I’m finally back in ketosis. 🙂 After months of struggling through various medications and antibiotics, and gaining almost 10 pounds despite staying on track, my body finally bounced back!
It took SIX days after I ended the last round of antibiotics to get back in ketosis, but WOW that felt great!
The water weight came off, the scales dropped & I feel leaner and just overall BETTER than I have in months. 🙂
This kind of stuff happens during your weight loss journey. You might experience stalls, plateaus or mysterious weight gain that you can’t figure out…
The key: power through, no matter what! Otherwise you’ll gain all your weight back, get unhealthy again, and have to start ALL over from much further away. 😛
Speaking of, I haven’t shared a food diary with you since last week. You can see all of my low carb food diaries here. I usually post them daily, but I got super busy between work and other things – so I owe you some updates!
I’ve been staying on track though, and super close to my ideal macros. Below is what I ate yesterday for example, plus my MyFitnessPal diary so you can see how I logged those meals.
My numbers look high for yesterday and it seems like I ate a lot for one day, but it was a “split schedule day” from 6am to 4am with a 3.5 hour sleep in between. 😉
Friday’s Low Carb Meals
My day kicked off early, and it was a FULL and long day at work, so I grabbed something easy for breakfast that I could eat at my desk…
Fortunately I had some easy foods in my new Keto Krate Box to try!
The string cheese was mine, and I got the NUSH Organic Carrot Spice Cake and the Raw Revolution Glo Bar out of my Keto Krate.
The NUSH Organic Carrot Spice Cake was really good. It had a good texture, maybe a little gritty here and there, but the flavor was spot on too.
It went great with my morning coffee! 🙂
The Raw Rev Peanut Butter Protein Bar was great too.
Oily, but soft and chewy, and a great flavor – with no artificial sweetener at all.
For lunch I had a break to watch one of my shows, and had a great “tv time” snack. 🙂 I made breaded mozzarella sticks and dipped them in Organic Marinara Sauce (that stuff is delicious! I could eat it by itself straight out of the jar -lol).
I’ll have to post the full recipe soon, but I used this recipe for the cheese sticks.
For dinner I had a delicious ham, egg, spinach & cheese scramble. 🙂
It was 4 eggs, so it made two meals for me (the second half at 2am, lol):

Here are a few other low carb meals I enjoyed this week:
I tend to eat my favorite healthy “low carb cereal” most days because it’s real food and it has GREAT LCHF Macros. It’s 1/2 cup (60 grams) of pecan pieces, 1/4 cup Daisy Brand cottage cheese & 4 small strawberries (5 net carbs, 85% healthy fats).
I got take-out from a local BBQ place the other night. They have this amazing “Pigs In The Garden” salad topped with pulled pork & bacon. 🙂
I also tried the Ham & Egg Baked Cups recipe this past week, and those turned out great! I made 10, and they were super easy to make, so it was nice to have something quick & easy on hand to just grab and eat anytime.;)
I haven’t done any big hikes or workouts this week because I really wiped myself out last week, lol. I did end up helping my friend move last Sunday night, so I got in a great workout with lots of upper body work that night – then decided I better rest for a few days.;) I’m ready to get moving again though…

I am confused how you got net carbs for the peanut butter bar. I may be adding wrong. It looks like you take carbs plus sugar minus fiber to get net carb? I was doing just carb minus fiber. Let me know if I am doing wrong. Tia

It was just Total Carbs minus Fiber for that bar. π
Do the ham and egg cups freeze or refrigerate well? I need to start meal prepping for time.
