I’m another 1.2 pounds lighter again today, for 2.4 pounds lost in two days. Nice! That puts me at 153 pounds this morning, so I’m very close to being back below 150. 🙂
I’m also feeling TONS better after that little setback with the cold, and the weather is gorgeous (!!) in Tennessee today so I can’t wait to get out for a few miles to rack up some Fitbit steps!
Here’s my food diary for yesterday, to give you some super simple low carb ideas. You know me: I avoid the kitchen as much as possible, and keep it easy! 🙂
Friday’s Low Carb Meals
I had my usual “cereal” for breakfast: 3/4 cup crushed pecans, 1/4 cup Daisy Brand cottage cheese, and 4 small diced strawberries. (6 net carbs, 88% healthy fats)
For lunch I had to get creative, because I didn’t feel like going out – and there’s very little left in the refrigerator, lol. I ended up making low carb style “Pigs in a blanket” – er, without blankets?
They weren’t very photogenic… but they were quite tasty. 🙂
These are Carolina Pride brand cocktail smokies (3 carbs for six).
I used colby jack cheese (cut off the block, 1.48 ounces total) and baked them on a baking sheet lined with parchment paper at 375° until done.
For dinner I grabbed a (double) Low Carb Thickburger from Hardee’s:
I ordered it “no ketchup, no onion, no mustard” then chopped it all up into a “hamburger salad”. I get bored with lettuce burgers so this is a nice change. 🙂
Here’s how my numbers worked out for the day in MyFitnessPal:
1800 calories, 18 net carbs, 71% fat
Nothing too exciting really. I just had that same breakfast again this morning but otherwise have NO idea what I’m going to get into for food today. I suppose I should figure that out. 😛 Stay tuned for tomorrow’s low carb food diary to find out!

I enjoy getting your emails. I hate that I can no longer read the posts in the lchf 90 day challenge group. I’m not sure why I was booted from the group I was never rude or mean to anyone, I always offered encouragement for the others. If I did anything wrong I honestly don’t know what it was.

My week didn’t look so good Lynn !
First of all I didn’t weigh myself until Tuesday because my doctor added another medicine which makes me taking three types of medicine for seizures . It’s suppose to help more and help with deep depression and I will start counselling on March 10 but I did gain 2 pounds back. I didn’t eat anything bad. I know I was pretty much stressed and very depressed this pass week. So now I’m on new medicine I will see if things get any better?
You just just don’t know how much I admire you and I am so glade that you have the travelinglowcarb for everybody . It is the only weight loss challenge that I have ever had so many friends who care about you and want to help you succeed to lose. And if you have a bad week or day you do t have to feel bad there is always someone there to help pick your spirits back up and make you smile and help you get back on track! You are an Angel! Those are all some pretty big things to deal with. Certain meds are known to make weight loss more difficult. I know I really struggled when they had me on progesterone. I also find stress stalls my weight loss, or makes it very slow. That has affected my progress a number of times.

I love your menus! Unfortunately my age (almost 60) is making calories wayyyy more important than carbs these days. I literally lose better on something lowfat like WW than I do on low carb now. π Given I’ve done this almost 16 years off and on it’s sad and depressing because I love the food. Also, I’ve developed some food intolerances to dairy, etc. which make LC a little harder too.

That’s tough, Debra. You have to listen to your body though, and do what works best for YOU. How long have you been on weight watchers now and how’s that going?

I actually haven’t gone over to WW yet – my stomach feels better with low carb no matter if I’m basically on maintenance calories or not – LOL. I just know from past experience in the last year if I cut cals (low carb, low fat, etc.) it makes a difference in my weight – not the carbs. Sure do miss being able to drop a few pounds relatively painlessly! I did have your “cereal” this morning – one of my absolute favorites!

I’ve been able to eat lower calorie (around 1200), but still maintain LCHF ratios – 70% fat / 25% protein. Have you tried that?
