Today’s food diary is just eggs, and more eggs, and coffee.
This is why I haven’t been writing daily food diaries lately, lol – ugh. 🙄
I’ve mostly been eating the same thing over and over. I’ve been through lots of eggs (TEN yesterday in fact), plus going through Atkins frozen meals I stocked up on, and the foods I had here to review – just keeping it simple & easy.
I shared a lot of those low carb convenience foods in my last post. I simply haven’t felt like cooking or shopping or even eating really, so I’m getting by on the easy stuff.
On that topic though, I did a video about low carb breakfast ideas on the topic of “Anything But Eggs!” that you’ll probably enjoy. 🙂

My Low Carb Meals Yesterday
Yesterday I made cheesy eggs – twice.
Five eggs each time for a total of TEN eggs yesterday.
Other than that I did have some low carb NUI Peanut Butter Cookies in the afternoon with a coffee while I was working.

Geez, my “goals” in MyFitnessPal are way off lol. I hadn’t even noticed that…
I pretty much ignore goals anyway and just stick to 20 net carbs max and 70% fat minimum – standard keto macros – and keep it THAT simple.

I just made chicken fajita slow cooker soup. Very good and easy. Love a hot meal to come to. Our store sell Sami’s low carb bread, so toasted cheese or blts are handy. I am sick of cauliflower and broccoli though. Yoplait makes a yogurt called yq, only 2 carbs per cup. Add some berries and nuts for breakfast. There is a refrigerator product called “Crack an Egg”. Makes a good scramble. Only 2-3 carbs. All these things work good for us in our motorhome.

Iβm in for a challenge! Two months Keto and enjoying keeping engaged in activities.
I made a simple egg, cheese, broccoli, spinach casserole tonight…add 9 eggs, 1/2c sour cream, 1 c cheddar cheese, 1 c heavy cream, paprika, salt, pepper, red pepper flakes. Quite good. 30 mins at 350.
Haha and 1 c cooked fresh broccoli, 2 c baby spinach:)
