Serious Loaded Baked Potato Vibes 😍 Keto Style!
When I saw this recipe on Instagram, I knew I had to make it.
And I have all the ingredients on hand!
It would be very easy to modify with any creative swaps you prefer too, so this base keto casserole recipe will be great to add to your weekly meal plan rotation.
My daughter will prefer it with broccoli for example, which is a simple swap. 🥦
I’ll probably leave out the ranch, and maybe add roasted tomatoes. Some chopped green & red pepper and/or diced onion would be great additions too! 🧅 🌶 🫑 🍅
Keto Loaded FauxTato Casserole Recipe

Ingredients:
One head of cauliflower
6oz cream cheese
1/2 cup sour cream
2 cooked chicken thighs, chopped
5 slices cooked bacon
1 cup shredded cheddar
1 cup shredded mozzarella
FlavorGod ranch seasoning
* I prefer Oh My Spice flavored seasonings
Salt & pepper
📝 NOTES: I have frozen cauliflower florets and canned chicken on hand, so those should make good swaps – and save me a trip to the store. 😉 I’ll probably shred colby jack cheese instead of using cheddar too, just out of preference. You can easily substitute or leave out anything you don’t like, and get creative with your add-ins! 🥦 🧅 🌶 🫑 🍅
Instructions:
Steam cauliflower and set aside. Cook bacon and set aside. In a bowl, mix cream cheese, sour cream, cheeses, and seasoning.
In a pie dish, layer cauliflower florets, cheese mixture, and chicken. Top with crumbled bacon, more seasoning and bake at 425 for 20 minutes.
I might double the chicken and make this a more hearty casserole style dish. Romie made “chips” using a low carb flatbread (or low carb tortillas would work too):
“I just sprayed a sheet of the flatbread with avocado oil, baked at 350 for 5 minutes and then broke it into chip sized pieces. It had loaded baked potato dip vibes! I am seriously obsessed.”

I know my daughter will love it. π She’s not a fan of cauliflower! I love how versatile this recipe is as a base – just swap out the proteins or sub/add any vegetables or flavors. And so easy to make!
