I always LOVE traveling because of all the beautiful low carb food options along the way!
It’s really nice to have a break from my usual staples and local restaurants, and try new places & foods.
Yesterday was a super easy food day. EASY is GOOD. Ricky came over early, and it was a rainy Sunday so we decided to stay in for the day. I was finishing up my packing for the trip today anyway, so that worked out great.
I got up early and had my coffee, and one of my low carb bars – the bars I made yesterday. Then Ricky made breakfast when he got here. Just a quick & simple meal of sausage & fried eggs:
He liked my bars, btw. 🙂 He said it tasted kind of like a Nutty Buddy… without the ice cream. LOL. I guess that’s pretty close! I had another one for an afternoon snack, and then we made a quick & easy dinner.
We baked a big pan of chicken thighs (each thigh salted & topped with a pat of butter), and steamed cauliflower – which only had butter & salt on it:
It doesn’t get much easier than that! No fancy recipes required. Just very simple, real food, and easy clean-up. 🙂

My weight didn’t change this morning, but I didn’t sleep enough last night, which always affects my scales. For some crazy reason (excited about my trip maybe?!), I woke up SUPER early this morning.
I’m headed out today for a week without scales, which will be a nice “scalecation” (scale vacation) lol. I’ll still be eating super clean, super low carb, and tracking all of my foods along the way – and we’ll just see how that pans out on the scales next week when I’m settled back in. 🙂

Hi Lynn, I have a question about the Atkins Bars. I have never had one, but you have mentioned them a lot so I thought I would try them. I miss breakfast a lot and thought this might be a quick option. My question is, how does the front of the box (Caramel Chocolate Nut Roll) say 3NetCarbs but the back of the box & bar says 19 carbs? I know to get the net we subtract the fiber which is 6g so the way I do the math the total is still 13 and not 3? Also its 13 in my fitnesspal food diary. I also would like to know if you have ever seen them come with dark chocolate rather than milk chocolate? Thank you, Lynn you are forever inspiring and fyi since April when I found your site I have lost 40 lbs 10 more to go THANK YOU!

A better option is 1/3 cup pecan halves. It’s real food, less carbs, very “LCHF” so it’s filling too. π The carb count is subtracting the sugar alcohol – which is common with anything that contains certain artificial sweeteners.
So it’s total carbs minus fiber AND minus sugar alcohol.
You have to search for your bar in MFP with a word added into your search like “net” or “alcohol” to find an entry already edited to accommodate the sugar alcohol / net carbs.
Congrats on your 40 pounds lost!! That’s amazing. π Way to go!!
