Below is my Low Carb Food Diary for Day 11 of the Summer Low Carb Mini-Challenge so you can see what I ate and how the macros work out. Join in! Even if we’re in the middle of a challenge you can get signed up to stay in the loop. 🙂 It’s free and fun, and I’ll be kicking off a NEW challenge on August 1st – so plan to join us!
Yesterday we talked about those crazy weight fluctuations that can drive you nuts…
I was up a pound after my big caving / rock climbing workout the day before.
That’s common after a big workout, due to muscle recovery.
This morning my scales dropped back down – back to 141.2 pounds. 🙂
There’s SO much more to the low carb lifestyle than just weight loss though, especially over the long term. I’ll share some cool changes I’ve experienced myself over the years with you below…
Day 11: Friday’s Low Carb Meals
I had my favorite “Low Carb Cereal” made with 1/2 cup pecans, 1/4 cup daisy brand cottage cheese, 4 small diced strawberries and 1/8 cup (17.5 grams) of blueberries.
It came to 6 net carbs and 85% healthy fats.
This meal is so easy, so healthy, and has perfect macros. Plus it’s delicious! 🙂
I had 5 cookies left, so I ate those for lunch. All five of them. 🙂
Fortunately they are only 2 net carbs each, but that came to 10 total 😯 lol. I didn’t feel like cooking, and decided to just finish them off…
Here’s the cookie recipe, along with 14 more low carb recipes you’ll love!
Later I had a quick snack of Blue Diamond almonds (1 ounce, 28 grams) and 2 mozzarella sticks. (4 net carbs)
Can you tell I wasn’t in the mood to cook yesterday?? 🙂
I did finally get in the kitchen and whip up a quick one-skillet-meal for dinner: sausage & fried eggs. I fried the eggs in the sausage grease…
I made 2 sausage patties and 3 large eggs, but I could only eat half of it. I saved the other half to eat this morning. I obviously wasn’t as hungry as I thought I was! 😛
Here’s My MyFitnessPal Diary for Friday:
Macronutrients: A Simple Explanation Of Low Carb Macros
How To Get A Net Carbs Column in MyFitnessPal
Calories: 1782
Net Carbs: 26
Total Carbs: 42
Protein: 73 Grams
79% Fat, 15% Protein
Exercise: Ab Carver Pro (100 Reps)
PLUS: 20 Tricep Dips
FitBit Steps: 1554
Water: 72 ounces
I didn’t really feel like working out yesterday, but I forced myself to just do it. I’ve doubled my Tricep Dips to 20/day (instead of 10) and am still doing 100 reps on the Perfect Ab-Carver Pro – but rolling out farther, and holding it longer.
I’m seriously motivated to get this body toned up! 🙂
The Benefits Of A Healthy, Active Low Carb Lifestyle
If you’re reading this in your email, you probably can’t see the photo and story I embedded below but you can read it here.
The photo on the right came up in my Facebook Memories yesterday, and it made me realize how much my life has changed – or rather, how much I have changed!
Seeing that photo cross my screen brought up so many thoughts and realizations. I shared a list of them in the update above. It’s amazing how much you can change, in so many positive ways, when you take control of your health and go for your goals.
The biggest change for me is in my confidence level, and in my overall happiness and quality of life. I have more confidence, and less self conscious fidgeting.
I feel SO much stronger, both physically and mentally.
My revelation: It’s not just what you LOSE, it’s what you GAIN.
Sure I’ve lost a lot of weight (50+ pounds), but what I’ve gained in doing that – and in taking control of my health, my weight, and my issues with overeating and emotional eating… is invaluable.
I feel like a totally different person now than I was last year, or 5 years ago. I set out with one goal and one focus: to lose weight. And I did! But I had NO idea how many ways that would change my life.
Going low carb is the best thing I’ve ever done for myself…
How are things going on your end?
It’s day 12 today – did you exercise this week? What kind of low carb meals are YOU eating? Are you experiencing any challenges or struggles with your goals?
