This time I did some fun & easy baking to “food prep” for the trip.
Actually, Aaron did the baking while I packed – and took photos and wrote this update for you. 🙂
I looked around the kitchen to see what I already had on hand, and found enough fun stuff to create some LCHF cookies and bars that are compact yet calorie dense – making them perfect for traveling, and hiking too!
The “low carb thumbprint cookies” turned out fabulous:
For those cookies, we used the Adapt Meal Recipe that came in the last Keto Krate box. The Adapt Meal is a product you can use to make low carb shakes or hot cereal, but the recipe seemed much more appealing to me. 😉
I opted for no sweetener, because I like more of a shortbread style cookie. But we did add some Sugar Free Honey to the actual recipe, and then Sugar Free Preserves on top – plus a little peanut butter & plenty of pecans!

We made 11 pretty large cookies out of the batch.

Above are the ingredients we used to make the Snickerdoodle Pecan Bars, sticking to the basic cookie recipe and just adding LOTS of big pecan chunks. 🙂
It was baked on parchment paper in a cake pan just like I made the low carb pie crust, then cut into squares.

This, along with other things I’m packing up to enjoy on the go, should make for an tasty road trip! Our goal is stop LESS for meals, and MORE for fun. Especially if there are waterfalls along the way. 😉
