I haven’t been grocery shopping this week. I’ve been eating leftovers from where Caroline was here cooking, and the foods left in the refrigerator… just finishing off what’s in the house.
I still have a cold so I’ve been sleeping a lot this week, but I do feel better than I did. I’ve been feeling down too though.
A good adventurous HIKE somewhere FUN would do me wonders, as soon as I’m feeling 100%. 😉

Thursday’s Low Carb Meals
I finished the last beautiful piece of Caroline’s amazing ham & spinach omelet for breakfast on Thursday. Her omelet making secrets & recipe is posted here: Perfect Low Carb Omelet Recipe. She makes the BEST omelets!!
For lunch I had more leftovers: Hamburger steak and roasted veggies: broccoli, cauliflower, garlic cloves & green onion. That was delicious. 🙂
I got a full rack of ribs (with no sauce) from Prater’s BBQ on Wednesday night, so I finished the other 1/2 rack of ribs for dinner on Thursday.

Friday’s Low Carb Meals
For breakfast I had big bowl of nuts & berries. I call it “low carb cereal.” 🙂
It was 60 grams of pecans, 1/4 cup Daisy brand cottage cheese, 17.5 grams of blueberries and 17.5 grams of raspberries (1/8th cup of each). Plus I had a mozzarella string cheese for a total of 7 net carbs and 82% healthy fats.
My lunch was a simple plate of fried ham & eggs:
For dinner I had the last leftover hamburger steak topped with garlic & herb cheese, dipped in mayo, with some cheddar on the side.
I got hungry again before I went to bed so I had pecans, cottage cheese & strawberries – all mixed together. 🙂

I had just over 2,000 calories yesterday but I woke up with a nice drop on the scales this morning. 🙂 I’m SO glad I don’t have to count calories eating low carb!
I’m not feeling very inspired to go to the grocery store. 😛 I still have some ham left, and at least 9 eggs, plus some veggies and berries in the freezer… so I’m thinking I can stretch it out a few more days.;)

Lynn, so helpful! One thing i worry is regarding the calories and after a lovely steak/lobster dinner, my day finished on the high side, seeing a macro day like that makes me feel better (my macros were great, just the calories were freaky π about where yours were!) “Cereal looks great!” Thanks!

I’m glad, Chris. π Fortunately there is a science to the way LCHF works that doesn’t include calories in / calories out. Yay! haha

Unfortunately I live in Canada and more than half the products are not sold here π

I mostly just eat meat & greens, normal foods like you saw in this food diary. Those are available anywhere. π
