In today’s food diary, which is for last Friday (January 26th), I had waffles for breakfast and cookies for dinner 🙂 with a nice healthy Keto Meal in between!
I usually eat pretty simple, to the point that a few readers have even complained about my “boring eggs & pecans” (lol) 😛 but I’ve been testing some new recipes & creations with interesting low carb foods lately…
Here’s what I ate last Friday, and how I logged it. Hopefully this will give you some ideas for mixing things up in your own kitchen!;)
My Low Carb Meals on Friday
I mentioned recently that I’ve been playing around with a Low Carb Muffins Recipe that also makes AMAZING waffles and pancakes.
What makes this recipe so interesting is that the main ingredient is nut butter! 🙂
As you can see they turn out golden brown, thick and fluffy:
For this breakfast I tried another Legendary Foods Nut Butter and made Peanut Butter Chocolate Chip waffles. 🙂

The Peanut Butter Chocolate Chip waffles turned out just as fluffy & delicious as the other waffles I’ve made with this same recipe. My favorites so far though is their Apple Pie, Blueberry Cinnamon Bun and the Pecan Pie Nut Butter.
I topped them with toasted pecans, real butter and sugar free syrup. Yum! ♥
The waffles came out to 322 calories and 4.5 net carbs each, but let me just say: they really stick with ya! That’s a breakfast that will hold you over for awhile, lol. 😉

For lunch: Spinach & Feta Chicken Sausage browned crisp, and two eggs fried in real butter over a bed of fresh baby spinach leaves.
I like to drizzle what’s left of the hot butter over my spinach too. 🙂
Baking Low Carb Cookies
I had a package of Good Dee’s Chocolate Chip Cookie Mix so I decided to make up a batch of cookies… and add Pili Nuts. 🙂
I love adding nuts to low carb cookie recipes or mixes because it makes a nice chunky cookie, and sometimes I’ll use salted macadamia or salted pili nuts for the “sweet & salty” combo.
You can also use pecans or walnuts. It also helps make them less sweet, and you get less of that “tingling cooling effect” with sugar free cookies when you add nuts.;)

Thank you, Jordan – and YES, exactly! π Plus it adds healthy fats and lots of nutrients, as the Pili Nuts I get are still being wild harvested from volcanic soil (and extremely nutrient dense!). Not to mention delicious. π I love a soft buttery nut crunch!
