Join us for the Fall 2016 Low Carb Challenge!
After all that talk about weight loss stalls & frustrations in my last update, I woke up DOWN a pound the next day!
I weighed an even 139 pounds on Thursday morning. 🙂 Yay!
Sometimes it’s just a matter of patience, and sticking it out through the slow periods. That’s usually just your body adjusting anyway. Not always, but usually!
I’ve discovered that’s normal with my own weight loss trend – to lose, then have long “hold” periods before I lose again. The best thing to do is just stay consistent and stick it out!
If you missed that post, here’s what we talked about:
* Weight loss frustrations
* Feeling deprived on a diet vs feeling in control
* SLOW weight loss, stalls & plateaus
* Motivation, discouragement & mindset
I also shared two days worth of meals, including two fabulous low carb restaurant choices, and a new workout & new workout clothes. 🙂
Here’s the link if you missed it: Low Carb Inspiration.
I haven’t really eaten anything exciting the last couple of days. I’m not a whiz in the kitchen or anything, which I’m sure you’ve figured out by now (lol) so sometimes I just eat simple and eat whatever is easiest – especially when I’m super busy with work, which is definitely the case this week!
Wednesday’s Low Carb Meals
I had my favorite low carb breakfast. 🙂
It’s 1/2 cup pecans, 1/4 cup Daisy brand cottage cheese, 4 small diced strawberries and 17.5 grams of blueberries. (6 net carbs and 85% healthy fat)
For lunch I had steak & veggie leftovers from dinner out the other night. There wasn’t much leftover, but it was just enough to make a quick meal to hold me over…
I made a very cheese sausage & egg scramble for dinner.
I used 3 large eggs, 1 ounce of colby jack cheese and leftover sausage. Eggs are .4 carbs each, so the whole meal was only 1.2 carbs.
^ I actually made two meals out of that!
Here’s My MyFitnessPal Diary for Wednesday:

Thursday’s Low Carb Meals
I eat this same thing almost every morning. It never gets old! 🙂
It’s 1/2 cup pecans, 1/4 cup Daisy brand cottage cheese, 4 small diced strawberries and 17.5 grams of blueberries = 6 net carbs and 85% healthy fat.
Around lunchtime I was super busy with work, so I just grabbed some Oscar Mayer sliced turkey and Borden natural colby jack cheese and made a couple of rollups to hold me over…
Later in the afternoon Joe came by and brought me a chili from Wendy’s. 🙂
A small chili from Wendy’s is 15 net carbs. Actually someone on Instagram said it was only 12 – I need to look that up again. That’s high for me either way, but it’s always a nice treat!
I got hungry before I went to bed, so I had my “nuts & berries cereal” again – minus the blueberries. It’s just so EASY, and healthy of course, so I keep stocked up on those ingredients for a fast meal anytime…
Here’s My MyFitnessPal Diary for Thursday:
That chili really threw me over my “20 net carbs” for the day, but it totally hit the spot in a pinch during a hungry hour! 🙂 lol…

This happened Wednesday night, at 1:30am (lol). I’m proud to say… I only ate ONE serving!! 🙂 The Halo Top low carb ice cream is great, but I prefer Mint Chip flavor.
Have you tried Halo Top Creamery yet? If so, what’s your favorite flavor?
I’m headed into the city to run some errands and meet up with a girl friend for a fun lunch (low carb of course!) so I’m planning to hit the Kroger there on the way back to stock up on more Halo Top low carb ice cream. 🙂
They don’t carry it anywhere near me. It’s a 2 hour round trip to get some. 😛
I’m really looking forward to my lunch out. I usually get a spinach salad at the spot where we’re meeting, and it’s SO good!! Plus they have a super nice patio where you can enjoy your meal in the sunshine.:)
How are things going for you?
It’s day 40 and we’re wrapping up the 6th week of the challenge. 🙂 How are you doing with your low carb meals & macro tracking? Any questions or struggles?
I would love to hear your results so far…

