In my last post, No Excuses! It’s Time to Start Working Out, I mentioned that I’d been off track with healthy eating for several months.
That was NOT a pleasant experience. I know it happens to all of us, but do you ever ask yourself WHY when it feels so miserable to gain weight or feel bloated – and just feel icky in general?? Geez.
I think I lost sight of my goal there for awhile – my inspiration for looking and feeling better. And also reverted to old (bad) habits when several life challenges hit all at once.
Oh well. What’s done is done, right? The only thing I really want to focus on now is the day at hand, and keeping myself on track. Actually, just focusing on the MEAL at hand, one meal at a time. 😉
And that’s how it goes. You wake up every day and re-commit yourself to the decision to be happier and healthier. Every single meal or snack has to be a conscious choice: choosing to feel and look your best. Period.
In my next post I’ll share some of my meal choices with you over the last week or so. And by the way, I started back last Monday… and lost four pounds in the first four days! That was a nice weigh-in on Friday morning. 😀
Here is just one example though – and this was a meal I had at one of my favorite little coffee shops that has the most delicious muffins and pastas (lol):
I chose to have ham & eggs (no cheese) with a side of chicken salad. YUM!
This is a coffee shop where I work for a few hours once a week, so it was a real challenge to pass up some of their pastries and such. The drink beside the plate is an Iced Coffee, with no cream and sugar free vanilla syrup.
Interestingly, this month marks one year since I started this blog. That hit me while I was “off track” and really inspired me to get back to FEELING GREAT like I did when I started this blog last June! I had started the low carb diet back in April of last year, then the blog two months later (and 15 pounds lighter)…
Like I said, I’ll share more low carb food photos & ideas in my next posts – along with a trip to Olive Garden where yes, I did manage to eat a delicious low carb meal! 😉
I agree, ham and eggs plus some chicken salad is darn yummy! Once we begin the good habit of really watching our food intake as well as exercising regularly, it becomes quite simple and even fun. Your blog helps tremendously, thanks. Each day, we all can feel victorious and one step closer to a healthier, more energetic and slimmer you.
So true Jenny – and that sense of accomplishment really feeds my motivation. The better I do, the better I feel, and the more I want to continue! *cheers*

For breakfast today I had a leftover grilled chicken breast with string cheese. Last night for dinner I had the other piece of grilled chicken with steamed broccoli & cauliflower. Just trying to keep it real simple to start. Right now I’m craving tuna salad on top of cold slices of cucumber. π

Hi Jennifer! No, not giving up dairy – just being REAL picky about where I get my 20 net carbs each day. I don’t mind my iced coffee without cream, and would much rather “spend” my carbs on extra veggies later in the day. π
I’d be interested in what you found at Olive Garden that was low carb. I’ve never been to one, and there’s a new one opening near me.

Thanks for sharing this Lynn – I’ve been off track lately too but between you and Angie you’re bringing me back and I am SO grateful for that. Am so happy as I sent 4lbs packing on their way this week too just need to be sure they don’t find their way back. I NEED to make this page a check in everyday so I know what to eat!
Congrats on the 4 pounds lost! It’s so easy to yo-yo, and I’ve decided I do NOT want my bathroom scale to be my personal “lost and found department” LOL. π I am really feeling inspired after getting back on track and being reminded how GREAT it feels when I eat good.
