with me on road trips, or just have it in the car if I run through somewhere for a coffee. So it’s convenient too! But yeah, the other flavors were icky to me. π
I’ve never made custard, but the crepes & “cereal” are both totally fine to enjoy now. They have great macros (high fat, and real food) so yes – they’re great!
