My scales finally moved again. 🙂 After a week of not budging, I woke up *almost* a pound lighter this morning, for a total of 3.4 pounds lost during this challenge, which started a week ago Monday.
That’s great weight loss for me in less than 2 weeks!
I’ve been home for awhile, but I’ll be traveling again starting next week, with three trips back to back. So stay tuned for a lot of interesting low carb foods on my travels!
It’ll be nice to have a break from the pecans and sausage, lol. 😛
Yesterday (Friday) was another VERY long day. I fell asleep at 7:30 Thursday night, so I was up by 1:30am Friday morning – and awake until 2am Saturday morning, save a nice 4-hour nap somewhere in the middle. I’m so off schedule! Anyway, yesterday’s food diary is for the full ~24 hours…
Breakfast & Lunch: Arby’s Roast Beef
My son was in this week, and that boy LOVES Arby’s -lol. I had him pick me up a few regular roast beef sandwiches when he went. It’s what I refer to as “drive-thru grocery shopping”. 🙂
I just ditch the buns and eat the roast beef. It’s easy. There are no carbs in it. It works. And it means I have something to “grab & eat” without cooking. 🙂
I finished off a couple pieces of the low carb parmesan bread I made the other day with the first bowl of roast beef, had some Colby Jack cheese off the block (less than an ounce) to snack on later that morning, and had a slice of Borden’s Natural Colby & Monterey Jack Cheese with the roast beef I ate for lunch. Dinner: Hamburger Steak
For dinner I “cooked”. I just made a big fat hamburger steak. I couldn’t be bothered to make a vegetable to go with it. Sad, hey? lol… I’m so lazy in the kitchen!! It was good though. 🙂
You’ll notice the 1/2 TBSP of ketchup in my MFP diary below. I added it to my hamburger steak. That stuff (ketchup) is full of sugar – the kind that is in my fridge is at least. They do make sugar free ketchup which is ideal, but it doesn’t “caramelize” if you cook with it. I know… who cooks with ketchup?! 😛 haha
2nd Dinner: Ice Cream!
Since it was such a LONG day, I got hungry again before I went to bed at 2am. I browsed through the kitchen for all of about 13 seconds, and just decided to have ice cream for my second dinner. Why not, right? 🙂
I had 1/2 cup of Breyer’s Carbsmart Chocolate Ice Cream, and added 1 TBSP of Peter Pan Natural Creamy Peanut Butter plus 1/3 cup of crushed pecans. Yum! It adds something healthy to the “meal”, adds healthy fats, and it makes half a cup of ice cream… a “whole bowl of food”. 🙂
Here’s how my macros came out in MyFitnessPal yesterday:
I drank 40 ounces of water yesterday too, and had 7 tablespoons of coffee creamer. Ack! I’m working on cutting down on that, and have been using 1/3 less per mug the last few days… but yesterday was a LONG day, lol.
My next trip is to Phoenix, then Cleveland, then after that I’ll be in Knoxville and Johnson City – and I’m closing out the year with Greensboro, NC. I’ve enjoyed the last few months at home, but I’m really looking forward to my upcoming flights & road trips!! And of course… all the beautiful low carb foods along the way. 😉 *cheers*

I get a kick out of the “lazy” meals. I, too, can eat the same thing over and over if it works. I had to try the Breyers Ice Cream with the thought that it would taste like blah. Was I surprised, it is so creamy and yes it is hard to stick to just 1/2 cup, but the good news would be that even 1 cup is still a whole lot better than regular ice cream. I enjoy your posts ,,, keep the positive thoughts going.
Thank you, Rayann! The chocolate carbsmart really IS good. I find adding nuts (walnuts or pecans) really makes it a nice sized bowl, and very tasty.

I did add pecans to chocolate and I tried vanilla with a tsp of sugar free preserves.
Well congrats on the 3.4 lbs. I’m so discouraged! I’ve been trying to be really good and can’t seem to lose a lb! When I first started the Keto diet it was dropping off, I lost 20 lbs. I have started having a glass or two 😉 of red wine in the evening and am wondering if that is hindering my weight loss? I wasn’t drinking when I lost the 20 lbs?

Are you counting the carbs in your red wine?
Keep in mind that alcohol metabolizes differently, and much slower than food. It causes what is referred to as “the alcohol stall”. My advice is to go back to exactly what you were doing when you were losing…

I totally understand Roye. I am guessing that is why my scales stood still all week – the 4 beers I had last Saturday night, lol. Even though they were within my carb limits, they do tend to stall your weight loss temporarily. They were worth it though. 😛 But I didn’t have a beer this weekend – for that reason. 😉 *cheers*

Congrats on your loss during the most recent challenge. I have a question for you….a little unrelated to this specific post since you didn’t have cottage cheese, pecans and strawberries this morning…but I’ve been wanting to try that so much but can’t find any cottage cheese here in Canada with similar nutritionals as your Daisy brand. I have that problem with many products.
So my question is, in all your travels (which I know some are here to Canada) have you met friends that share with you how they are living this WOE in our country? Perhaps you know of another person doing a similar blog as yours but is Canadian based?
I still plan to follow you because I just love your writing style. You always make me smile. Just finding it challenging to follow along sometimes.

My advice is to just read the labels. That’s how I discovered Daisy Brand is the best cottage cheese I can buy here. It has very few ingredients compared to every other brand on the shelf (and all real food, ingredients I can identify lol) – and the lowest carb.
Congrats on the weight loss. I notice that you have your macros set up for 50% carbs (even though you don’t eat them), 30% fat, and 20% carbs. Is this because you’re closer to your weight goal? I know you suggested we use 70% fat, 25% protein, 5% (20g) carbs while we are losing. Just curious.

Actually my “goals” in MFP just got messed up somehow -lol. I know my own goals, so I often just ignore those and stick to my goals of 20 net carbs a day max, and 70% fat minimum. 🙂
