The other day I mentioned going back to my low carb daily journal, and back to keeping my net carbs under 20 a day.
I’d had a few too many “splurges”, and the scales were fluctuating a couple pounds higher than usual.
I was able to keep it below 20 net carbs yesterday easily, so I thought I’d share those low carb meals with you. As I’ve mentioned before, when I am home I like to keep it simple. I spend as little time in the kitchen as possible. 😉
The scales are already moving, by the way.
It’s amazing how fast the low carb diet works – when you actually stick to it (lol)…
I started my day with 3 eggs scrambled with spinach & colby jack cheese. I should stop and tell you that I don’t think I have ever (willingly) eaten spinach before in my life – until recently.
Spinach is a new craving for me. My tastebuds have been completely changing since I started eating low carb. Now I crave it, and especially like it with cheeses.
Breakfast was 3 eggs in a buttered skillet, a few forkfulls of frozen spinach that was cooked in the microwave, and a generous handful of shredded colby jack cheese.
The entire meal took 5-6 minutes, and was at most 3 net carbs:
Lunch was another quick meal.
Less than 5 minutes in the kitchen – which are the kind of low carb meals I really like 😉
I took pre-cooked fajita meat (chicken) and just microwaved it until it was hot.
I also warmed the low carb tortilla. Add sour cream & shredded cheese, wrap it up – and call it lunch!
I get the tortillas at the local grocery store (Kroger or Wal-Mart) near the cheese in the dairy section. The first low carb tortillas I bought were only 1 net carb. I haven’t been able to find those again. These are larger, and 5 net carbs each.
I enjoyed it so much, and still had about half a package of the chicken strips left, so I decided to have it for dinner as well. This time I pan fried the chicken with a little soy sauce (hot & fast – just to heat it), then added leftover caesar salad:
For dessert last night I had THREE low carb brownies. 😀
All in all a very successful (and delicious!) day with my low carb meals… and the scales agreed. As you can see, I weighed in this morning at only 150 pounds.
That is my LOWEST weigh-in to date! And after the scales fluctuating and/or standing still on me for over a week now – it was real nice to see them move again. 😉
I just wanted to share some quick & easy options because contrary to popular belief, low carb meals don’t have to take hours – or require complicated recipes and weird food replacements…

I’m hitting Wal-Mart tomorrow so I’ll look for those tortillas (my local grocery store, the only one in town) doesn’t have any that are low carb. You rock at simple, easy meals and they are so helpful to have so I know what to cook for myself π

You should find them in the dairy aisle, near the cheeses. Good luck! I’m glad you enjoy the easy low carb meals. I know I do. π Today I did a lot of low carb snacking (new post coming soon) and also made a new version of Mom’s low carb bread – which I’ll share in a post tomorrow. YUM!

Hi Lynn! I have been on the diet for 8 days I lost at first , but the last few days I lost nothing at all. I am pretty sure I am doing the diet the right way. I am walking, I am 67 years old and in pretty good shape’ 5’5″ 197lbs. Help!!!!
