When I first start back eating low carb, I always like to keep it super simple. I mentioned I really need to go grocery shopping. But when I try to fit in grocery shopping, meal planning, meal preparation, yada yada yada – I get overwhelmed, and it can be easy to just grab something to eat and get on with my day.
I’m not one to spend tons of time in the kitchen anyway, which I’m sure you’ve already figured out. 😉 LOL.
I weighed in this morning at 162.6, and while that’s only a pound or so lost (I was fluctuating up to 164) it happened in just 48 hours – and I can really feel even that small difference! Honestly, it’s just nice to see the scales moving again. And of course the first weight to come off is water weight – right around the midsection – which feels GREAT.
With hardly anything in the house (low carb, at least) I made a quick breakfast of Vienna sausages and cheese – after my usual morning coffee of course:
Around lunch I headed to the gym and did an intense 45 minute workout on the treadmill with a steep incline. On the way home I grabbed a Low Carb ThickBurger from Hardee’s (I order it without ketchup, tomatoes or onions – which cuts out most of the carb count).
Then for dinner I ordered out from Applebees “Carside To Go” and got the Shrimp & Parmesan Sirloin. I had a side Caesar Salad (with no croutons) in place of the potatoes:
My best guess on the total carb count for that take-out meal would be 10 Net Carbs. Of course, that includes the carrots – which I didn’t eat. My Great Dane ate them. 😀
I was only able to eat about half of all that food, so I had the other half later at night (along with the rest of the salad):
What about you? What are YOU eating this week? 😀

hey Lyn, happy New Year,
Well I’ve been lurking behind the bushes, watching you all last year trying to lose weight, on this so called low carbs diet, but trouble is, if you had a Niche working like your diet what would you do.
Right you would dump it, and try something new, well stop and think about it for a moment:
You are a very beautiful Lady and I mean Lady in the true sense of the word, and I hate to see you torturing your Body , on the diet one day maybe 3 or 4 then crash, start again, crash oh what the Hec lets go to mace’s, then try telling us all how you can beat this and that, I’m Praying for you sweetie, because I’m very concerned.
Garry Woods.

I appreciate your concern, Garry. I actually started eating low carb almost two years ago (it’ll be two years in April). And I lost more than my goal weight right off the bat – 25 pounds, instead of the 20 I was shooting for.
Did I “fall off the wagon?” Yes. I’m human. And what happened to me last year, I wouldn’t wish on anyone. I talked about it openly, but only briefly, in this post:

There’s no way I would want to disclose the depth of what all I went through in 2012 publicly, but suffice it to say… I survived it, and I was able to do it without getting back up to my original weight. π To me, that’s a huge plus!
My weight loss stalled this past Fall due to a prescription I have been on since I got sick last summer – which has lead to an upcoming surgery, which will get me off the meds finally. I aim to be in the best physical health and shape I can when I go in for surgery, to aid in healing & recovery.
My “so called diet” is my preferred Way Of Eating, and it is not flawed. I am. I’m human. And to answer your question, ditching something because it’s your fault it’s not working – is a surefire way to trade it in for another failure. The solution isn’t to quit, it’s to fix the problem.
I’m back on track, losing weight and feeling GREAT! π *cheers*

p.s. Nobody’s perfect. HIGH FIVE to anyone who is making an effort to improve their quality of life… and their self! π Don’t ever let anyone bring you down, or make you feel like a failure. Life can be tough sometimes. Pick yourself up, dust yourself off, and rock on!
