No More Eggs Please! 🙄 Keto Food Diary…


Keto SnacksToday’s food diary is just eggs, and more eggs, and coffee.

This is why I haven’t been writing daily food diaries lately, lol – ugh. 🙄

I’ve mostly been eating the same thing over and over. I’ve been through lots of eggs (TEN yesterday in fact), plus going through Atkins frozen meals I stocked up on, and the foods I had here to review – just keeping it simple & easy.

I shared a lot of those low carb convenience foods in my last post. I simply haven’t felt like cooking or shopping or even eating really, so I’m getting by on the easy stuff.

On that topic though, I did a video about low carb breakfast ideas on the topic of “Anything But Eggs!” that you’ll probably enjoy. πŸ™‚

The delicious muffins, pancakes & waffles I mentioned all use the same recipe in this post. The low carb cereal I love is on Amazon: It’s out of stock but you can sign up for alerts. It’s SO good! And this is the Milkadamia milk I love:

My Low Carb Meals Yesterday

Yesterday I made cheesy eggs – twice.

Five eggs each time for a total of TEN eggs yesterday.


Other than that I did have some low carb NUI Peanut Butter Cookies in the afternoon with a coffee while I was working.

Geez, my “goals” in MyFitnessPal are way off lol. I hadn’t even noticed that…

I pretty much ignore goals anyway and just stick to 20 net carbs max and 70% fat minimum – standard keto macros – and keep it THAT simple.

I need to get back to publishing daily food diaries because that held me more accountable to at least eat something worth sharing with you. πŸ™‚

I was actually going back through my years worth of food diary archives here for some low carb meal inspiration. I look forward to bringing those back in future food diaries…

Fresh motivation & inspiration would be great… so I’m thinking of hosting a KISS KETO Challenge through the end of the year, meaning: Keep It Super Simple Keto meals style challenge. What do you think? πŸ™‚

Now I can’t even look at another scrambled egg, lol – so I’m going to get creative with some simple recipes for those eggs!

    I’d love to be in on that challenge I need a change of how I’m doing things. I’m doing good, but simple would clear up a lot of grey areas πŸ™‚ I love eggs but I know they get old sometimes πŸ™‚ Have a great day.

      I’m needing a change too Amy, and I think mixing things up – ie going back to super simple! – would be a NICE change. Clear up those “grey areas” like you said. πŸ˜‰

      I’m off to look through my favorite recipes that call for eggs lol. I think the muffins and pancakes will be first on my list – because those are so easy and so delicious!

    I just made chicken fajita slow cooker soup. Very good and easy. Love a hot meal to come to. Our store sell Sami’s low carb bread, so toasted cheese or blts are handy. I am sick of cauliflower and broccoli though. Yoplait makes a yogurt called yq, only 2 carbs per cup. Add some berries and nuts for breakfast. There is a refrigerator product called “Crack an Egg”. Makes a good scramble. Only 2-3 carbs. All these things work good for us in our motorhome.

    I made a simple egg, cheese, broccoli, spinach casserole tonight…add 9 eggs, 1/2c sour cream, 1 c cheddar cheese, 1 c heavy cream, paprika, salt, pepper, red pepper flakes. Quite good. 30 mins at 350.
