Yesterday I made a quick trip to the grocery store to grab some quick & easy foods. It’s really tough starting back on the low carb diet when you have nothing but “junk” in the house. 😛
The one thing I really love about the Low Carb Diet is that I don’t have to change my (bad) habits. I can still enjoy take-out, processed/precooked EASY food products, restaurants, room service & snacks. And eat as much as I please, even, of the *right* foods. 😉 This is MUCH easier than trying to change your habits or your usual routine, which makes the low carb diet easier to stick to than most…
This week I’m keeping it SIMPLE, with quick & easy foods, to help me STAY on track. Because often, having to cook makes me just want to go out and get something. Even if you like to cook (which is so not me) you should always keep easy low carb meals & snacks on hand. It helps you avoid grabbing something else “on the go” – and really comes in handy when you find yourself too tired, or just not inspired, to create a full-blown meal.

LOL – yes, I’m the “freezer food” queen. I should be embarrassed to share that picture with you, haha. But let’s be honest. We’re not all Holly Homemaker here. Some of us have busy schedules, or just have better things to do than spend so much time in the kitchen!
And like I said, even if you LOVE to cook, having easy low carb foods on hand really helps out on the days you just don’t feel like cooking. So hopefully my picks here will give you some ideas to keep on hand.
My low carb grocery list was actually not “a list” at all. I had an appointment in town, and after that I called in a take-out order, then decided… you know what, I can run in the store real quick and make a super quick 15 minute run-through and grab some groceries. I enjoy shopping even less than I enjoy cooking. 🙂

- Frozen Broccoli
- Frozen Green Beans & Almonds
- PreCooked Grilled Chicken Strips
- String Cheese & Colby Jack Cheese Sticks
- Mixed Nuts
- Breyers CarbSmart Ice Cream Bars
- Tyson Pot Roast w/Gravy
- Frozen Tilapia & Salmon
- Tyson Breakfast Sausage Crumbles (precooked)
- Bacon & Hamburger Meat
- Deli Sliced Turkey
My goal? One skillet or five-minute meals. LOL.
Oh – and I mentioned I had take out yesterday for lunch. I’ll show you my recent meals & food pictures in my next post, but below is what I had for lunch when I got home from getting groceries. Which was awesome, because who wants to cook when you’ve just been shopping and put groceries away. 😛 I went through Applebee’s carside-to-go and got an order of classic bone-in wings and a side order of spinach artichoke dip – which I just ate a few spoonfuls of with my wings. YUM!

I am so tired of all the BS that all these diets dish out to all us people trying our hearts out to stick to, well i’m not laughing I’m really Crying my eyes out because I fell off the wagon 4 times, but now I’m back on and have been for a full week now, and yes its the Atkins Diet, Low Carbs just like you Lynn, its been tough going back again and cleaning out all the Junk, but you not the only Freezer Queen I’m also the Freezer King, Apart from what I grow fresh myself, which this year will be most, this year also Wild Game, and Poultry.