I always look forward to hearing from you! 🙂
Best,
Lynn Terry,

Omg i love your story Lyn! I too have gained a lot since i started losing weigh . I got my life back. I still have a way to go. But i’m going to get there. Thanks for the inspiration
Your story really moved me. 🙂
I’m glad, Gina – and thank you. 🙂 It moved me too, just seeing that photo cross my screen… and realizing how MUCH my life has changed – in so many positive ways!
My scale has been fluctuating this week too. I went up a pound then today down a pound but i still weigh the same as i did last week. Lol. I am better off weighing once a week. But i was curious. Lol.
Funny…..i used to be 44DD. Now i am 36 C. I lost first in my bust. Lol. I do mot need reduction surgery now at least Haha
I think most people do lose bust first. Oddly, that was the last to go for me. I just woke up one day and they were gone, lol.
LO . that is crazy. 🙂 honestly i do not miss it. (Extra back pain)
I enjoy my morning weigh-in. 🙂 It was really interesting during the last 90 day challenge of eating low carb so consistently and noticing the true patterns of fluctuations my body goes through. That really helped make sense of them, seeing the patterns. I’ve never been that consistent for THAT long, lol. But now I know how my body operates better than ever!
Thank you for your inspiring story! I lost 50 lbs. 8 years ago doing low carb, but have struggled since my youngest son passed away 2 1/2 years ago. I have gained back 30 lbs. as I am an emotional eater. I want to feel better both emotionally and physically and your posts have helped. I have not been able to stay on track for more than a week, but am going to do it! It sure helps to read positive daily posts! Thank you!
I’m so sorry for your loss, Trudy. I can only imagine how difficult that is, as a mother myself. My heart goes out to you.
I also struggled with emotional eating – for years. It was the toughest thing for me to overcome. I wrote this recently: http://www.travelinglowcarb.com/10307/stress-depression-dieting/ I hope those points prove useful for you too as you take control of your health and get back to your best self. *hugs*
Thank you so much Lynn!
I love your blog. I recently joined your FB group as well. I really appreciate that you make low carb seem so easy and do-able. I haven’t officially joined the current challenge but I am doing really well this past 10 days. Just got home from the gym-weighlifting and walked/jogged a mile. Thanks for sharing your journey with all of us out here trying to make a similar journey.
Thank you Erica 🙂 and Way to go!! It sounds like you are doing fabulous. I do love easy – or simple at least. Sometimes to the point of boring, lol. I’m glad you joined us!
Let me just say that you are truly an inspiration to me. Being on a LCHF diet causes alot of those who don’t really understand it’s benefits to put the diet down and even yourself down (this I know because I’ve lived it). But when I proved everyone wrong by losing 40+pounds in a month and a half it was all worth the heartache. Now after 3 children (2 of those within the last 3 years) I gained a lot of that back and struggled with staying on track and being motivated. But you’ve helped so much without even knowing you’re doing so. Your blog, email updates, etc., have given me the motivation I need to continue on this road and to not give up. I am determined to be at my “healthiest” weight for me and my family. So thank you for putting yourself out there for others to learn and be inspired by you. ☺
Kudos to your hard work and dedication because it has definitely payed off and you look amazing. *CHEERS*
Thank you Justine! 🙂 I know all about the losing / gaining it back, as I’ve been through that myself. I wrote about one such time here: http://www.travelinglowcarb.com/3170/how-i-got-fat-again/ And it wasn’t the only time. It’s funny how in THAT post I was pushing a size 10/12 lol. I guess I did put on quite a bit of weight again AFTER that. Geez. *sigh*
It’s so nice to have the emotional overeating issue resolved – finally. That took me YEARS. I’m struggling with cravings this weekend, and also feel sort of emotional – or really just want to be alone/quiet or something. With pie. LOL. I’m sticking it out though, and that’s what has changed. In the past, I wouldn’t have… I would go with my feelings.
Justine
i know you can do it
your daily food posts anaze me how tou stay so low carb
i struggle with staying 20 net carbs. You are always below that number
my daughter had two babies within two years and struggled with the baby weight gain

I want you to know that i am totally HOOKED on the low carb breakfast, cottage cheese, pecans and strawberries. I sometimes eat it for dinner. Its so good and satisfying. My daughter now eats this and loves it.
