I dirtied exactly ONE skillet in two full days of low carb eating, lol.
Call that lazy or smart, but either way at least there weren’t many dishes to do! 😛
That’s mostly because I’ve been home alone, eating low carb for one, and super busy with work this week.
Then there was “date night” last night, which was a beautifully delicious low carb dinner – with no cooking! 🙂
You can see what I ate on Wednesday here too, which wasn’t much (only 10 net carbs) because I had a full day between working and hiking.
I’m still pondering “my find” from that post ^ too, btw.;)
I hope these food diaries and low carb meal ideas prove helpful to you when you need something quick & easy, or you’re looking for ways to mix things up a bit.
My Low Carb Meals on Thursday
For breakfast I had my favorite healthy LCHF food combo: 1/2 cup (60 grams) of pecan pieces, 1/4 cup Daisy brand cottage cheese and 4 sliced strawberries.
It’s one of my low carb staples because it’s SO easy, and because it has perfect LCHF Macros: 5 net carbs, 85% healthy fat.
I also finished some sausage & fried eggs I had leftover from McDonald’s later that morning. There wasn’t much of it, and it wasn’t worth taking a picture of (lol).
For lunch I made a plate of delicious low carb foods: strawberries, pecans, Lily’s Sugar Free Chocolate and peanut butter. Yum! 🙂
For dinner I made a simple plate of cheesy eggs: 4 eggs scrambled in real butter with colby jack cheese (cubed off the block):

I had a beautiful low carb breakfast. 🙂
I ate two Coconut Smart Cakes (which are zero net carbs!) topped with kosher cream cheese, fresh strawberries and pecan pieces:

I had a super busy work day, so I just grabbed 1/2 cup (60 grams) of pecan halves to eat at my desk for lunch:
I met Aaron for dinner and enjoyed another BEAUTIFUL meal of Porchetta (Italian Pork Roast, super tender & stuffed with herbs) with asparagus and broccoli.
I spread a pat of real butter over the herb-roasted pork steak, making it even MORE rich & delicious!
I was only able to eat about half of that, so I brought the other half home and had it for my lunch today. 🙂

Lynn, I just love reading your blogs (when I get the time) you are so inspiring. I lost a total of 88lbs. in abut a year and it’s been about a year since that and the scales have began to go the wrong way. I know I haven’t been as strict with myself as I once was and need to get my head back in the game because I still have about 30 lbs left to loose. What advise can you give me?

Hi Sarah,
First, congrats on your amazing weight loss!! π
The best advice I can offer is to go back to the basics, eat super simple, track & log everything you eat and do: 20 net carbs max, 70% fat minimum. That will get your body back in ketosis and back in fat burning mode. π
And if you start now… you’ll look AMAZING for the holidays!!
