I’ve just added a new category here titled Low Carb Daily Journals. I thought it would be a good idea to share my daily food & exercise journal with you here – both for accountability, and for sharing low carb food ideas you can use.
I’m hoping you’ll join me on the accountability part, and comment on these entries with your own food & exercise journal for the day. That way we can compare notes, share ideas & keep each other motivated! 🙂

So I’ll start with yesterday’s eats, but in the future I’ll try to post at the end of each day. I’m looking forward to hearing about your day too, and sharing some ideas! Breakfast: 2 Low Carb Banana Bread Muffins
On Tuesday night I baked up the Low Carb Banana Bread (an easy mix from LC Foods) in my muffin pan, the same way I made the pretty rolls with their low carb bread mix. It was actually just like the low carb rolls, except banana flavored – same texture and all. They were good (especially warm and smeared with butter!) and they’re extremely low carb, so I’ll eat them – but they don’t rank as a personal favorite.
Lunch at Cathay Asian Bistro with a friend
For lunch I met my friend Erica at the Cathay Asian Bistro in Murfreesboro, TN. This was a great little place with a nice atmosphere, super quick service, and ridiculously low prices. They even offer all-you-can-eat Sushi for only 9.95 during lunch! It’s too bad I don’t eat Sushi (or rice) anymore – LOL.
I ordered the Salmon, and instead of fried rice I got steamed vegetables:
The vegetables were especially good! It included asparagus, zucchini, baby corn, thinly sliced carrots and broccoli.
A great alternative to fried rice. 😉
This is one of the tricks to eating out on a low carb diet – making smart exchanges for the usual carbs. Like when I went to Red Lobster on Saturday night – the meal I wanted came “over a bed of mashed potatoes” so I ordered it “over broccoli” instead.
Dinner at a Local Buffet
This place is just down the road from my house and it’s crazy cheap. Seriously, $4 for all-you-can-eat lunch and $6 for all-you-can-eat dinner. I usually get a fresh cooked plate of meat & veggies at the hibachi grill. This is pretty much my standby: steak, shrimp, mushrooms & zucchini:
Wednesday Exercise:
I have to confess that I did not get my exercise in yesterday.
I did get a brisk half hour walk in the day before, in the beautiful sunshine, and I’m going to work out at home today. We have a nasty storm – and another cold front – rolling in this morning. I’m thinking I’ll get on the Gazelle and give that a whirl today. It’s a great full body workout, and we rearranged our TV’s this week and I don’t yet have a DVD player hooked back up to do the Zumba DVD…

Oh yeah! The Cathay Asian Bistro is awesome, plus our daughter and her family go wild for the hibachi grill. You should have seen our 5yr old grand-dtr mimic the hibachi chef with all his crazy knife skills – except she used her fork and spoon!! The chef literally roared with laughter (they’re usually so cool, you know) as he watched her trying to mimic him. It was hysterical! Haven’t tried their sushi lunch special though – thanks for the tip. I’ll have to cheat on my carbs a little one day and try the special! Love the Daily Journal idea!!

It really was a nice little place! I will have to try their hibachi next time I go. π I was SO tempted on the Sushi. That’s just a crazy good deal! But I’m really working hard at staying on track lately -lol.

Wow. Great idea. This morning is starting out good. Had one egg, one egg white, 1 piece canadian bacon, 1 piece cheese, 2 cups coffee with sugar free french vanilla syrup and some cream. I am trying to take it one meal at a time. Every day this week my “Susan” has come out. I really don’t like her. She eats EVERYTHING. Sometimes I think I need an exorcist to get rid of her LOL. Wishing everyone a lowcarbilicious day π

LOL I can so relate π That is the very reason I thought an accountability post every day would be beneficial! One meal at a time (one *choice* at a time) is a great strategy.
I had a couple more of the banana bread muffins for breakfast this morning, will probably make eggs for lunch (because they’re easy) and am eating out tonight. I still have to get my workout in today too. I’ll be back with a full post on it – and look forward to hearing about your day as well! (If you comment as Susan, I’ll know how the day went! LOL)

Tell us more about what you think of the Gazelle.
My dad uses one and loves it. I have a version of the Gazelle that is very similar that I purchased a few years before the Gazelle became popular.

I have had two GREAT days. The “one meal at a time” strategy is doing something for me. On Thursday I finished out the day with a salad and some soup I made with just chicken stock, chicken, and celery. Dinner was some sausage patties and some cucumbers. Friday was basically the same, but I feel good. A little more energy. Not having the constant hunger I have when I am eating bread, donuts, cake, ho-hos……..you know what I mean π On to day 3. I am here looking in on you to get some meal ideas π Wishing you a great weekend.

Glad you’re on a roll. Same here, and the scales are showing it! I love when they move in this direction. π
