This morning I weighed in at 161.2 pounds. That’s a full pound down from the day before. I love that the scales are finally moving again! Maybe that nasty flu finally broke my ridiculous weight loss stall. 😛
I love sharing my low carb food journal with you, and I’ll share with you what I ate on Thursday below, but you might notice I eat “weird” compared to other people…
I interact with a lot of low carbers online through Facebook, our Low Carb Challenge Group, low carb blogs and Twitter.
Most of them seem to cook A LOT, and share awesome low carb recipes, even. I rarely cook at all, although I keep threatening to get back in the kitchen (lol). Back when I had a big family to feed I cooked every day, and when my two kids were younger too of course.
But it’s different when you’re single and usually eating alone. My kids are 16 and 21 now. And while I do eat with the kids sometimes, more often than not they’re in and out or cooking for themselves – or we’re all eating on a different schedule. So for the most part I’m eating by myself.
It’s hard to get motivated to shop, plan, prepare and cook big meals. Especially when I’d rather spend my “spare time” at the gym, hanging out with friends, or watching a good movie. 😀 That said, I can definitely see the benefit of cooking dishes that keep well and would make good “leftovers” for easy low carb meals. Maybe soon…
Back to my Low Carb Food Journal for Thursday (yesterday) – I skipped breakfast and just had coffee in the morning. Then for lunch I had the Chicken BLT Cobb Salad from Wendy’s that I had picked up the night before:
This one ^ had been sitting in my refrigerator for about 36 hours when I took that picture. They keep well, so I always order a couple to keep handy at home if I happen to go to Wendy’s. Their Chicken BLT Cobb Salad is 10 net carbs total, which includes two packets of Avocado Ranch Dressing.
About an hour after lunch I headed to the gym and did an intense workout for about 40 minutes. That felt awesome! I usually do over an hour, but I had just worked out hard the night before (including weights for my arms) so I took it a little easier.
For dinner I grabbed a Low Carb ThickBurger from Hardee’s, which is just a little TOO convenient for me, LOL. It was soooo good. I ordered it with no tomato, no ketchup, no onion – so just lots of fresh lettuce, a big juicy burger, mayo, mustard & pickle. No bun of course. 😉
Late last night I got hungry again, so I made some tuna salad to eat while I watched a movie. I also had fried pork skins, string cheese and a few almonds to go with it. Not really what I was in the mood for, but it’s what I had in the house – and it was super low carb. (That would have been a good time to have some yummy low carb leftovers on hand! LOL.) Ah well…
So yeah, two of three meals were “fast food” and the other was a quick convenient “no-cook meal” at home. I do like how EASY it is to eat low carb though, even if you are eating out or eating alone. It’s just simple – no mess, no fuss. And it works. 🙂

I love seeing your quick low carb meals and how you show that doing low carb is easy on the go. I have to cook due to our family size and try to prep my meals on the weekends, and I enjoy cooking for the most part, but I would by lying if I said I don’t look forward to the day when it’s just the 2 of us again and we can eat out all the time without it costing a fortune π Eating on the go does not have to mean eating unhealthy.

Thank you Samantha! This is the reason I chose Low Carb when I originally needed to lose weight and change my eating habits. I didn’t actually have to change my “habits” – only what I ordered or what I made at home. π I can still eat out, grab fast food on the go, and keep it simple in the kitchen.
Anything that required me to cook, or eat every meal at home (pre-made meals for example) would have never worked for me. LOL. π

I just want to say that you have no idea how much I need and enjoy your posts. I stay in three different cities a week due to work commitments, school schedule and clinicals, one house of which does not possess a stove, so eating out is unfortunately my only feasible option for right now. I have been trying to start and maintain a low carb way of life for the past few months and your posts have helped me make the plunge once and for all now that I see there are such a wide array of dining out options to fit my needs. Thank you for the inspiration!

I’m so glad to hear that, Alisha! π It can be really tough to stick to a specific diet in that kind of situation (I know from personal experience!). That’s what I enjoy so much about eating low carb. It’s just super easy. π *cheers*

Hi Betty,
I often just snack in the mornings – things like a slice of colby jack or mild cheddar cheese off the block with pecan halves. Pecans are a great snack because they are very low carb and very high fat, and easy to take with you ANYwhere. π
You can also make up little individual crustless breakfast quiches, which are great to grab on the go or enjoy for a quick breakfast.
