This, my friends, is not low carb food. This is comfort food. 😉
Yesterday I talked about feeling fat, and how I’ve been indulging lately – and totally off track with my low carb diet. That’s mostly because I’ve had an incredibly stressful week, which I know is no excuse. Eating low carb is a lifestyle choice, not a “yo-yo diet”. I know this.
Like I said yesterday, I’m getting back on track this week. But this weekend I decided to take some time off, get out of the house, and make one of my favorite old comfort foods: cornbread.
This is a southern thing, of course, and it’s best all mashed up with ham and black eyed peas – or pinto beans, my second favorite!

Being from Tennessee, cornbread is sort of a specialty of mine. I make traditional southern cornbread (not the sweet kind), then add in corn and red & green peppers along with a couple cups of shredded cheese.
For an extra kick you could add in pepperjack cheese and/or jalapenos. Not that you’ll be making it. Just sayin’.
I topped off dinner with a Dove chocolate. And on the inside of the wrapper it said “Laugh Whenever Possible,” which made me smile. It was a nice ending to a great weekend.
I’m not telling you all this to make you jealous of my cheat. Especially if you’re struggling right now – sorry about that. I’m just sharing all with you. The good, the bad, and the beautiful cornbread. 😉
On a good note, I did get some exercise this weekend. And I am going to sign up for a membership at Curves this week. I SO enjoyed my free pass last week, and I’m definitely going to continue the workouts.
I’ll wake up on Monday and scramble up some eggs for breakfast. Because feeling miserable (bloated, etc) on top of being stressed… is really kind of ridiculous. 😛

By the way, I know I tell you guys all the time that “I don’t cook”. One of the reasons is because what I DO cook is all southern dishes. Things that are deep fried, smothered in cheese, covered in gravy, etc. It’s been a real shift for me to learn how to cook all over again, which is why I often go with the easier low carb meals. And of course, get a lot of low carb take-out, lol. But I’ve been inspired lately to start cooking again, and look forward to sharing some fun dishes with you as I try them!
I have a nice new grill sitting out on the back deck too, just waiting to serve up some delicious low carb meals! This year, I am finally going to learn how to use it. 😀

Did you just hear my thoughts as well? Then I came and opened my emails and found this in my inbox!! I’ve just looked into the pantry to get something to eat, it’s mid afternoon here in New Zealand, and I thought I could splurge on something. Problem the cupboards are bare – next best thing a bowl of small cherry tomatoes. I know it’s not totally legit but hey better thank biscuits or cakes or bread or sweets!! Sometimes I think twice about sharing my weak moments, but you know what? We’re all human. And I love that we’re all in this together – imperfect, and all! – sharing our highs and lows.

I grew up in Arkansas and live in Tennessee now, so I hear you on the cornbread! But II don’t crave the corn-based stuff since I started making the almond meal version over at The LowCarbist. http://www.lowcarbist.com/2009/02/green-onion-cornbread/ Not the same flavor, but he’s got that texture right! (Can you tell I wish I could say it’s my recipe? π )

Do you think because of all that working out you did last week you were craving more carbs? I think you said you went five times? I would think that much activity would need an increase in carbs if you weren’t working out before?
Comfort foods to me are mashed potatoes and gravy, sheppard’s pie, pasta like macaroni and cheese but now I kinda don’t even want to call them ‘comfort foods’ because I know they get me into trouble with my weight and that’s not very ‘comfortable’! lol
An update from me:
I’ve been really slack. Though I have been extremely over-indulging I haven’t been counting ANY carbs and I’ve been eating double-chocolate donuts from Tim Horton’s on a pretty regular basis (think about 4 times a week, lol). I also have been bad with whipped cream in my sugarless coffee because it’s not TOO bad on carbs if you don’t go crazy with it, but I’ve been going crazy with it.
So – today I’ve been VERY good. I’m at 197lbs and my next goal is 190 so it’s time to get serious again (final goal about 165-170). Today I also had scrambled eggs, then egg&sausage at Mc.Donalds (no bun), then I fried up garlic, asparagus, mushrooms and green peppers and added goat’s cheese on top.
For fitness last week I joined the GYM (yikes!), I am back to hula hooping (yay!) and I plan to go for walks… I even made a spreadsheet of a schedule I’ll try to follow (serious stuff, lol).
So glad for your blog cause it’s good to fall off track with people, then you have someone to get back on track with π

Unfortunately I can’t blame the workouts, lol. I “fell off the wagon” back in August when we were all in Atlanta. I was doing GREAT up till then, and even the first day or so there. Then we went out for sushi. π That was the beginning of the downward spiral for me, lol.
I need to get a hula hoop! Those were a blast when I was a kid!! How’s it going at the gym? Oh, and about sugar… the fact in my next post just might inspire you. I know it did me!! Ack! π

I’m a southerner that reallllllly misses her cornbread. I have come up with a pretty good alternative with the help of Laura Dolson. This is her recipe for Flax-seed Focaccia Bread. I found that if I cook it in a cast iron muffin pan the texture is a lot like cornbread! Yum. Be sure to get GOLDEN flax seed meal and I put a little garlic powder in mine, not sweetner. Sometimes you have to give in to your cravings as you will never stick to the lifestyle change. I think my biggest problem is eating comfort food or just carbs period. I’ve never been much of a veggie or fruit eater. My favorite thing to eat is bread. Oh and I love corn bread don’t make it that often but when I do I eat a ton of it.

The thing is, I never crave this stuff when I am eating low carb. At all. But once you “fall off the wagon” the cravings come right back. Ugh!
Like you, I was never a fruit eater. I do love my veggies though. π Fortunately fruit is not a requirement on the low carb diet, but I do eat berries occasionally.
