As I mentioned in my recent post about Ketosis, I have been “off the wagon” for a few weeks. And as promised, I started back yesterday – on Monday, January 2nd. 🙂
I started back at 158 pounds. That’s about 9 pounds higher than my lowest weight (which only lasted a day, lol) and around ~5 pounds higher than where I’d been holding steady for so long.
Not so bad. And I’m certainly not punishing myself over it. I still have a good 20 pounds off that I have never gained back, and that “minus 20lbs” feels awesome!!
Now that I have made it through some emotional ups & downs, and come out on the other side, I’m ready to kick this low carb diet into full gear again – and get back to working out & toning up! 😉
Here are my Low Carb Foods for Day One:
Breakfast was two scrambled eggs with a couple slices of ham. I usually make my eggs with cheese, but I left that off this time:
For lunch, I got busy and didn’t have time to stop and cook, so I heated up about five pieces of that same ham and finished it off. It was a wonderful ham, left over from the holidays, but I’ve had enough of it and I was ready to see it go. LOL.
I did manage to cook a quick dinner, albeit a bit late in the evening, but I made a hamburger steak and some canned green beans. I topped that hamburger steak with mayonnaise, by the way. Everything’s better with mayo! LOL
Are you back on the low carb diet, or maybe you were really good and stuck it out through the holidays. 😉 That WAS my intention, but it simply didn’t happen. No worries. I’m a good 24 hours in and already feeling fabulous for it!

Glad to here your back on low carb! I am as well, I had a week over christmas where I stuffed myself with sugar and ended up putting 7 lbs back on, but as of today I am officially back at my lowest of 50lb lost. Just gotta stick to low carb and im sure more will melt off.

Awesome that you are already back to your lowest weight! It stinks to see those pounds back on the scale, and it really motivated me to start back without ANY hesitation. LOL. Here’s to a low carb new year! π *cheers*

I’m back on the diet, too, started on the 1st.
All that looks yummy except the green beans, lol. I had hamburger steak yesterday topped with fried onions, green peppers, mushroom, spinach and cream cheese – it was delicious!
That’s the thing I love about this diet – once you get back into it the food is SO GOOD, filling and makes you feel good. Compare that to the high-carb crap I was eating for a couple of weeks it really isn’t that satisfying or filling and it made me tired and cranky – crazy how fast we can get consumed with eating it, though.
Lynn Terry says
It IS crazy. I agree. I like green beans okay. I’m trying to just eat up what’s left in the house so I can go out and do a real shopping trip. Not looking forward to that lol – I so dislike shopping. π Your hamburger steak sounds so much better than mine! I was cooking for one, and cooking late (9pm I think) so I was just in it to get it done and get to bed. LOL.

I found you through Paula and Wanda’s blog. I have been seriously wondering how I was going to take off these 20 pounds I’ve gained since having kids and starting my internet business…but not anymore!! It just seemed impossible to work out at the gym on a regular basis, and I’m not a runner. Today was my first day on the keto diet you introduced me to, so THANKS! I am off to the grocery store to buy some more foods :). My starting stats are: 5’1″ and 133 pounds.

Oh the holidays! Ha Ha. I am pretty dang sure I gained a few LBS too… but it’s because I eat such GINORMOUS portions of seafood and meat! Ah ha ha… Oh well, I ain’t sweating the small stuff, just loving the food! π
Good luck! Your meals look DELISH! Have you ever tried Heinz Sugar Free Ketchup? Now EVERYTHING tastes better with that condiment! π
Lynn Terry says
I will have to try it. I haven’t been able to find it at all around here (yet) but I keep my eyes out for it. π If you’re eating low carb by the way, portions shouldn’t be a big deal – assuming you’re eating super clean (ie very low carb, real food).

Hi Lynn, I was just referred to your blog through a friend. Great stuff! While I’ve been forced into gluten free eating for the last 15 years (celiac’s disease), I do tend to be a bit heavy on the carbs. There are so many tempting gluten free baked goods available to me, and that seems to be my downfall. I tend to do a similar breakfast to what you showed, with maybe bacon or canadian bacon in place of the ham and with some fresh salsa and avacado with the eggs… π I’ve managed lately to limit my baked good carbs that I usually eat in the evening but having a glass of wine — that’s seemed to displace the craving or hunger that I might try to fill around that time.
See ya around!
Jason
