Day Two of the year-end low carb challenge was a success! I went over my net carb goal just a tad, but otherwise it was an great day with ideal macros & healthy choices.
Below is a breakdown of my LCHF meals, as well as my complete MyFitnessPal Food Diary for the day.
A lot of people ask me how I get MFP to calculate Net Carbs. Here’s the hack to use. And here is a video walk-through if you’re having trouble with it.
I started my day off with “snacks” while I was working. It was another gorgeous day here in Tennessee so I worked from the back deck and snacked on my favorite Daisy brand cottage cheese, a block of colby jack cheese, one of my LCHF pecan bars… and of course my beloved coffee! 🙂
I cooked another big batch of the Low Carb Veggie Fritters to last me a couple of days, and had 3 of those for lunch.
For dinner I grabbed a Low Carb Grilled Chicken Club from Hardee’s (aka Carl’s Jr). I was tired and didn’t feel like messing around in the kitchen. 😛
I had 6 cups of coffee yesterday (1 carb per mug), but didn’t drink ANY water. 😐
Here’s my entire MyFitnessPal Diary for yesterday:
Net Carbs: 25
Total Carbs: 35
Calories: 1771
Protein: 91 grams
Macro Ratios: 74% Fat, 20% Protein
Water: 0 ounces
Current Weight: 153.6
I am REALLY feeling the workout I did on Day One (the video is in that post) – lol. Wowsa! 😛 That one is really great for the legs, haha.
My exercise for Day Two yesterday was 30 minutes of yardwork, and my back yard is a big hill – so I was really feeling my thighs! I decided to give my legs a break today and do an upper body workout. 😉
As you can tell from my macros above, even though I eat “high fat” I still get more than enough protein in my diet. This is something that confuses a lot of people, especially if you try to go by grams instead of ratios – or percentages.

I often just wash & cube a cucumber, salt it, then add a TBSP or two of real mayo and stir it all together. Itβs best if you do that then refrigerate it while you make your meal β or just make it up to eat later.
Sometimes I add a bit of diced tomato, but I really like about a TBSP of crumbled feta stirred in and nothing else. π Enjoy!
