On our final morning we woke up to a soft drizzle that turned into a slow stead rain, and never let up.
There was no cooking on this morning. Most people had honeybuns or pop tarts to snack on, and I had an Atkins Peanut Butter Fudge Crisp Bar that I had brought along with me.
(They’re only 2g net carbs per bar, taste great and are actually filling.)
We broke down camp in the rain, which wasn’t ideal – but the rain wasn’t going to let up and we had to get on the road…
We waited until we got on the road to stop for lunch, and I had a Chick-fil-A grilled chicken sandwich with pickle & lettuce & mayo (no bun of course). I wasn’t super hungry, and had low carb snacks with me for the road trip (string cheese, almonds, etc) so I ate light at lunch.
For dinner, we decided to stop and sit down somewhere and take a break from the driving. We chose O’Charley’s and I noticed they had a new “8 meals under $8” menu.
I chose the BBQ Chicken Stack which is grilled chicken topped with barbeque sauce, cheese, bacon & chives. The sauce is not on my usual menu, so I pulled up the O’Charley’s Nutrition Facts on my smart phone before I ordered and discovered it was only 19 carbs! Wow!
I chose that, with loaded broccoli as my side item. At the most it was still under 30 carbs for a fabulous (and very filling) dinner. But to be honest, I couldn’t even finish it all, so it was even less carbs for me. 🙂
We finally got home around 11pm after a full day of driving (with several sidetracks lol). I was exhausted, but refreshed, and happy to be home. After traveling so much the last 3+ weeks, I’m glad my next big trip is a few weeks away. I’m looking forward to some solid time at home, at least for a little while!

I found your coffee creamer tips online- assuming you have a blog of some sort with tips to low carb eating? Just gearing up to try the Atkins and it is totally foreign to me, been a weight watcher dieter before but never low carb. Couldn’t find how to follow you… On Facebook?
