Below are my low carb meals and food diaries for the weekend, so you can see what I ate and how I logged it.
I wanted to share something cool with you real quick first though, because we had a fun discussion here on my Facebook Page a few days ago about the visual motivation and planners to stay motivated with weight loss goals.
I recently got some cool Fitness Motivation Stickers for my 2017 goals planner. This is the goal planner I use. Anyway, Vanessa showed me the one she uses – and it looks really cool too. It has a place to log all of your daily health goals:
I use MyFitnessPal to log my meals, track my macros, water, current weight, track weight loss trends, etc. It syncs with my Fitbit to track my exercise too.
Tracking really helps, no matter what you use.
Tracking your meals & macros is important of course, for your health. But what I find it helps with me most is mindful eating (vs mindless eating).
I usually log my meals BEFORE I make or eat them. It makes you more conscious of portion control, and it gives you an opportunity to make a change – or change your mind in favor of a healthier option.

Below are all of my low carb meals over the weekend (Saturday & Sunday).
I mentioned in my last food diary that I still haven’t been shopping – so I ate very simple over the weekend. 🙂
Saturday’s Low Carb Meals
My low carb breakfast was a little bit of everything I had left: 30 grams of pecans, 1 ounce of almonds, 1/4 cup Daisy brand cottage cheese and 4 small diced strawberries. Plus a mozzarella string cheese.:) (7 net carbs and 78% healthy fat)
I had cheesy eggs for lunch: 3 eggs scrambled with colby jack cheese in real butter.
Dinner was a low carb style Frisco Burger with a lettuce wrap from Hardee’s. It’s the same as Carl’s Jr – and they will make anything “low carb style” for you at either location. See: Seedrah.com (Hardee’s spelled backwards).
I got hungry again 🙂 so I had my favorite “low carb cereal” later that night.
It’s 1/2 cup pecans, 1/4 cup Daisy Brand cottage cheese, 4 small diced strawberries and 17.5 grams of blueberries. (6 net carbs and 85% healthy fat)

Sunday’s Low Carb Meals
I had my usual pecans & strawberries for breakfast:
I had a stressful day, so I just grabbed a quick snack style lunch of Oscar Mayer turkey & string cheese for lunch. Just something to get by really…
My low carb dinner: fried ham & cheesy eggs. It’s Kentucky Legend ham (love!) fried in the skillet real quick, then 3 eggs scrambled in the same skillet with real butter & colby jack cheese.

I really wanted to get out for a fun hike this weekend, but I still wasn’t feeling that great – plus way behind on (and stressed about!) some big work projects – so I just stayed in and worked between naps. 😛
I’m seriously anxious to get back to my workouts & hikes. I’ve been stressed to the max, so I know that would make me feel better. I’ve just been so drained with this silly winter cold. Fortunately I’m on the better end of it now, finally.:)

That’s what I really love, Sherry – the “exercise” that feels more like FUN and something that has become a part of who I am (hiking & exploring). π I hope you find that perfect thing for you too! I started out walking a mile or so with my great dane, then we got up to 4 miles in 42 minutes – we have a great stride, lol – and just continued on from there. He loves to go on more adventurous hikes with me!

How long have you been “stuck” there? It’s common during weeks 2 and/or 3 to see a hold, or even slight fluctuations. That’s your body adjusting after the initial weight loss, and is totally normal. Could that be it? Or have you changed something lately perhaps?

I fluctuate 3’ish pounds up and back down all the time. I wouldn’t sweat it. Are you tracking your macros, though? And if so, is your fat consistently at 70% or higher? If not, try that. π

Still stuck at 133 but okay with that. Right now I’m just bored with all my usual foods so trying to come up with something different. This weather here in the south is driving me nuts with all the rain and clouds. I am learning to enjoy walking in the rain! Good day everyone!

I totally get it, Marti. π I bought a cute pair if rainboots last year for just that reason! I’ve been “food bored” lately too – and I’m sick of eggs again, lol. I go through phases of that, and other times I don’t have much of an appetite or even care if I eat the same thing for every meal. π It’s definitely nice to mix things up now and then!

I am just starting this journey…I am suffering with fibromyalgia major flare up. I am 49 years old and have been guilty of giving up on myself. I have had many (many many) unsuccessful attempts at weightloss.

