Dinner on the 3rd night was FAJITAS! 😀
And man were they ever good…
This was my favorite meal of the entire camping trip!
I skipped the black beans & rice, and the tortillas of course, and had grilled chicken topped with: grilled onions, shredded cheese, rotelle cheese sauce & sour cream…
I should backtrack and share my breakfast with you too. I had coffee, fried eggs, bacon, string cheese (which I’m totally additted to!), and two chilled fresh strawberries:
After breakfast we all changed, headed to the big rock, and went tubing down the Tallulah River together. It was a beautiful day with hot sun and cold water, and of course great friends!
When we got back from the river, lunch was on. Martin was making Chicken Alfredo with pasta. I discovered that Alfredo sauce is very low carb (noted! good to know!) but as much as I like Chicken Alfredo I was really in the mood for junk food instead.
I made 2 big sausage dogs smothered in sour cream & shredded cheese, and also had: green olives, almonds, string cheese, and vienna sausages dipped in a dollup of mayo & mustard mixed together:
Yes, I passed on the Chicken Alfredo for *that* LOL. Like I said, I was in the mood for junk food – and seriously hungry after tubing the river! I decided to make my quick lunch, eat, and then curl up in the tent for a nice long afternoon nap while everyone else had a late lunch.
After dinner (mmmm, fajitas!!!) we sat around the campfire while the kids were making S’mores, and I had a hazelnut coffee – with a dash of rum. 😉 That’s the first time I’d tried rum in my coffee, and I loved it! I used hazelnut coffee, heavy whipping cream (just a dash), sugar free vanilla coffee syrup – and a couple ounces of Captain Morgans. Nice!

Breakfast looks really good Lynn. Especially the heart shaped eggs. Since I have 13 chickens, (14 if you count the rooster), I love having bacon and eggs for breakfast.
The fajitas look really really good too. Yum!

The fajitas were out of this world – so so good!!
Bacon & eggs is one of my staples on the low carb diet. Both are zero carb, so they’re especially great when I’m on an ‘eat clean’ streak.
My friend Jen raises chickens too, which I thought was really neat! I wish I had the extra time & patience to raise chickens myself. It would never work with all my traveling of course – but perhaps later something I can consider. π
