As promised, I’m getting back to my Daily Food Diaries, and sharing my MyFitnessPal logs with you. 🙂
It’s so late on Friday now… that it’s practically Saturday, lol. But this is my low carb food diary for “yesterday” – which actually means Thursday.:)
I’ve had a crazy week. Between extra consulting work, TONS of email, some kind of allergy attack, a full on migraine with the storms that passed through, scheduling a photo shoot for a magazine article, etc it’s just been a nutty FULL week around here!
There were a couple of days I had deadlines to work on AND didn’t feel well that I just had to power through. Thursday was one of those days. 🙄
Fortunately Aaron stepped in and saved the day. 😉
Aaron made ALL of our low carb meals on Thursday, and even did the dishes – behind my back. 😛 He’s self employed with a “mobile office” like me, so he just worked from my home office that day… and helped me out. What an amazing man, hey?! 🙂
I did make the afternoon snack though. And it was REALLY good! Here are the four meals I had yesterday – because that snack was definitely a meal, lol…
Thursday’s Low Carb Meals & Macros
Breakfast was eggs scrambled in real butter with colby jack cheese, and fresh sliced strawberries. I do have to guesstimate a little bit about the amounts (servings) when he cooks, but he’s great about noting the ounces & ingredients.
I love how his strawberries always look like hearts. 🙂 I’m starting to wonder if he does that on purpose.;)
Given I wasn’t feeling well, he made me a pile of fresh greens for lunch: baby spinach and spring mix topped with boiled eggs & cherry tomatoes.
His goal is “a cup of fresh greens every day.” I like that goal!
I just realized I forgot to log the dressing. 😐 Oh, and I added some pepitas (seasoned pumpkin seeds) to my salad too. Those I *did* log!
Usually I have ranch and he has honey mustard (the one exception to his otherwise sugar-free lifestyle), but we decided to try the Greek Avocado Oil Vinaigrette by Primal Kitchen that I got in one of my Keto Krate boxes.
They’re the same company that makes the Avocado Oil Chipotle Lime Mayo I love so much. 🙂 And HA, I just realized they make a Low Carb Honey Mustard Vinaigrette too! Aaron will love that. He’s a big fan of the Primal Kitchen products too.;)
We both really loved this dressing. It has a very “greek” flavor to it with a strong oregano flavor. It would be GREAT as a low carb marinade!!
Later that afternoon we had a delicious low carb snack of Ginger Turmeric FatSnax cookies made into a “cookie sandwich” with kosher cream cheese, plus raw pecans:

For dinner we finished the leftover shrimp & cauliflower rice meal we made the night before, with another salad of fresh greens topped with grilled chicken:
I didn’t use any dressing on the salad at dinner, because it was SO delicious just like it was! Especially with those juicy little cherry tomatoes! Which tanked my carb count for the day of course, having them twice in one day…

I still did pretty good at only 25 net carbs. Especially since it was a LONG day! 🙂

In case you missed the previous updates 🙂 Aaron and I met through a local hiking group last November and hit it off right away. We have TONS in common from our love of the outdoors to fitness goals and food compatibility, and of course both being business owners with flexible working hours & a “mobile office.”
He eats mainly pescatarian (vegetarian + dairy & seafood, plus some chicken). He prefers gluten free, sugar free and organic foods. So he’s low carb / keto – and he cooks! But he loves my quirky low carb meals, REALLY enjoys the variety of low carb food products I have to review (lol), and best of all: HE EATS SIMPLE, like me. 🙂

We’re planning a BIG hike this weekend. I’ve been so tied up with work this week I haven’t had a chance to get out, or even do my home workouts (seriously Lynn, that’s NO excuse!), so I’m anxious to get out and play in the sunshine & waterfalls. 😉

Philadelphia Cream Cheese Kosher – where do you purchase that?
This week I’ve kept it simple with basically a three ingredient plate. Wow, does that help with the carb count. Thanks to my best friend, Ruthanne (who also has been doing lchf for 16 months and has lost over 100 pounds) I purchased (Amazon) small 1 – 2 oz single serving containers to portion out nuts. With the help of a food scale I do 1 oz per container which pretty much fills it. So now if I’m hungry I can grab and go and know exactly how many ounces I’ve consumed. I can also use the containers to measure out dressing for a to go salad or whatever I need to get better control over when it comes to portions (Lily Chocolate?!?!)

Hi Jean π Usually you can only get kosher philly during passover, but for some reason my little local grocery had a HUGE stock of it, so I’ve been buying 4-5 bars at a time – knowing it’ll run out soon. π It’s much lower in carbs with very few ingredients, so I wish it was freely available year round!

Portions & weighing/measuring are key, so that was a smart move! That makes it a lot easier on you too, I’m sure. Simple is GOOD!
Ok a week in. Got through the Keto flu. Drank chicken broth and at work I sprinkled salt in my water to help with salt intake. Down about a pound each day so I can’t complain.
Ate grilled chicken, hamburger patties, hot dog, lots of salad and lots of broccoli…
You’re doing great, Amy! π Getting through keto flu is tough sometimes, so I’m glad you got THAT behind you. Ugh. It’s a great reason for me NOT to eat off plan anytime I’m tempted, lol.
Are you tracking too? It sounds like you’re doing fine, but if you get bored with your meals… just know there is tons of variety out there! Thank you for the posts. You are inspirational. I’ve been doing low carb since 2013 when I got to my all time highest weight. I have lost 45 lbs. Good, but would have been better, if I had been consistent these past 4 years. But with your help, I am doing better. Today is day 4 of restarting and I feel great. This time around I feel like I can do this for life. Again thank you for your posts, gives me encouragement to not give up. Congrats on your relationship.