Do some searching on Google about Fibromyalgia and keto diets or low carb. My doctor wanted to diagnose me with that after years of chronic pain, but going low carb has me OUT of chronic pain (with very VERY few flareups at all now) … and I’m finally back to enjoying an active lifestyle!
Carbs promote inflammation in the body, so that was an unexpected benefit for me the first year I went low carb. I had no idea just eating low carb could have such a big affect on my life – outside of weight loss.
It’s definitely worth it. π

I missed last week’s check in and after a week of neglectful eating on the road (my grandfather passed away, and we attended the funeral), I’m starting over…
I’m weighing in at 206.8 lbs today, and because LCHF eating has always worked for me, I know this number will drop. Also, since we are home and have no plans for traveling, I’m adding walking to my daily routine!

Hi Lynn. Last week was my first on this way of eating. You might say it was training camp for me. I was a little disappointed to discover that I only lost 2 pounds. I have cramps in my legs at night and have to get up and walk around so I helped myself 2 berries and reddi whip. Went overboard. Learn my lesson.

Two pounds in one week is actually great, Linda. π How are you tracking? The leg cramps sound like keto flu, so it sounds like you’re doing it right! 2 berries and Reddi Whip should be fine – how bad did it mess up your numbers when you logged it? Not by much I’m guessing – Reddi Whip is made with real cream.

Hi Lynn, still trying to get one day down without craving sweets and I can’t seem to have self control. Last time i started this way of eating it was so easy. This time I can’t seem to do it. Here’s to trying to start all over tomorrow. 15 mins to lose and hope to lose it by April/May

Since you’ve done it before, you’ll probably remember that the cravings totally go away after the first few days (or the first week at least) and you have hardly ANY appetite after that even. So that takes care of itself once you get the ball rolling. π

Hey Lynn I have been bouncing between 135 to 140 for about 9 months now only having one cheat meal a week (Friday night out with my hubby). Do you think this means I have hit a weight that is where my body just wants to be? I am happy at this weight but wouldn’t mind losing about 5 more pounds. I have lost between 30-35 lbs. and I’m 5’6″. What is your weight now? I think we were about the same.

I am shorter than you a bit. I am 5′ 4.5″ – I am also very short waisted and long legged, so our body types may be way different. Anyway, I am 136.8 pounds today, 135 at my lowest a few weeks ago.
I still have some body fat around the middle, and I still want to GAIN muscle weight, so I’m not sure what my “ideal number” is on the actual scale – yet.
Do you not get keto flu (or Induction Flu) every single week by eating off plan on Friday’s – or are you not in ketosis? I stay in ketosis myself. Both to maintain my weight loss, and also to stay out of chronic pain.

Thank you for responding! I’ve been eating lchf for well over a year& I’m 43 too. I do stay in ketosis all week and only seem to go out the night I eat out…I’m back in usually by the next day…. Unless I eat horrible by adding a dessert or any kind of sweet treat, so I try to avoid that (also I have never really felt bad or feel like I’ve had the keto flu…I don’t know why that is…?) I am trying to exercise too. I have a bellicon rebounder and it is so much fun & I use light weights for my arms while jumping. Rebounding is so good for you.

That all sounds great. π If it’s working for you, I say keep doing what you’re doing. For me it’s all about “staying healthy” (which will maintain my weight loss naturally) and getting stronger.
I don’t want to look like a body builder lol, but I’m aiming to be strong & fit… and in the best shape of my life!
I’m making that a lifestyle commitment – instead of a goal. It’s something that takes time, and requires maintenance. So staying active is key, to retain the muscle tone you gain.

Thanks, Abbie! π One of the few things I “cook” without a kitchen fail, lol.
I use a non stick skillet over medium heat (close to “5”) and put in a full TBSP of real butter to melt. I cube up colby jack cheese off the block, about a half ounce per egg (so 1.5 ounces for 3 eggs). I crack my eggs into the melted butter, and “scramble” them with the spatula, then toss in the cubed cheese and scramble until done. π Oh, and a dash of salt. That’s it!

I’m not sure what I’m doing yet. This is first post. I don’t even know if it’s in the correct place. I tried Jenny Craig for a month– can’t do it. I need the motivation and discipline of accountability– weighing in once a week. Anyway–hope someone can give me direction.
