We left the High Hampton Inn on Sunday afternoon and headed to Clayton, Georgia for four nights of camping alongside the Tallulah River in the Chattahoochee National Forest.
There were about 20 of us total, broken up into several small groups around the campsite.
Each camp hosted dinner for the entire group on one of the four nights, with breakfast and lunch prepared individually at each campsite. And guess what?
The first night was “pasta night”. 😛
Fortunately I came prepared. Just because I’m on vacation doesn’t mean I want to eat carbs and gain weight! That would really do me in, because I’m *always* traveling. LOL.
See the row of coolers on the left side of our campsite? One of those was full of “Lynn’s low carb food for camping” – just in case there were meals I couldn’t eat (like pasta). 😉
So while everyone was enjoying big heaping plates of spaghetti (which I do not even miss, by the way), I had the caesar salad that was served on the side along with: sliced ham & roast beef, string cheese and green olives.
For dessert I had fresh strawberries, plus a big spoonful of natural peanut butter and sugar free seedless blackberry preserves:
While I’ve dipped fresh strawberries in the blackberry preserves before, I had no idea how great strawberries would be dipped in peanut butter! And of course the peanut butter & jelly – even without the “sandwich” – were a fabulous, sweet & creamy dessert!
I was glad I brought along plenty of my favorite foods & snacks. I often carry things in my travel bag no matter where I go, because my choice to eat low carb is MY responsibility. But on this particular trip I brought plenty of low carb food for camping specifically…

As a celiac, this is exactly how I travel as well. I always have food that I can eat. (Just in case).
I decided to do that from the beginning. And I rarely order “special” when eating out. For example, I don’t order a burger without the bun – I just remove it when it arrives. I’m all about keeping it simple! π
I’m just thinking about dipping strawberries in almond butter! I’m an almond butter addict! π
I’ve heard lots of people say how much they like almond butter! Is it low carb? Regular butter is zero carb…
I have no idea whether it would be considered low- carb or not ! But I know it has lots of healthy fats and protein.
Wait, according to nutrition facts I found, almonds have 54% fat, 24% protein and 7% carbs.
Doesn’t look like almond butter is high-carb?
Well “high carb” is relevant to how many carbs you’re eating among other things. My natural peanut butter for example is 4 net carbs for 2 tablespoons. That’s high in MY book, but low by peanut butter standards.
I consider peanut butter part of the meat group *and* part of the treat group. π
Regular butter is zero carb and I use it in my foods without limit – it’s one of those like mayo, bacon, eggs etc that I don’t have to worry about counting or limiting.
So I definitely wouldn’t trade for almond butter at this stage in my diet, though it might be something I would like as a “treat”. π