Ive done great. Lost between 9-10 lbs so far. Last night I was very upset and caved to emotional eating and had cake. I knew I’d hate myself this morning but I still did it. And sure enough im very down on myself today. The scale didn’t reflect anything but knowing I’ve more than likely kicked myself out of ketosis and will have to endure that flu again really aggravates me. Dissapointed in what I did. Trying to just move forward today…
Lynn Terry says
Hi Casey π Just let it go. The food guilt is worse for you than anything you eat. It’s done and gone, so power through this week and get back in ketosis. Then you’ll feel GOOD – both physically and emotionally (empowered!). π
The next time that temptation pops up (to feed your feelings), stop and remember what THIS felt like. Remember that it didn’t work – that it only made you feel worse. That’s what worked for me!:) *cheers*
Casey says
Thanks so much for not scolding me and making me feel worse! It’s nice to have this place to talk with people who understand. I don’t have that in ‘real life’. So thanks again for your help and encouragement! π Hope you have a great day!!
Lynn Terry says
Thank you! π I’m really looking forward to the day – and lunch out with a fun girl friend.:)
I’ve so been there – more times than I care to count lol. The thing that worked for me was to stop feeding my feelings, and just start FEELING my feelings instead.
Now instead of reaching for a pint of ice cream, I sit down and journal it out. I like the way THAT feels – much better than the belly bloat and food guilt. π
You’re doing great! This is real life, and we all go through it, mistakes and all. π Here’s to an awesome week, being back in control! *cheers*

They all look good!
I know you make the Good Dees Brownies, and they are 1 net carb for one brownie (12 servings). I noted that you added pecans and chocolate chips. Can you tell me how much of those you added and what the net carb count was when those two ingredients were added?
Thanks much!
Lynn Terry says
Sure, Carmen! I put all the details here: http://www.travelinglowcarb.com/13196/low-carb-brownies/ I used the brownie mix plus 1/2 cup coconut oil, 2 large eggs, 1/2 cup peanut butter and 3.25 ounces of pecans.
I put all of this into the MyFitnessPal Recipe Calculator and set it up as 9 servings, as I cut 9 large squares instead of 12 smaller ones. My brownies were large and thick, and 3.5 net carbs each.
Carmen VanVliet says
Wow, thanks so much! That sounds awesome, and the carb count is not bad at all. I just got notification that my brownies are on their way and I can’t wait to get them and make them this way. Yours looked so good. π
Love your blog and all the information and encouragement you throw out there!
Lynn Terry says
I can’t wait to make them again too. They are SO good, and I lost weight the 4 days I ate my pan. π
Thank you!! *cheers*
Lynda Wildin says
Try the chocolate mocha chip from Halo Top. That and mint chip are the best imo!
Lynn Terry says
Hi Lynda! I cannot find the Mocha Chip anywhere – but I did stock up on MInt Chip yesterday. π I’m anxious to try the Mocha!!

I wish I had a package of Good Dees Brownies for a family birthday celebration I’m going to tomorrow night where there will be cake and ice cream served. My step-son makes the best cakes and I always hate the looks I get when I bring my own foods/desserts but at 33 pounds lighter since February, there’s no turning back. I have several good recipes for homemade single-serve cake/brownies that I can make for myself and bring. But again, it’s those looks…
Lynn Terry says
The brownies are finally back in stock! π
You can get 10% off your order on Good Deeβs website with my refer-a-friend link: http://i.refs.cc/9Cfl5keL or if you have Amazon Prime you can get free shipping that way: http://amzn.to/2aHrnbo
I’m ordering more myself. π
It’s actually unfortunate that celebrations revolve around food, or that’s even an issue, instead of focusing on the reason for the celebration. I’m sorry you “get looks” or it makes you feel any less for not indulging in sweets.
My advice: ignore the looks, smile big, wear something flattering π and focus on the fun and the people and the birthday!!

How did you get my fitness pal to show net carbs?
Lynn Terry says
Hi Joy π I use this free hack with the free version of MFP: http://www.travelinglowcarb.com/4448/myfitnesspal-hack/ It’s easy to set up! It only works online though, not on the mobile app or tablet.
