I am absolutely loving the Low Carb way of eating…
It’s not hard, and I am still able to use lots of convenience foods (frozen spinach for example) and still eat out as much as I please – fast food and restaurants alike.
I am eating better than I ever have in my entire adult life with plenty of lean meat and the best vegetables – romaine salads, asparagus, spinach, broccoli, etc.
And berries, of course! 😀 Prior to going low carb I was eating tons of junk & processed foods. And a lot of french fries – lol.
That was my breakfast ->
3 eggs scrambled with spinach and cheddar cheese.
Super easy, less than 5 minutes to done, and absolutely delicious!
For dinner tonight I had a Hardees Thickburger with mayo, lettuce & pickle – wrapped in a low carb tortilla (1 carb) – and an order of onion rings (42 carbs).
Yesterday I made a hamburger steak for dinner, with cheesy broccoli and a tossed romaine salad.
Thursday night we went out to dinner and I had a half rack of ribs with light sauce, with green beans & broccoli on the side.
I also had about 3 mozzarella cheese sticks. 🙂
My point is that I’m eating great foods, and even “carb splurging” a little here and there, and STILL losing weight. In fact, I’ve lost 2 more pounds since Wednesday!

I’ve been eating low carb now for just over 90 days – maybe close to 4 months. I started at 175 pounds, by the way. In the beginning I stayed really close to “induction phase” – meaning I kept my daily intake strictly below 20 net carbs a day.
I have lost close to 25 pounds, and have gotten into low carb as a “way of life” more so than just “a diet to lose 20 pounds”. So a splurge here and there is normal at this stage of the game. I’m not out to punish myself from foods I love (onion rings). Instead, I’m eating them in moderation – and as a treat, not as a normal part of my daily diet (anymore -lol).
And I’m still losing weight.
I doubt I will ever go back to eating things like pasta, bread, rice, etc. They don’t even appeal to me anymore. I love the way I’m eating, LOVE the way I’m looking 😉 and I feel better than I have in years!

I’m now following your blog for meal ideas. Ever since I’ve started working from home, I’ve gained 10 pounds and having the hardest time getting rid of it. Congrats on your weight loss journey π
Thank you Carla & Welcome π For me it was around 30 pounds – but it crept up on me over the course of about 7-8 years lol.
On top of losing weight I feel tons better – more energy etc. I had got in a habit of eating too much junk π
Hey Lynn! I am excited to find this blog and to see what great success you have had going low carb! Great job! I can relate to all the sitting – I do a ton of driving and sitting in front of the computer as well. I also can relate to gaining weight as a result of it! I went low carb for all the health benefits – my family comes with every inflammation and autoimmune disease possible. When I started having bouts of gout, just like my dad, I knew it was time to make a change. And so I went “primal”, which is essentially low carb but I stay away from all grains because of the gluten and lectins that they contain. So far so good for me! And I my weight loss clients are even benefiting as well. Looking forward to watching your journey!

I pretty much just stick to “low carb” which for me means a lot of meat & greens and some berries. Of course I keep all the good stuff like mayo, cheese & nuts too. π
Hi Lynn – I wanted to thank you so much for starting up this blog and particularly for sharing recipes, meal planning and shopping tips. I’m in the UK so can’t buy some ingredients unfortunately – but I’m learning to improvise;)
This is week one of eating the low carb way & I’m delighted to have lost 4lb (with 2 days to go before the week is over)!! I still have rather a lot to lose, but low carb has provided the fastest kick-start I’ve experienced in any previous attempt.
